一种烹饪装置及方法
本发明要求于2022年8月16日提交中国专利局、申请号为202210981067.2、发明名称为“一种烹饪装置及方法”的中国专利申请的优先权,其全部内容通过引用结合在本发明中并构成本发明的一部分。
技术领域
本发明涉及烹饪设备领域,具体涉及一种烹饪装置及方法。
背景技术
烹饪设备分为大型商用烹饪设备和小型商用/家用烹饪设备,大型商用烹饪设备多为流水线设备,对一个或多个工序配置对应的设备,将多个设备串联后使用;对于小型商用/家用设备而言,其体积小巧,但烹饪效率低,在小规模餐饮店使用时,难以满足连续出餐需求。
现有技术中存在多种包子、饺子等食品的全流程加工设备,比如中国专利(公开号:CN211324430U)中公开了一种饺子贩卖机,其集成和面、揉面、包馅、烹制等工序的加工组件,在其对食品进行熟成时,采用蒸制的方式来实现,而无法满足烹煮、烹炸等这类通过加热后的液体熟成食物这一烹饪方式的需求,虽然目前存在多种烹饪锅配合漏网的设备,但其烹饪过程中仍需要人工不断翻动、沥出液体和捞出,烹饪效率仍然较低,无法实现连续烹饪、连续出餐的需求。
发明内容
本发明的目的是针对现有技术存在的缺陷,提供一种烹饪装置及方法,配置烹饪篮承载烹饪物,烹饪篮形成多个环向分布的烹饪腔,烹饪篮置于烹饪锅内,通过转动和升降来调节位置、姿态,达到翻动、沥出液体的过程,将烹饪单体的 出料孔连通出料口,能够将烹饪腔内的烹饪物输出,达到捞出的过程,实现烹饪过程的连续进行,满足连续烹饪、连续出餐的需求。
本发明的第一目的是提供一种烹饪装置,采用以下方案:
包括烹饪锅和位于烹饪锅内的烹饪篮,烹饪锅侧壁上设有出料口;烹饪篮包括绕其轴线环绕设置的多个烹饪单体,每个烹饪单体均设有顶部开口的烹饪腔,烹饪腔底面沿烹饪锅径向上倾斜布置,烹饪单体朝向烹饪锅侧壁一侧设有与烹饪腔底面平齐的出料孔,烹饪篮能够绕轴线自转和/或沿轴向升降,以改变出料孔与出料口的相对位置,当出料孔连通出料口时输出烹饪腔内烹饪物。
进一步地,所述烹饪篮与烹饪锅同轴布置,烹饪单体开口方向与烹饪锅开口方向相同。
进一步地,所述烹饪单体内部烹饪腔的底面为弧形面,沿烹饪单体底面远离烹饪篮轴线方向上,烹饪单体的底面高度逐渐降低,以使内部烹饪物趋向出料孔移动;每个所述烹饪单体的出料孔与其弧形面相匹配,出料孔位于烹饪腔的最低端。
进一步地,所述烹饪单体上设有多个沥液孔,沥液孔贯穿烹饪单体。
进一步地,所述烹饪篮连接有转动机构,转动机构输出端驱动烹饪篮绕轴线自转,烹饪篮连接有升降机构,升降机构输出端驱动烹饪篮沿轴向升降。
进一步地,还包括包馅组件和供料组件,供料组件包括馅料供应桶、面皮供应桶和推料组件,馅料供应桶、面皮供应桶位于顶部的出口分别接入包馅组件,推料组件位于馅料供应桶和面皮供应桶的下方。
进一步地,所述包馅组件包括包馅机构和切断机构,供料组件接入包馅机构,切断机构位于烹饪锅开口与包馅机构之间,以切断并投放烹饪物至烹饪腔内。
进一步地,还包括清洗机构,清洗机构包括清洗剂桶、水泵,水泵通过管路接入烹饪锅,清洗剂桶接入管路。
本发明的第二目的是提供一种利用如第一目的所述烹饪装置的工作方法,包括:
烹饪锅内的水体对烹饪腔内承载的烹饪物进行烹饪,烹饪篮相对于烹饪锅移动;
