本发明公开了一种大豆酸奶与百香果结合的饮料及其制备装置,涉及酸奶饮料制备发酵技术领域。本发明包括酸奶饮料通过大豆、百香果、白糖、发酵剂、牛乳以及纯净水之间200∶125∶10∶1∶500∶600的重量比例制成;发酵箱顶部设置有环形通孔,环形通孔底部内侧固定设置有引流板,引流板倾斜设置,倾斜角度为30°且向发酵箱内壁一侧倾斜;发酵箱内部设置有活动组件,活动组件上活动设置有搅拌组件,搅拌组件一端设置有清理组件;三个刮板弧度与发酵箱内壁横截面弧度一致,且三个刮板均倾斜设置,与水平面呈20°夹角。本发明通过三块刮板的弧度与发酵罐横截面弧度一致,因此刮板能够与发酵箱内壁相互贴合,在刮除凝块时能够彻底将其刮除。

Description

一种大豆酸奶与百香果结合的饮料及其制备装置 技术领域
本发明属于酸奶饮料制备发酵技术领域,特别是涉及一种大豆酸奶与百香果结合的饮料及其制备装置。
背景技术
大豆酸奶是将大豆研磨制成都将,加入牛乳,再进行接种发酵的一种营养乳制品,一般工艺流程是大豆→去杂→浸泡磨浆→均质→配料→杀菌→冷却接种→分装→前发酵→后发酵→检验→成品,这一系列步骤完成后制成成品大豆酸奶,然而随着生活水平质量的提高,逐渐向大豆酸奶内部添加一些辅料以此来增加其营养以及丰富大豆酸奶的风味,例如将大豆酸奶与百香果相结合制成酸奶饮料。
目前在生产大豆酸奶过程中最重要的一步是对大豆奶的发酵,而天界百香果也是在发酵过程中将百香果与大豆奶相混合共同发酵,发酵过程中使用到的嗜热链球菌和保加利亚乳酸杆菌用量需把握精准,才能制成风味与营养皆好的酸奶饮料,酸奶饮料发酵需要进行搅拌,保证发酵剂与大豆奶充分混合,在发酵箱中进行搅拌时,一些大块颗粒随着搅拌向发酵箱内壁移动,并最终黏粘在发酵箱内壁上,导致后续酸奶的产出率下降,酸奶凝块凝结在发酵箱内壁上清洗效率低,清洗不干净,对下次酸奶饮料发酵有严重的影响。
现有的大豆酸奶与百香果结合的饮料制备装置在发酵过程中不能对临近发酵箱内壁位置的酸奶进行搅拌混合,由于酸奶黏稠容易凝 结成凝块附着在发酵箱内壁上,后续酸奶取出时内壁酸奶难以取出,并且对发酵箱的清洗造成一定影响,同时,一般的大豆酸奶都会加以辅料,而与百香果相结合起不到更多改善风味的独特之处,为此我们提出一种大豆酸奶与百香果结合的饮料及其制备装置。
发明内容
本发明的目的在于提供一种大豆酸奶与百香果结合的饮料及其制备装置,解决现有的大豆酸奶与百香果结合的饮料制备装置在发酵过程中不能对临近发酵箱内壁位置的酸奶进行搅拌混合,由于酸奶黏稠容易凝结成凝块附着在发酵箱内壁上,后续酸奶取出时内壁酸奶难以取出,并且对发酵箱的清洗造成一定影响,同时,一般的大豆酸奶都会加以辅料,而与百香果相结合起不到更多改善风味的独特之处的问题。
为解决上述技术问题,本发明是通过以下技术方案实现的:
本发明为一种大豆酸奶与百香果结合的饮料,所述酸奶饮料通过大豆、百香果、白糖、发酵剂、牛乳以及纯净水之间200∶125∶10∶1∶500∶600的重量比例制成。
优选的,所述发酵剂为乳酸乳球菌乳脂亚种、乳酸乳球菌乳酸亚种中的一种或几种。
一种大豆酸奶与百香果结合的饮料的制备装置,包括发酵箱,所述发酵箱顶部设置有环形通孔,所述环形通孔底部内侧固定设置有引流板,所述引流板倾斜设置,倾斜角度为30°且向发酵箱内壁一侧倾斜;所述发酵箱内部设置有活动组件,所述活动组件上活动设置有 搅拌组件,所述搅拌组件一端设置有清理组件,发酵箱内部用于对大豆奶进行发酵,从而制成酸奶饮料,引流板用于将增压的气流导向发酵箱的内壁上,从而将临近顶部内壁上黏粘的酸奶吹下;
