ホエイタンパク質は、牛乳からカゼイン等を除いた乳清(ホエー)に含まれるタンパク質であり、ラクトアルブミン、ラクトグロブリン、ラクトフェリン等が挙げられる。
ホエイタンパク質は、運動栄養食品やダイエット用食品等のタンパク質補給源として用いられている。しかしホエイタンパク質は、そのまま水に溶かそうとすると粉末塊の表面が飴状になり、ダマやママコとなる。一旦ダマとなってしまうと、ダマを丹念につぶしていかないと溶解させるのが難しくなる。
一般的に、粉末原料の水溶性を高めるには、造粒して顆粒にし、沈降性を向上させ、水に分散または溶解しやすくする手法が知られている。しかし、ホエイタンパク質は粉末原料中に高濃度で存在すると、顆粒にしても依然として水への沈降性が悪く、水に対する溶解性を向上し難いという問題点があった。そのため、タンパク質の溶け残りが多く発生し、経口摂取の際に溶け残った飴状のタンパク質が口腔内に付着することがあり、飲みにくいものとなっていた。
上記問題を解決するために、例えば特許文献1では、ホエープロテイン含有顆粒において、乳化剤としてHLBが13~18であるラウリン酸を構成脂肪酸とするポリグリセリン脂肪酸エステルを用いることにより、ダマの発生を抑制することができることが提案されている。しかしながら、この方法でもホエイタンパク質の水溶性を十分に向上させるには至っていない。
そこで本発明の目的は、十分に高い水溶性を有する、ホエイタンパク質造粒物を提供することにある。また、当該造粒物が水に十分に溶解することにより、溶け残りが少なく、飲みやすいタンパク質溶液を調製可能な、ホエイタンパク質造粒物を提供することにある。
本発明者らは鋭意研究を重ねた結果、ホエイタンパク質を主成分として含有するタンパク質造粒物において、平均粒子径、及び、下記で定義される均一度Uを特定の範囲とし、さらに、粗大粉及び微粉の含有比率を特定の範囲に調整することによって上記課題を解決できることを見出し、本発明を完成するに至った。
すなわち本発明は、以下の通りである。

本発明は、平均粒子径、均一度U、粗大粉及び微粉の含有比率が特定範囲であるため、十分に高い水溶性を有するタンパク質造粒物を提供でき、溶け残りが少なく、飲みやすいタンパク質溶液を調製可能なホエイタンパク質造粒物を提供できる。
以下、本発明の実施形態についてさらに詳しく説明する。
本発明の一実施形態は、平均粒子径、均一度U、粗大粉及び微粉の含有比率を特定範囲とする、ホエイタンパク質を主成分として含有するタンパク質造粒物である。本実施形態に係るタンパク質造粒物(以下、単に造粒物ということもある)は、平均粒子径、均一度U、粗大粉及び微粉の含有比率を特定範囲とすることにより、十分に高い水溶性を有するタンパク質造粒物を提供できる。
本実施形態において、平均粒子径、均一度U、粗大粉及び微粉の含有比率を特定の範囲に調整することにより、十分に高い水溶性が得られる詳細な理由は現時点では明らかではないが、以下のような作用によるものと推測される。すなわち、粒子径の小さい微粉は水中でダマとなって沈降せず、粒子径の大きい粗大粉は内部まで水が浸透せず溶け残る。そのため、これらの微粉や粗大粉の含有比率を一定値以下とし、かつ平均粒子径や均一度を特定範囲に調整することによって、水への溶解性を向上できる。なお、本実施形態は、上記作用を奏するものに限定されるものではない。
本実施形態におけるホエイタンパク質とは、牛乳中で、カゼインを除くタンパク質の総称である。乳清タンパク質として分類されるものであってもよい。ホエイタンパク質は、ラクトグロブリン、ラクトアルブミン、ラクトフェリン等の複数の成分から構成されており、乳糖、ビタミン、ミネラルなどは含まれない。牛乳などの乳原料を酸性に調整した際に、沈殿するタンパク質がカゼイン、沈殿しないタンパク質がホエイタンパク質となる。
本実施形態に係る造粒物には、例えば、ホエイタンパク質を含む粉末原料を原料として使用できる。ホエイタンパク質を含む粉末原料として、例えば、WPC(ホエイタンパク濃縮物、タンパク質含有量が75~85質量%)、WPI(ホエイタンパク分離物、タンパク質含有量が85質量%以上)が挙げられる。これらは単独で用いてもよいし、二種以上で用いてもよい。