待某一烹饪腔内的烹饪物烹饪完成后,转动烹饪篮使该烹饪腔与出料口处于同一环向位置,提升烹饪篮沥液后使该烹饪腔的出料孔连通出料口,将烹饪腔内的烹饪物通过出料孔、出料口排出;
回落烹饪篮,继续对烹饪腔内的烹饪物进行烹饪,直至下一烹饪腔内的烹饪物烹饪完成。
进一步地,沿烹饪篮环向将待烹饪物依次投入多个烹饪腔,烹饪完成后依次将烹饪腔内的烹饪物通过出料口排出。
与现有技术相比,本发明具有的优点和积极效果是:
(1)针对目前烹饪设备难以满足连续烹饪、出餐需求,烹饪效率低的问题,配置烹饪篮承载烹饪物,烹饪篮形成多个环向分布的烹饪腔,烹饪篮置于烹饪锅内,进行烹煮、烹炸等烹饪过程,通过转动和升降来调节位置、姿态,达到翻动、沥液的过程,将烹饪单体的出料孔连通出料口,能够将烹饪腔内的烹饪物输出,达到捞出的过程,实现烹饪过程的连续进行,提高烹饪效率,满足连续烹饪、连续出餐的需求。
(2)配置多个烹饪单体沿环向布置,依次将烹饪物投放至多个烹饪单体,其投放时间与烹饪时间相对应,便于后续依次对多个烹饪单体内的烹饪物进行出 餐,出餐后的烹饪单体可继续投放烹饪物,完成连续烹饪、连续出餐的过程,提高整体烹饪效率。
(3)烹饪单体形成承载烹饪物的烹饪腔,烹饪腔的底面为倾斜面,能够对烹饪物进行导向,便于烹饪完成后对烹饪物的输出,同时烹饪单体与烹饪锅内壁之间可以贴合布置、也可以间隔布置,在间隔布置时,保证其间隙小于烹饪单体的尺寸,避免烹饪单体卡在烹饪单体的输出孔与烹饪锅内壁之间,采用小间隙或贴合布置能够减少对烹饪物的损伤。
(4)配置包馅组件和供料组件,能够在烹饪组件上方进行烹饪物的包馅和投放,随着烹饪篮的转动改变烹饪单体与投放处的相对位置,按照所需次序投放和出餐,烹饪单体能够转动至投放处下方,承接经包馅组件输出的烹饪物,满足实际需求。

具体实施方式
实施例1
本发明的一个典型实施例中,如图1-图4所示,给出一种烹饪装置。
如图1所示的烹饪装置,通过配置烹饪锅8和相配合的烹饪篮2对烹饪物进行烹饪,通过烹饪锅8能够承载水、油等液体介质,通过加热水、油等液体介质将烹饪物熟成,烹饪篮2形成容纳并承载烹饪物的烹饪腔20,烹饪篮2带动烹饪物在烹饪锅8内移动、升降,同时烹饪锅8内水体对烹饪物进行加热熟成,在熟成完成后,通过烹饪篮2移动带动对应烹饪腔20内的烹饪物输出,完成出餐,从而满足连续烹饪、连续出餐的需求,提高了烹饪效率。本实施例中的烹饪物包括但不限于饺子、汤圆、馄饨、丸子、面条、油条等。结合图1、图2,烹饪装置的主要组成部分为烹饪组件,烹饪组件包括烹饪锅8和位于烹饪锅8内的烹饪篮2,烹饪锅8作为容纳水的器皿,能够提供加热、保温等常用烹饪功能,烹饪锅8内部容纳水体的区域呈柱状,为了便于后续烹饪篮2位置的调整,烹饪锅8采用圆柱状内腔,烹饪篮2能够在烹饪锅8内转动、升降完成调节位置和姿态,满足烹饪操作动作需求。
在其他实施方式中,烹饪锅8还可以采用其他的结构形式,比如圆台状的内腔等,能够满足供烹饪篮2在其内部调整位置和姿态且不影响烹饪过程。