所述活动组件包括丝杆、电滑块以及连杆,所述丝杆固定设置在发酵箱内部中轴线位置,所述发酵箱内部顶端开设有环形滑槽,所述电滑块活动设置在环形滑槽内部,所述电滑块底部固定连接有连杆,所述连杆围绕丝杆旋转,丝杆用于带动清理组件上下清理发酵箱内壁,电滑块在环形滑槽内部旋转滑动,带动底部的连杆围绕丝杆旋转,丝杆不旋转而电滑块旋转时,搅拌组件保持同一高度不变对内部原料进行搅拌促进发酵,丝杆与电滑块同时工作旋转时,搅拌组件上下活动搅拌,并且清理组件对发酵箱以及出斗内壁上黏粘的酸奶进行刮除;
所述搅拌组件包括轴承件以及搅拌弹簧,所述轴承件活动设置在丝杆周侧面,所述轴承件周侧面阵列有四根搅拌弹簧,轴承件在丝杆周侧面上下活动,搅拌弹簧用于对发酵箱内部原料进行搅拌;
所述清理组件包括旋转件、第一刮板、第二刮板、第三刮板以及扭转弹簧,所述旋转件设置在搅拌弹簧一端,所述旋转件一侧面固定连接有第一刮板,所述第一刮板左右两侧分别通过扭转弹簧活动连接有第二刮板自己第三刮板,三个所述刮板弧度与发酵箱内壁横截面弧度一致,且三个所述刮板均倾斜设置,与水平面呈20°夹角,旋转件用于调整清理组件在发酵箱以及出斗内壁上的贴合角度,第一刮板、第二刮板以及第三刮板都用于对发酵箱以及出斗内壁上残留的凝块酸奶进行刮除,第二刮板以及第三刮板用于适应底部出斗的内壁弧度, 扭转弹簧用于第二刮板和第三刮板之间的旋转。
优选的,所述发酵箱外部固定连接有加热箱,所述加热箱完全包覆发酵箱,加热箱外部底侧固定连接有固定箍,所述固定箍周侧面分别固定连接有三个支撑柱,切三个所述支撑柱阵列在固定箍外部,加热箱用于对内部发酵箱进行加热以保证其内部的发酵温度始终处于适当温度,固定箍用于连接整体制备设备,三个支撑柱用于支撑制备设备。
优选的,所述发酵箱底部固定连接有出斗,所述出斗底部固定连接有电控阀,所述电控阀底部出口位置固定连接有出料管,所述出料管为弯管,出斗用于辅助酸奶的提取,电控阀作为控制酸奶提出的开关,出料管输送酸奶。
优选的,所述发酵箱顶部一侧开设有入料口,所述入料口上方固定设置有无氧投料斗;所述发酵箱内部顶端相对入料口一侧固定连接有感应箱;所述发酵箱顶部的环形通孔上固定设置有真空泵,无氧投料斗用于投入辅料百香果带籽果汁时保证发酵箱内部始终处于无氧环境。
优选的,所述活动组件还包括电机,所述发酵箱顶部中心位置开设有安装孔,所述电机固定设置在安装孔内部,所述电机在无氧投料斗的左侧,所述电机底部输出端与丝杆顶端固定连接,电机用于驱动丝杆旋转。
优选的,所述搅拌组件还包括连接环以及伸缩杆,所述连接环固定连接在轴承件周侧面,切位于相邻两根搅拌弹簧之间,所述连接环 活动设置在连杆内部;所述伸缩杆有四根,且阵列设置在连接环周侧面,每根所述连接环均设置在一根搅拌弹簧内部,所述伸缩杆远离连接环一端与旋转件固定连接,连接环用于连接轴承件,伸缩杆可以用于调整清理组件与发酵箱内壁的距离,使得清理组件还可以起到对内部的原料进行搅拌的作用。
优选的,所述清理组件还包括安装块以及固定杆,所述第一刮板相对两侧面上下两端、第二刮板一侧面上下两端以及第三刮板一侧面上下两端分别固定连接有安装块,所述第一刮板与左右两侧的第二刮板以及第三刮板之间设置有固定杆,所述固定杆上下两端分别贯穿位于三个所述刮板上的安装块,所述固定杆周侧面与扭转弹簧活动连接,安装块配合固定杆对三块刮板进行连接。