本実施形態に係る造粒物は、ホエイタンパク質を主成分として含有する。ここで、「主成分」とは、造粒物の全成分中で最も含有割合(質量基準)が多い成分を意味する。造粒物中のホエイタンパク質の含有量は、造粒物に対して50質量%以上であることが好ましく、55質量%以上であることがより好ましく、60質量%以上であることがさらに好ましく、65質量%以上であることがさらに好ましく、68質量%以上であることが特に好ましい。
造粒物中のホエイタンパク質の含有量が上記範囲であることによって、タンパク質の純度の高い造粒物となる。本実施形態に係る造粒物は十分に高い水溶性を有するため、このような高濃度のタンパク質であっても水に溶解させることができる。
また、本実施形態に係る造粒物中のホエイタンパク質の含有量の上限は特に制限されないが、例えば、造粒物に対して99質量%以下、95質量%以下、90質量%以下である。
本実施形態に係る造粒物は、平均粒子径が207~570μmであることが必要である。平均粒子径が上記範囲であることによって、造粒物の水への溶解性が十分高くなり、溶け残りが少なく、飲みやすいタンパク質溶液が調製可能となる。
造粒物の平均粒子径は230μm以上であることが好ましく、240μm以上であることがより好ましく、250μm以上であることがさらに好ましく、260μm以上であることが特に好ましい。
造粒物の平均粒子径は500μm以下であることが好ましく、450μm以下であることがより好ましく、400μm以下であることがさらに好ましく、350μm以下であることがさらに好ましく、330μm以下であることがさらに好ましく、300μm以下であることが特に好ましい。
本実施形態に係る造粒物の平均粒子径は、レーザー回折・散乱式測定法により、図1に示す横軸を粒子径、縦軸を粒子の存在比率としてプロットした体積基準粒度分布から求めることができる。具体的には、下記式に基づき、体積基準粒度分布から平均粒子径を求めることができる。
上記式のうち、Dpは平均粒子径(μm)、Diは任意の粒子径(μm)、XiはDiにおける造粒物の粒子の存在比率(体積比)を意味する。ここでDiにおける造粒物の粒子の存在比率(体積比)とは、造粒物全体の体積に対する粒子径Diの造粒物の体積の割合を意味し、造粒物全体の体積をV、粒子径Diの造粒物の体積をViとした場合、Vi/Vを意味する。
本実施形態では、レーザー回折・散乱式粒度分布測定装置を用いて体積基準の頻度分布のメジアン径を測定し、このメジアン径をもって平均粒子径と定義できる。レーザー回折・散乱式粒度分布測定装置としては、例えばマルバーン社製商品名マスターサイザー3000および付属のソフトMastersizer 3000を用いることができる。
また本実施形態に係る造粒物は、均一度Uが0.58以下であることが必要である。均一度Uとは後述する式(1)で示される値をいい、この値が低いと粒度分布がシャープな造粒物となる。均一度Uが上記範囲であることによって、造粒物の水への溶解性が十分高くなり、溶け残りが少なく、飲みやすいタンパク質溶液が調製可能となる。
本実施形態に係る造粒物の均一度Uは0.55以下であることが好ましく、0.50以下であることがより好ましく、0.47以下であることがさらに好ましく、0.40以下であることが特に好ましい。また、造粒物の均一度Uの下限値は、例えば0.25以上、0.30以上、0.36以上である。
本実施形態に係る造粒物の均一度Uは、上記の平均粒子径の測定と同様に、レーザー回折・散乱式粒度分布測定装置としてマルバーン社製商品名マスターサイザー3000および付属のソフトMastersizer 3000を用いて測定することができる。