如图1所示,烹饪锅8侧壁上设有出料口15,出料口15能够输出烹饪完成后的烹饪物,本实施例中,烹饪物在烹饪完成后能够输出所需位置,通过在出料口15位置配合出料管4来实现,根据盛放烹饪完成后烹饪物的器皿摆放位置,调整出料管4的长度、倾角等,使出料管4的出口端对应盛放器皿。
烹饪篮2包括绕其轴线环绕设置的多个烹饪单体11,每个烹饪单体11均设 有顶部开口的烹饪腔20,每个烹饪单体11均能够承载烹饪物,带动烹饪物在烹饪锅8内移动、升降等,完成模拟烹饪过程中的搅动、沥液、出餐等动作。
本实施例中,烹饪篮2设置为多瓣拼合结构,设置有六个烹饪单体11,并使烹饪单体11围绕烹饪篮2轴线布置,在其他实施方式中,还可以调整烹饪单体11的数目,比如选择两个、四个、八个等,根据实际的烹饪锅8尺寸规格和烹饪物的尺寸来选定。
需要指出的是,烹饪单体11独立布置,烹饪单体11靠近烹饪篮2中心的一端设有连接孔,烹饪篮2中心的连杆分别穿过烹饪单体11端部的连接孔,使烹饪单体11悬挂在连杆外圈,形成环绕烹饪篮2轴线布置的结构。
烹饪腔20底面沿烹饪锅8径向上倾斜布置,起到对所容纳烹饪物进行导向的作用,烹饪单体11朝向烹饪锅8侧壁一侧设有与烹饪腔20底面平齐的出料孔17,在烹饪进行过程中,出料孔17被烹饪锅8内壁封堵,从而使得烹饪物无法从此出料孔17排出至烹饪腔20外,在到达设定位置时,出料孔17处于非封堵状态,烹饪物能够从此出料孔17排出至烹饪腔20外,完成出餐过程。
如图2和图3所示,烹饪篮2能够绕轴线自转,达到对烹饪篮2内烹饪物的扰动,烹饪篮2能够沿轴向升降,同样能够实现烹饪篮2内烹饪物的扰动,在烹饪篮2移动的同时,能够改变出料孔17与出料口15的相对位置,当出料孔17连通出料口15时输出烹饪腔20内烹饪物。
具体的,烹饪篮2与烹饪锅8同轴布置,烹饪单体11开口方向与烹饪锅8开口方向相同,从而使得投放的烹饪物能够进入烹饪锅8内并落入烹饪篮2的烹饪腔20内,在烹饪过程中,控制烹饪锅8内的水位或控制烹饪篮2与水位的相对高度,避免烹饪物从烹饪腔20的开口位置脱出。
在实际使用时,对于大量烹饪的情况,也可以不考虑烹饪篮2多个烹饪单体11之间的分隔作用,使烹饪篮2位于水位以下,烹饪篮2上方的烹饪物能够进入各个烹饪腔20,从而实现快速捞出、沥液和出餐,根据实际的使用需求进行配置即可。
如图3所示,烹饪单体11内部烹饪腔20的底面为弧形面,减少对烹饪物的刮擦、损伤,保证烹饪物的完整度,沿烹饪单体11底面远离烹饪篮2轴线方向上,烹饪单体11的底面高度逐渐降低,以使内部烹饪物趋向出料孔17移动。
烹饪过程中,烹饪物在烹饪腔20内水体的浮力下能够移动,在烹饪完成后,烹饪物脱离水体过程中及脱离水体后,由于烹饪腔20底面倾斜,在重力作用下烹饪物能够沿烹饪腔20底面滑动,从而靠近出料孔17位置,等待出料孔17对接出料口15进行出餐。
每个所述烹饪单体11的出料孔17与其弧形面相匹配,出料孔17位于烹饪腔20的最低端,减少从烹饪腔20底面到出料孔17的高度差,使烹饪物能够顺利沿烹饪腔20底面滑动至出料孔17位置,从而避免高度差产生台阶结构导致对烹饪物滑动时的阻挡作用,使得烹饪物能够顺畅从出料孔17内排出。