优选的,所述第二刮板以及第三刮板的大小为第一刮板的一半,所述第一刮板、第二刮板以及第三刮板的弧度均一致,弧度一致才能完全贴合发酵箱的内壁,从而对发酵箱内壁上黏粘的酸奶进行刮除。
本发明具有以下有益效果:
1、本发明通过将带籽的百香果果汁添加到饮料中,由于百香果籽拥有丰富的营养物质,且百香果籽可以搅碎吞咽,这样丰富了酸奶饮料的风味,并且增加了酸奶饮料的营养;同时由于百香果籽难以与果肉果汁分离,将其直接添加至酸奶中,减少了果肉与百香果籽分离的步骤,提高了制备的工作效率。
2、本发明通过设置可以上下升降的活动装置,在对原料进行搅拌过程中,电机不驱动丝杆旋转,由电滑块带动连杆围绕丝杆旋转, 从而轴承件的外壳在旋转过程中带动搅拌弹簧以及清理组件共同旋转搅拌,弹簧结构简单,且为螺旋形状,能够充分的对原料进行搅拌,同时,控制弹簧的长度,即清理组件到发酵箱内壁的距离,这样清理组件上的三块刮板也能够对原料进行搅拌,这样搅拌组件位于不便的高度对原料搅拌,当电机驱动丝杆旋转时,轴承组价上下移动,从而对发酵罐内部不同高度的原料进行搅拌,使得搅拌更加的充分,通过设置活动组件能够将搅拌组件与清理组件结合到一起,减少了多余的结构。
3、本发明通过设置清理组件,将刮板设置为分段形状,中间通过扭转弹簧进行连接,由于发酵罐与底部的出斗形状不一致,因此刮板对发酵箱内壁上黏粘的凝块进行刮除后,向下移动,与底部的出斗内壁接触,出斗越往下月狭小,因此在扭转弹簧的作用下第二刮板与第三刮板向内挤压,但始终与出斗内壁贴合,这样能够彻底的将黏粘在内壁上的凝块刮除,通过设置分段拼接式的刮板,能够对发酵箱以及出斗内壁共同进行清理,并且刮板还能够对原料进行搅拌,一举多得。
4、本发明的三块刮板的弧度与发酵罐横截面弧度一致,因此刮板能够与发酵箱内壁相互贴合,在刮除凝块时能够彻底将其刮除,同时加工刮板设置为倾斜状,这样,刮板能够对上下更宽的区域进行清理,搅拌过程中刮板顺时针转动,这样能够减少驱动力,使得搅拌更加轻松。

本发明一种大豆酸奶与百香果结合的饮料,所述酸奶饮料通过大豆、百香果、白糖、发酵剂、牛乳以及纯净水之间200∶125∶10∶1∶500∶600的重量比例制成,此比例下制成的酸奶饮料营养成分最丰 富,风味最佳。
在本实施方式中,将饱满无损的大豆清洗干净后用清水浸泡五个小时,浸泡温度为35℃,浸泡完成后沥干水分,加入纯净水对其进行研磨蒸煮,将研磨蒸煮得到的豆浆冷却后进行过滤,将过滤得到的豆浆放入发酵箱3内部添加发酵剂进行发酵;豆浆冷却过滤途中将百香果洗净切开,取出内部的果瓤,将百香果带籽果汁从无氧投料斗8投入发酵箱3内部保持40℃进行混合发酵五小时,然后降温,再在35℃环境中发酵三个半小时,向发酵液中加入白糖,搅拌,再110℃高温环境下灭菌十分钟后低温冷藏。
在本实施方式中,发酵剂为乳酸乳球菌乳脂亚种、乳酸乳球菌乳酸亚种中的一种或几种。
参阅图1-9,本发明一种大豆酸奶与百香果结合的饮料的制备装置,包括发酵箱3,发酵箱3顶部设置有环形通孔,环形通孔底部内侧固定设置有引流板10,引流板10倾斜设置,倾斜角度为30°且向发酵箱3内壁一侧倾斜;发酵箱3内部设置有活动组件,活动组件上活动设置有搅拌组件,搅拌组件一端设置有清理组件,发酵箱3内部用于对大豆奶进行发酵,从而制成酸奶饮料,引流板10用于将增压的气流导向发酵箱3的内壁上,从而将临近顶部内壁上黏粘的酸奶吹下;