以下、均一度Uを図1に沿って説明する。図1において、体積基準の頻度分布のメジアン径を平均粒子径(μm)をDpとし、造粒物の粒子の任意の粒子径(μm)をDiとしたとき、Diにおける造粒物の粒子の存在比率(体積比)は、Xiで表される。このとき、造粒物の粒子の粒度分布、すなわち均一度Uは、下記式(1)で表すことができる。式(1)の分子は、任意の粒子の粒子径Diと平均粒子径Dpとの差に存在比率Xiを乗じたものの総和であり、均一度Uは当該総和を平均粒子径Dpで除して求めた値である。
なお、式(1)中、“||”の記号は絶対値を示す。また、Diにおける造粒物の粒子の存在比率(体積比)とは、造粒物全体の体積に対する粒子径Diの造粒物の体積の割合を意味し、造粒物全体の体積をV、粒子径Diの造粒物の体積をViとした場合、Vi/Vを意味する。
上記式(1)から分かるように、造粒物の粒子の粒度分布がシャープであればあるほど、均一度Uの値は低くなる。本実施形態では、上記のように均一度Uが0.58以下であることが必要であり、狭い粒度分布を有するといえる。
また本実施形態に係る造粒物は、粒子径が500μm以上である粗大粉の含有比率(体積比)が22%以下であることが必要である。粗大粉の含有比率が上記範囲であることによって、造粒物の水への溶解性が十分高くなり、溶け残りが少なく、飲みやすいタンパク質溶液が調製可能となる。
粒子径が500μm以上である粗大粉の含有比率(体積比)は20%以下であることが好ましく、18%以下であることがより好ましく、16%以下であることがさらに好ましく、14%以下であることがさらに好ましく、11%以下であることが特に好ましい。
また、粒子径が500μm以上である粗大粉の含有比率(体積比)は、例えば4%以上、8%以上、10%以上である。
また本実施形態に係る造粒物は、粒子径が150μm以下である微粉の含有比率(体積比)が31%以下であることが必要である。微粉の含有比率が上記範囲であることによって、造粒物の水への溶解性が十分高くなり、溶け残りが少なく、飲みやすいタンパク質溶液が調製可能となる。
粒子径が150μm以下である微粉の含有比率(体積比)は28%以下であることが好ましく、25%以下であることがより好ましく、22%以下であることがさらに好ましく、17%以下であることがさらに好ましく、12%以下であることが特に好ましい。
また、粒子径が150μm以下である微粉の含有比率(体積比)は、例えば7%以上、10%以上、11%以上である。
上記粗大粉および微粉の含有比率(体積比)は、上述したレーザー回折・散乱式測定法により、図1に示す横軸を粒子径、縦軸を粒子の含有比率としてプロットした体積基準粒度分布から求めることができる。
具体的には、粒子径が500μm以上である粗大粉の含有比率(体積比)は、下記式に基づき、体積基準粒度分布から求めることができる。
上記式のうち、Xlは粗大粉の含有比率(体積比(%))、Dkは500μm以上の任意の粒子径(μm)、Xkは粒子径Dkにおける粒子の存在比率(体積比)を意味する。XiおよびDiは上記式(1)と同様である。また、粒子径Dkにおける粒子の存在比率(体積比)とは、造粒物全体の体積に対する粒子径Dkの造粒物の体積の割合を意味し、造粒物全体の体積をV、粒子径Dkの造粒物の体積をVkとした場合、Vk/Vを意味する。
また、粒子径が150μm以下である微粉の含有比率(体積比)は、下記式に基づき、体積基準粒度分布から求めることができる。
上記式のうち、Xsは微粉の含有比率(体積比(%))、Djは150μm以下の任意の粒子径(μm)、Xjは粒子径Djにおける粒子の存在比率(体積比)を意味する。XiおよびDiは上記式(1)と同様である。また、粒子径Djにおける粒子の存在比率(体積比)とは、造粒物全体の体積に対する粒子径Djの造粒物の体積の割合を意味し、造粒物全体の体積をV、粒子径Djの造粒物の体積をVjとした場合、Vj/Vを意味する。
本実施形態に係る造粒物は、ホエイタンパク質以外のタンパク質を含有してもよい。例えば、コラーゲンタンパク質、乳タンパク質、乳タンパク質濃縮物(MPC)、大豆タンパク質、小麦タンパク質、小麦タンパク質分解物、ホエイペプチド等が挙げられる。これらは単独で用いてもよいし、二種以上で用いてもよい。