需要特别指出的是,配置包馅组件和供料组件,能够在烹饪组件上方进行烹饪物的包馅和投放,随着烹饪篮2的转动改变烹饪单体11与投放处的相对位置,按照所需次序投放和出餐,烹饪单体11能够转动至投放处下方,承接经包馅组件输出的烹饪物,满足实际需求。
烹饪单体11上设有多个沥液孔12,沥液孔12贯穿烹饪单体11,在出餐过程中,通过提升烹饪篮2能够将烹饪篮2内烹饪物上附着的水体进行过滤,减少出餐后烹饪物上汤汁的附着。
如图3所示,烹饪篮2连接有转动机构19,转动机构19输出端驱动烹饪篮2绕轴线自转,本实施例中,转动机构19可以采用电机配合转动杆的结构,转动杆一端连接电机,另一端同轴对接烹饪篮2,带动烹饪篮2绕轴线转动。
烹饪篮2连接有升降机构18,升降机构18输出端驱动烹饪篮2沿轴向升降。本实施例中,升降机构18可以选用升降推杆配合轴套的结构,轴套套设在转动杆外,升降推杆连接轴套,通过轴套能够带动烹饪篮2沿轴向升降,升降推杆采用丝杆滑块机构,电机驱动丝杆带动滑块沿丝杆轴向滑动,滑块连接轴套,通过轴套驱动烹饪篮2的升降,也可以采用气缸、电缸等结构。
对于烹饪组件的辅助组件,如图1所示,烹饪装置还包括包馅组件和供料组件,供料组件能够为包馅组件提供面皮和馅料,通过包馅组件对面皮和馅料进行包馅后切割,输出待烹饪物。
包馅组件包括包馅模具13和切断机构16,供料组件包括馅料供应桶10、面皮供应桶3和推料组件,馅料供应桶10、面皮供应桶3位于顶部的出口分别接入包馅组件的包馅模具13,在馅料供应桶10和面皮供应桶3分别输出馅料和面皮的过程中,包馅模具13能够将馅料和面皮进行组合,形成外部面皮、内部馅料的结构,从而输送至切断机构16位置,通过切断机构16实现挤压、切断。
推料组件位于馅料供应桶10和面皮供应桶3的下方,面皮供应桶3下方连接第一推料组件5,馅料供应桶10下方连接第二推料组件7,从而实现面皮和馅料的供应。
如图4所示,包馅组件包括包馅机构和切断机构16,供料组件接入包馅机构,切断机构16位于烹饪锅8开口与包馅机构之间,以切断并投放烹饪物至烹饪腔20内。
配置包馅组件和供料组件,能够在烹饪组件上方进行烹饪物的包馅和投放,随着烹饪篮2的转动改变烹饪单体11与投放处的相对位置,按照所需次序投放和出餐,烹饪单体11能够转动至投放处下方,承接经包馅组件输出的烹饪物,满足实际需求。
需要指出的是,对应各类烹饪物,可以使面皮供应桶3单独工作,从而形成面条、空心面、油条等烹饪物;也可以使馅料供应桶10单独工作,从而形成丸子、肉条等烹饪物;也可以使馅料供应桶10和面皮供应桶3共同工作,获取饺子、汤圆、条状馅饼等烹饪物,通过烹饪锅8对烹饪物进行烹煮或烹炸操作。
同时,如图1所示,配置有清洗管路和清洗机构,包括清洗剂桶9、水泵,水泵通过管路接入烹饪锅8,同时也接入馅料供应桶10和面皮供应桶3,清洗剂桶9接入管路。
如图1所示,清洗机构、烹饪组件、供料组件和包馅组件均安装于机架1,通过机架1承载各个功能组件和功能机构。
为了满足清洗需求,烹饪锅8底部连接有排污管,烹饪锅8放置在机架1预设的托架上,烹饪锅8底部包裹有电磁加热组件,便于对烹饪锅8进行加热,可以理解的是,也可以采用其他加热方式,比如电热丝、燃气灶等,能够对烹饪锅8内部液体介质进行升温并保持所需温度即可。