活动组件包括丝杆13、电滑块14以及连杆15,丝杆13固定设置在发酵箱3内部中轴线位置,发酵箱3内部顶端开设有环形滑槽,电滑块14活动设置在环形滑槽内部,电滑块14底部固定连接有连杆 15,连杆15围绕丝杆13旋转,丝杆13用于带动清理组件上下清理发酵箱3内壁,电滑块14在环形滑槽内部旋转滑动,带动底部的连杆15围绕丝杆13旋转,丝杆13不旋转而电滑块14旋转时,搅拌组件保持同一高度不变对内部原料进行搅拌促进发酵,丝杆13与电滑块14同时工作旋转时,搅拌组件上下活动搅拌,并且清理组件对发酵箱3以及出斗5内壁上黏粘的酸奶进行刮除;
搅拌组件包括轴承件16以及搅拌弹簧19,轴承件16活动设置在丝杆13周侧面,轴承件16周侧面阵列有四根搅拌弹簧19,轴承件16在丝杆13周侧面上下活动,搅拌弹簧19用于对发酵箱3内部原料进行搅拌;

在本实施方式中,搅拌组件还包括连接环17以及伸缩杆18,连接环17固定连接在轴承件16周侧面,切位于相邻两根搅拌弹簧19之间,连接环17活动设置在连杆15内部;伸缩杆18有四根,且阵列设置在连接环17周侧面,每根连接环17均设置在一根搅拌弹簧19内部,伸缩杆18远离连接环17一端与旋转件20固定连接,连接 环17用于连接轴承件16,伸缩杆18可以用于调整清理组件与发酵箱3内壁的距离,使得清理组件还可以起到对内部的原料进行搅拌的作用。
在本实施方式中,清理组件还包括安装块24以及固定杆25,第一刮板21相对两侧面上下两端、第二刮板22一侧面上下两端以及第三刮板23一侧面上下两端分别固定连接有安装块24,第一刮板21与左右两侧的第二刮板22以及第三刮板23之间设置有固定杆25,固定杆25上下两端分别贯穿位于三个刮板上的安装块24,固定杆25周侧面与扭转弹簧26活动连接,安装块24配合固定杆25对三块刮板进行连接。
在本实施方式中,第二刮板22以及第三刮板23的大小为第一刮板21的一半,第一刮板21、第二刮板22以及第三刮板23的弧度均一致,弧度一致才能完全贴合发酵箱3的内壁,从而对发酵箱3内壁上黏粘的酸奶进行刮除。
本发明的工作原理为:将过滤得到的豆奶从无氧投料斗8倒入发酵箱3内部,加热箱4对发酵箱3内部进行加热,调节至40℃对发酵箱3内部的豆奶进行发酵,真空泵9对发酵箱3内部抽至真空状态,途中依次通过无氧投料斗8向发酵箱3内部加入发酵剂以及百香果带籽果汁,发酵过程中电滑块14带动底部的连杆15围绕丝杆13旋转,通过连接环17与轴承件16外部的连接,搅拌弹簧19以及清理组件上的三个刮板对原料进行搅拌,搅拌途中调节伸缩杆18的长度,使得三个刮板能够对临近发酵箱3内壁上的凝块原料也进行搅拌击碎, 持续搅拌发酵5小时后,加入白糖调节至35℃继续发酵三个半小时,感应箱11内部的温度传感元件对发酵箱3内部温度进行感应,从而加热量4调节发酵温度;三个半小时后将温度调节至110摄氏度对酸奶饮料进行高温灭菌,酸奶饮料制成后通过电控阀6将酸奶饮料从出料管7放出,低温冷藏;放出酸奶的过程中,电机12启动带动丝杆13旋转,从而带动轴承件20从上往下活动,同时连杆15也带动搅拌组件以及清理组件进行旋转,清理组件对发酵箱3内壁上黏粘的酸奶饮料进行从上往下的刮除,当刮到发酵罐3内壁底端时继续向下面的出斗5移动,旋转件20调整第一刮板21与出斗5内壁的贴合角度,由于出斗5内壁弧度较大,在扭转弹簧26的弹性作用下,第二刮板22以及第三刮板23向内收缩但依旧适应贴合出斗5内壁,将发酵箱3以及出斗5内壁上的黏粘酸奶饮料刮除后,再对发酵箱3进行清洗。