本実施形態に係る造粒物中の全タンパク質の含有量は、造粒物に対して50質量%以上であることが好ましく、55質量%以上であることがより好ましく、60質量%以上であることがさらに好ましく、65質量%以上であることがさらに好ましく、68質量%以上であることが特に好ましい。
また、本実施形態に係る造粒物中の全タンパク質の含有量の上限は特に制限されないが、例えば、造粒物に対して99質量%以下、95質量%以下、90質量%以下である。本実施形態に係る造粒物は、上記のようにタンパク質を多く含有する場合であっても、十分に高い水溶性を有することが可能となる。
本実施形態に係る造粒物は、本発明の効果を損なわない範囲で、上記タンパク質以外のその他の成分を含むことができる。その他の成分としては特に制限されず、用途に応じて公知のものの中から適宜選択すればよい。
なお、本実施形態に係る造粒物は、上述した通り、平均粒子径、均一度U、粗大粉及び微粉の含有比率を特定の範囲に調整することにより、十分に高い水溶性が得られる。これは、粒子径の小さい微粉は水面に浮かび水中に沈降しにくく、微粒粉が沈降したとしてもダマを形成して分散しにくく、粒子径の大きい粗大粉は内部まで水が浸透せず溶け残るためであると推測される。このように、これらの微粉や粗大粉の含有比率を一定値以下とし、かつ平均粒子径や均一度を特定範囲に調整することが、造粒物の水への溶解性を向上させるのに重要である。したがって、上記タンパク質以外のその他の成分を含んでいても、平均粒子径、均一度U、粗大粉及び微粉の含有比率を特定の範囲に調整することにより、造粒物の水への溶解性を向上させることができる。
その他の成分としては、例えば、バインダーとして、プルラン、アラビアガム、グアーガム、キサンタンガム、ローカストビーンガム等の増粘多糖類が挙げられる。バインダーを含む場合、粒子同士を結合する観点及び溶解性向上の観点から、造粒物に対して0.05~1質量%含有することが好ましく、0.1~0.8質量%含有することがより好ましく、0.1~0.6質量%含有することがさらに好ましい。
糖質として、ショ糖、ブドウ糖、麦芽糖、果糖、乳糖、エリスリトール、トレハロース、ソルビトール、マルチトール、キシリトール、オリゴ糖、デキストリン、マルトデキストリン、可溶性澱粉等が挙げられる。糖質を含む場合、栄養設計の観点から、造粒物に対して0~50質量%含有することが好ましく、0~35質量%含有することがより好ましく、0~20質量%含有することがさらに好ましい。
酸味料として、クエン酸、リンゴ酸、酒石酸、乳酸等が挙げられる。酸味料を含む場合、栄養設計、風味及び嗜好性向上の観点から、造粒物に対して1~20質量%含有することが好ましく、2~15質量%含有することがより好ましく、3~10質量%含有することがさらに好ましい。
甘味料として、ステビア、アスパルテーム、スクラロース、アセスルファムカリウム等が挙げられる。甘味料を含む場合、風味及び嗜好性向上の観点から、造粒物に対して0~1質量%含有することが好ましく、0.01~1質量%含有することがより好ましく、0.02~0.5質量%含有することがさらに好ましい。
ミネラル類として、カルシウム、マグネシウム、カリウム、鉄、ナトリウム、亜鉛等が挙げられる。ミネラル類を含む場合、栄養設計、風味及び嗜好性向上の観点から、造粒物に対して0~6質量%含有することが好ましく、0.1~4質量%含有することがより好ましく、0.2~2質量%含有することがさらに好ましい。
ビタミン類として、脂溶性ビタミンA、D、E、K及び水溶性ビタミンB群(B1、B2、B6、B12等)、C、パントテン酸、葉酸、ナイアシン等が挙げられる。ビタミン類を含む場合、栄養設計、風味及び嗜好性向上の観点から、造粒物に対して0~5質量%含有することが好ましく、0.1~3質量%含有することがより好ましく、0.2~1.5質量%含有することがさらに好ましい。