同时,出料管4焊接于烹饪锅8侧面,烹饪锅8底部另有开孔,与排污管相连。同时,烹饪锅8通过进水管接入水箱6,便于向烹饪锅8内加水。
清洗剂桶9通过螺丝固定在机架1上部,清洗剂桶9下部固定有清洗剂泵;水箱6通过焊接与机架1固定,水箱6下部固定有水泵;切断组件包含切断器和丝杆电机,通过螺丝与外壳固定,丝杆电机驱动切断器工作,实现对组合后馅料 和面皮的挤压成形和切断投放。
实施例2
本发明的另一典型实施方式中,如图1-图4所示,给出一种烹饪装置的工作方法。
结合实施例1中的烹饪装置,该工作方法包括:
烹饪锅8内的水体对烹饪腔20内承载的烹饪物进行烹饪,烹饪篮2相对于烹饪锅8移动;
待某一烹饪腔20内的烹饪物烹饪完成后,转动烹饪篮2使该烹饪腔20与出料口15处于同一环向位置,提升烹饪篮2沥液后使该烹饪腔20的出料孔17连通出料口15,将烹饪腔20内的烹饪物通过出料孔17、出料口15排出;
回落烹饪篮2,继续对烹饪腔20内的烹饪物进行烹饪,直至下一烹饪腔20内的烹饪物烹饪完成。
烹饪过程中,沿烹饪篮2环向将待烹饪物依次投入多个烹饪腔20,烹饪完成后依次将烹饪腔20内的烹饪物通过出料口15排出。
结合实施例1和图1,对于制作烹煮物的过程,通过烹饪锅8加热水体实现对烹煮物的熟成,包括:
启动烹饪装置,水泵将水箱6中的水泵入进水管中,水通过进水管后喷淋进入烹饪锅8中,达到预定水量后水泵停止,停止进水,烹饪锅8的电磁加热组件开启,将水煮沸;
将调好的馅料和活好的面分别放入馅料供应桶10和面皮供应桶3,两个供应桶桶内的活塞在推料组件的推动下,向上挤压物料,依据原料配比,调控第一推杆组件和第二推杆组件的速度及行程,使其按照预定程序相匹配,两种原料通过 料管被挤压入包馅模具13中,面成形为空心桶状、馅料在其内,包馅模具13下方的切断机构16在预设程序的控制下,由丝杆电机和齿轮带动两个三角切断器,通过旋转挤压,将组合后的馅料与面皮夹断,形成烹饪物,之后落入烹饪锅8的烹饪腔20内。
结合图2、图3,对于烹饪过程,包括:
预先设定每盘烹饪物的个数,烹饪物逐个落入烹饪篮2中,当达到设定数量后,转动机构19带动烹饪篮2旋转,如果不需要连续出餐,制做烹饪物工作暂停,如果需要连续出餐,在烹饪篮2旋转一定角度后,使下一烹饪腔20朝向落料位置,烹饪物继续落入下一个烹饪腔20中,不同馅料的烹饪物设置有不同的煮制时间,达到预定时间后,转动机构19带动对应的烹饪单体11到达与出烹饪物出料口15相匹配的位置,升降机构18使烹饪篮2升高,烹饪篮2中的水由烹饪腔20底端的沥液孔12流回到烹饪锅8内,升高至预定位置后,烹饪篮2上的烹饪物出料孔17与出料口15相吻合,烹饪物经由出料孔17、出料口15和出料管4后落入盘中。
可以理解的是,对于烹炸过程,其操作流程与上述烹煮过程相似,将烹饪锅8内的水替换为油,对烹炸物进行烹炸熟成即可。
结合图1-图4,对于清洗过程,包括:
烹饪锅8下部的排水孔打开,烹饪锅8内的水经由排污管排出,之后排水孔保持开启状态,两个推料组件回到初始位置;清洗剂泵开启,将清洗剂桶9中的清洗剂泵入馅料桶中,达到预设定量后清洗剂泵关闭,水箱6泵开启,水箱6中的水流入水管中,经由水管进入馅料桶中,到达预定量后,水箱6泵关闭,馅料供应桶10内的第二推料组件7开启,通过上下抽拉,冲刷馅料供应桶10,之后 第二推料组件7将废水经由包馅模具13排入烹饪锅8中,重复此过程多次,直至冲洗干净。