  3. 一种大豆酸奶与百香果结合的饮料的制备装置,其特征在于,包括发酵箱(3),所述发酵箱(3)顶部设置有环形通孔,所述环形通孔底部内侧固定设置有引流板(10),所述引流板(10)倾斜设置,倾斜角度为30°且向发酵箱(3)内壁一侧倾斜;所述发酵箱(3)内部设置有活动组件,所述活动组件上活动设置有搅拌组件,所述搅拌组件一端设置有清理组件;
    所述活动组件包括丝杆(13)、电滑块(14)以及连杆(15),所述丝杆(13)固定设置在发酵箱(3)内部中轴线位置,所述发酵箱(3)内部顶端开设有环形滑槽,所述电滑块(14)活动设置在环形滑槽内部,所述电滑块(14)底部固定连接有连杆(15),所述连杆(15)围绕丝杆(13)旋转;
    所述搅拌组件包括轴承件(16)以及搅拌弹簧(19),所述轴承件(16)活动设置在丝杆(13)周侧面,所述轴承件(16)周侧面阵列有四根搅拌弹簧(19);

  5. 根据权利要求4所述的一种大豆酸奶与百香果结合的饮料的制备装置,其特征在于,所述发酵箱(3)底部固定连接有出斗(5),所述出斗(5)底部固定连接有电控阀(6),所述电控阀(6)底部出口位置固定连接有出料管(7),所述出料管(7)为弯管。
  6. 根据权利要求5所述的一种大豆酸奶与百香果结合的饮料的制备装置,其特征在于,所述发酵箱(3)顶部一侧开设有入料口,所述入料口上方固定设置有无氧投料斗(8);所述发酵箱(3)内部顶端相对入料口一侧固定连接有感应箱(11);所述发酵箱(3)顶部的环形通孔上固定设置有真空泵(9)。
  7. 根据权利要求3所述的一种大豆酸奶与百香果结合的饮料的制备装置,其特征在于,所述活动组件还包括电机(12),所述发酵箱(3)顶部中心位置开设有安装孔,所述电机(12)固定设置在安 装孔内部,所述电机(12)在无氧投料斗(8)的左侧,所述电机(12)底部输出端与丝杆(13)顶端固定连接。
  8. 根据权利要求3所述的一种大豆酸奶与百香果结合的饮料的制备装置,其特征在于,所述搅拌组件还包括连接环(17)以及伸缩杆(18),所述连接环(17)固定连接在轴承件(16)周侧面,切位于相邻两根搅拌弹簧(19)之间,所述连接环(17)活动设置在连杆(15)内部;所述伸缩杆(18)有四根,且阵列设置在连接环(17)周侧面,每根所述连接环(17)均设置在一根搅拌弹簧(19)内部,所述伸缩杆(18)远离连接环(17)一端与旋转件(20)固定连接。
  9. 根据权利要求3所述的一种大豆酸奶与百香果结合的饮料的制备装置,其特征在于,所述清理组件还包括安装块(24)以及固定杆(25),所述第一刮板(21)相对两侧面上下两端、第二刮板(22)一侧面上下两端以及第三刮板(23)一侧面上下两端分别固定连接有安装块(24),所述第一刮板(21)与左右两侧的第二刮板(22)以及第三刮板(23)之间设置有固定杆(25),所述固定杆(25)上下两端分别贯穿位于三个所述刮板上的安装块(24),所述固定杆(25)周侧面与扭转弹簧(26)活动连接。
  10. 根据权利要求3所述的一种大豆酸奶与百香果结合的饮料的制备装置,其特征在于,所述第二刮板(22)以及第三刮板(23)的大小为第一刮板(21)的一半,所述第一刮板(21)、第二刮板(22)以及第三刮板(23)的弧度均一致。