アミノ酸として、バリン、ロイシン、イソロイシン、グルタミン、リジン、メチオニン等が挙げられる。アミノ酸を含む場合、栄養設計、風味及び嗜好性向上の観点から、造粒物に対して0~20質量%含有することが好ましく、0.1~10質量%含有することがより好ましく、1~5質量%含有することがさらに好ましい。
香料として、バニラ香料、ミルク香料、フルーツ香料、ドリンク香料等が挙げられる。香料を含む場合、風味及び嗜好性向上の観点から、造粒物に対して0.1~4質量%含有することが好ましく、0.3~3質量%含有することがより好ましく、0.5~2.5質量%含有することがさらに好ましい。
乳化剤として、モノグリセリン脂肪酸エステル、ポリグリセリン脂肪酸エステル、ショ糖脂肪酸エステル、ソルビタン脂肪酸エステル、プロピレングリコール脂肪酸エステル、モノグリセリン有機酸エステル、モノグリセリン燐酸エステル等が挙げられる。乳化剤を含む場合、溶解性及び風味向上の観点から、造粒物に対して0~3質量%含有することが好ましく、0~2.5質量%含有することがより好ましく、0~1.5質量%含有することがさらに好ましい。
上記その他の成分は、単独または二種以上用いてもよい。
なかでも、本実施形態の造粒物は、糖質、ビタミン類、乳化剤、および増粘多糖類を含有することが好ましい。
また、本発明の一実施形態は、上記タンパク質造粒物を含有する粉末飲食品である。本実施形態の粉末飲食品は、上述したタンパク質造粒物を含有するものであれば、その他の成分としては特に制限されず、用途に応じて公知のものの中から適宜選択すればよい。
また、本発明の別の実施形態は、上記粉末飲食品を含水物に溶解させてなるホエイタンパク質含有飲食品である。上記造粒物ないし粉末飲食品は、水溶性が良好であることから、含水物に十分に溶解させることができる。
含水物としては、特に制限されず、水、牛乳、ヨーグルト、乳清飲料、乳飲料、及び加工乳などの乳製品、果汁、野菜汁、及びアルコール飲料等が挙げられる。
本実施形態に係る造粒物、粉末飲食品、及びホエイタンパク質含有飲食品は、ホエイタンパク質を補給するための健康食品、特定保健用食品、栄養機能食品、サプリメント、機能性表示食品および医薬品などの形態であることができる。本実施形態に係る造粒物、粉末飲食品、及びホエイタンパク質含有飲食品は、ホエイタンパク質を高濃度に含むため、製品の一回の摂取量を低減することができる。また、本実施形態に係る造粒物は、水溶性が良好であることから、消費者が容易に摂取することができる。
本実施形態に係る造粒物は、上記特定範囲の平均粒子径、均一度U、粗大粉及び微粉の含有比率を満たすように造粒される。当業者であれば、上記特定範囲の平均粒子径、均一度U、粗大粉及び微粉の含有比率は、後述する従来公知の混合方法や造粒方法を用い、種々の条件を適宜選択することにより、設定することができる。
本実施形態に係る造粒物は、ホエイタンパク質粉末とその他成分とを混合する工程、及び、得られる混合物を造粒する工程を経て製造できる。かかる製造方法においては、上記造粒工程で得られる造粒物を篩分けにより分級する工程を含んでいてもよい。以下詳細に説明する。
本実施形態に係る造粒物を得るには、まず、ホエイタンパク質粉末と、必要に応じてその他の任意の成分とを混合する。混合方法は、従来一般的に用いられている方法により行うことができ、特に制限されるものではない。例えば、水平円筒型混合機、V型混合機、二重円錐型混合機、揺動回転型混合機、単軸リボン型混合機、複軸パドル型混合機、回転働型混合機、円錐スクリュー型混合機等を用いて行うことができる。また、後述する造粒過程において各種成分を混合すると同時に造粒をおこなってもよい。
つづいて、上記で得られた混合物を、一般的な造粒法により造粒することができる。造粒法は特に制限されるものではない。乾式造粒及び湿式造粒のいずれも用いることができる。乾式造粒としては、例えば、スラッグ法、ローラーコンパクター法等が挙げられる。また、湿式造粒としては、例えば、撹拌混合造粒、噴霧乾燥造粒、流動層造粒、転動造粒、転動流動層造粒、
押し出し造粒等が挙げられる。
押し出し造粒等が挙げられる。
