- the polysaccharide may consist of one type of polysaccharide, or may consist of two or more types of polysaccharides.
- the polysaccharide contained in the water- and oil-repellent agent can provide water- and oil-repellency to paper.
- the polysaccharide contained in the water- and oil-repellent agent of the present disclosure may be a water-soluble polysaccharide or a hydrophobic polysaccharide.
- the polysaccharide may be dissolved or partially dissolved in water to form an aqueous solution of the polysaccharide or a dispersion containing the polysaccharide.
- the aqueous solution or dispersion of the polysaccharide has a predetermined viscosity according to the amount of polysaccharide contained in the aqueous solution or dispersion.
- aqueous solution is not limited to a form in which the polysaccharide is completely dissolved in a liquid, but may also be used to include a form in which the polysaccharide is partially dissolved in a liquid.

- a viscosity of 60 cps or less at 50°C in a 20% by mass aqueous solution By exhibiting such a viscosity, even if the water/oil repellent contains a high concentration of polysaccharides, the viscosity of the water/oil repellent is unlikely to increase. Therefore, it becomes easier to apply a water/oil repellent containing a high concentration of polysaccharides to paper, and the water and oil repellency of the paper can be improved.
- the polysaccharide in a 20% by mass aqueous solution, may preferably exhibit a viscosity of 55 cps or less at 50°C, more preferably a viscosity of 50 cps or less, even more preferably a viscosity of 45 cps or less, particularly preferably a viscosity of 40 cps, and especially preferably a viscosity of 30 cps.

- the polysaccharide may exhibit a viscosity of 1 cps or more at 30°C in a 20% by mass aqueous solution, preferably a viscosity of 10 cps or more, and more preferably a viscosity of 30 cps or more.
- the viscosity of the aqueous solution of the polysaccharide is measured using a type B rotational viscometer.
- a No. 2 rotor may be used for measurements using a type B rotational viscometer.
- the rotor speed may be 60 rpm.
- the viscosity in a 20% by weight aqueous solution at 50°C can be adjusted, for example, by adjusting the molecular weight of the polysaccharide. Specifically, the viscosity in a 20% by weight aqueous solution at 50°C can be adjusted by cleaving the glucosidic bonds of the polysaccharide. The cleavage of the glucosidic bonds of the polysaccharide can be carried out, for example, by using a wet acid treatment, a dry acid treatment, a heat treatment, an amylolytic enzyme, or an oxidizing agent.
- the molecular weight of the polysaccharide is reduced, and the viscosity in a 20% by weight aqueous solution at 50°C can be reduced. In other words, a polysaccharide with a low viscosity can be obtained.
- the viscosity of the polysaccharide can be reduced after processing (or modification) of the polysaccharide, or before processing (or modification).

透気度は、JISP8117(2009)に準拠して測定される。