馅料供应桶10和输料管清洗完成后,水箱6泵开启,水进入面皮供应桶3中,到达预定量后,水箱6泵关闭,第一推杆电机开启,通过上下抽拉浸泡,将面皮供应桶3内的余料溶解稀释,之后第一推料组件5将面皮供应桶3内的废水经由包馅模具13排入烹饪锅8中。
面皮供应桶3和输料管清洗结束后,水经由水管喷淋入烹饪锅8中,转动机构19带动烹饪篮2转动,喷淋水对烹饪篮2进行旋转冲刷,同时清理烹饪锅8,废水经由排污管排出。

  1. 一种烹饪装置,其特征在于,包括烹饪锅和位于烹饪锅内的烹饪篮,烹饪锅侧壁上设有出料口;烹饪篮包括绕其轴线环绕设置的多个烹饪单体,每个烹饪单体均设有顶部开口的烹饪腔,烹饪腔底面沿烹饪锅径向上倾斜布置,烹饪单体朝向烹饪锅侧壁一侧设有与烹饪腔底面平齐的出料孔,烹饪篮能够绕轴线自转和/或沿轴向升降,以改变出料孔与出料口的相对位置,当出料孔连通出料口时输出烹饪腔内烹饪物。
  2. 如权利要求1所述的烹饪装置,其特征在于,所述烹饪篮与烹饪锅同轴布置,烹饪单体开口方向与烹饪锅开口方向相同。
  3. 如权利要求1所述的烹饪装置,其特征在于,所述烹饪单体内部烹饪腔的底面为弧形面,沿烹饪单体底面远离烹饪篮轴线方向上,烹饪单体的底面高度逐渐降低,以使内部烹饪物趋向出料孔移动;每个所述烹饪单体的出料孔与其弧形面相匹配,出料孔位于烹饪腔的最低端。
  4. 如权利要求1所述的烹饪装置,其特征在于,所述烹饪单体上设有多个沥液孔,沥液孔贯穿烹饪单体。
  5. 如权利要求1所述的烹饪装置,其特征在于,所述烹饪篮连接有转动机构,转动机构输出端驱动烹饪篮绕轴线自转,烹饪篮连接有升降机构,升降机构输出端驱动烹饪篮沿轴向升降。
  6. 如权利要求1所述的烹饪装置,其特征在于,还包括包馅组件和供料组件,供料组件包括馅料供应桶、面皮供应桶和推料组件,馅料供应桶、面皮供应桶位于顶部的出口分别接入包馅组件,推料组件位于馅料供应桶和面皮供应桶的下方。
  7. 如权利要求6所述的烹饪装置,其特征在于,所述包馅组件包括包馅机构和切断机构,供料组件接入包馅机构,切断机构位于烹饪锅开口与包馅机构之间, 以切断并投放烹饪物至烹饪腔内。
  8. 如权利要求1所述的烹饪装置,其特征在于,还包括清洗机构,清洗机构包括清洗剂桶、水泵,水泵通过管路接入烹饪锅,清洗剂桶接入管路。
  9. 一种如权利要求1-8任一项所述的烹饪装置的工作方法,其特征在于,包括:
    烹饪锅内的液体对烹饪腔内承载的烹饪物进行烹饪,烹饪篮相对于烹饪锅移动;
    待某一烹饪腔内的烹饪物烹饪完成后,转动烹饪篮使该烹饪腔与出料口处于同一环向位置,提升烹饪篮沥出液体后使该烹饪腔的出料孔连通出料口,将烹饪腔内的烹饪物通过出料孔、出料口排出;
    回落烹饪篮,继续对烹饪腔内的烹饪物进行烹饪,直至下一烹饪腔内的烹饪物烹饪完成。
  10. 如权利要求9所述的工作方法,其特征在于,沿烹饪篮环向将待烹饪物依次投入多个烹饪腔,烹饪完成后依次将烹饪腔内的烹饪物通过出料口排出。
