A plausible explanation of this behaviour is attributable to the intrinsic nature of the raw materials. In the case of the vegetable-based cheese, the fibrous structure is obtained with vegetable fibres, whereas in milk-based mozzarella it is obtained with caseins (functional milk proteins), which, as they have stronger molecular interactions compared to vegetable fibres, could explain this greater resistance to chewing.
- Figure 1 shows the graphs obtained from the mean of the various measurements, which in any case show a very similar TPA profile among the various products, notwithstanding that the origin of the raw materials is distinctly different.

The higher this value, the greater the number of chews that must be applied so that the product no longer palatates in the mouth. From the data collected, it is clear that in this condition, the vegetarian mozzarella in example 3 is clearly superior to the MozzaVella Switzerland Switzerland. A plausible explanation for this behaviour can be attributed to the intrinsic nature of the raw materials and process which liken the vegetarian mozzarella of example 3 to a milk-based stretched pasta product.

Abstract
La présente invention concerne la préparation d'un produit alimentaire qui est proposé en tant qu'alternative végétale aux produits laitiers. Plus précisément, l'invention concerne un procédé consistant à obtenir un fromage végétal et/ou végan dérivé de noix, de préférence d'amandes et/ou de noix de cajou, et/ou de graines, caractérisé en ce que c'est un fromage végétal à pâte filée, de préférence avec un liquide protecteur, présentant des propriétés organoleptiques (aspect et consistance) similaires à celles d'une mozzarella dérivée du lait. En outre, l'invention concerne un fromage végétal à pâte filée, de préférence avec un liquide protecteur, obtenu avec le procédé de l'invention, un fromage végétal à pâte filée, de préférence avec un liquide protecteur, et l'utilisation de combinaisons d'agents de texture alimentaire, de préférence d'origine naturelle, et encore plus préférablement l'utilisation de combinaisons de fibres alimentaires naturelles, qui permettent d'effectuer l'étape de filage d'un fromage végétal dérivé de noix, en particulier d'amandes ou de noix de cajou, et/ou de graines.