撹拌混合造粒は、攪拌されている粒子に水や結合剤(バインダーともいう)を添加し、種々の形状の羽根の回転により剪断、転動、圧密作用などを与え、粒子と粒子の架橋形成を進行させ、微小粒の生成、結合(会合)と破砕(解離)を繰り返し、粒子の成長を生じさせて造粒粒子を形成する造粒法である。
噴霧乾燥造粒は、高温気流中に液体を分散させて乾燥する造粒法である。
流動層造粒は、通常流動層、循環流型流動層、強制循環型流動層、噴流層等の流動層にて、粉体層を流動状態に保ちながら水や結合剤を噴霧して、粉体どうしを凝集造粒させる造粒法である。
転動造粒は、粒子の原料粉末を各種の容器中にて、攪拌羽根の作用により転動させ、水や結合剤をスプレーにより噴霧しつつ、粒子間の架橋形成により微粒を生成させ、転動・回転の運動を粒子に与えることにより粒の成長を促進する造粒法であり、皿型(バン型)造粒機、ドラム型造粒機、振動型造粒機等を用いて行う。
転動流動層造粒とは、攪拌造粒と流動層造粒の特徴を併せ持った機構で、粒子を転動、流動、攪拌させながら水や結合剤を噴霧して、粒子間の架橋形成を進行させ造粒粒子を形成する造粒法である。
押し出し造粒とは、水や結合剤を加えて混練し、可塑性を付与した粉末を多数の穴のあいたスクリーンまたはダイからスクリュー、ローラー等により押し出して造粒することをいう。押し出し造粒は、前押し出し式造粒機、ディスクペレッター式造粒機、リングダイ式造粒機、バスケット式造粒機、オシレーティング式造粒機、シリンダー式造粒機等を使用して行う。
湿式造粒のうち、例えば流動層造粒法を採用する場合は、従来公知の流動層造粒装置を用いて行うことができる。これは、装置の下部から空気等の流体を吹き上げ、固体粒子(原料粉末)を浮遊(流動)状態とし、これに水や結合剤等の噴霧液を噴霧して造粒、乾燥を行う装置である。流動層造粒装置としては、市販の流動層造粒機を用いることができる。このとき調整される操作条件としては、例えば噴霧液の種類、噴霧液量、噴霧流量、吹込み風量、吹込み風温、排風温度、ダンパー開度などが挙げられる。
結合剤としては、従来一般的に用いられているものを用いることができる。例えばメチルセルロース、ヒドロキシプロピルセルロース、ヒプロメロース、ヒプロメロースフタル酸エステル等のセルロース誘導体;トウモロコシデンプン、コムギデンプン等のデンプン類;ポリビニルピロリドン、アクリル酸ポリマー等の合成高分子類;アラビアガム、ゼラチン等の天然高分子類等が挙げられる。これらは単独または二種以上用いてもよい。また、その使用量についても、通常の造粒が可能な範囲で用いることができる。
例えば、流動層造粒によって造粒する場合、本実施形態における特定の平均粒子径、均一度U、粗大粉及び微粉の含有比率は、具体的には給気風量、給気温度、バインダー流量、バインダー液滴径等を適宜調整することで実現できる。
以下流動層造粒機を用いた場合の具体的な造粒条件を以下に例示する。
ホエイタンパク質の導入時のサイズ:180~220μm
ホエイタンパク質の導入時の量:200~600g
給気温度(造粒):50~100℃
給気温度(乾燥):50~100℃
給気風量(造粒):0.2~0.8m3/分
給気風量(乾燥):0.2~0.8m3/分
バインダー流量:10~50g/分
バインダー添加量:30~500g
スプレーエア流量:10~40L/分
造粒時間:3分~60分
ホエイタンパク質の導入時のサイズ:180~220μm
ホエイタンパク質の導入時の量:200~600g
給気温度(造粒):50~100℃
給気温度(乾燥):50~100℃
給気風量(造粒):0.2~0.8m3/分
給気風量(乾燥):0.2~0.8m3/分
バインダー流量:10~50g/分
バインダー添加量:30~500g
スプレーエア流量:10~40L/分
造粒時間:3分~60分
なお、必要に応じて上記で得られた造粒物をさらに篩分けにより分級し、造粒物の平均粒子径、均一度U、粗大粉及び微粉の含有比率を本発明で規定する範囲内に調整することも可能である。
このようにして得られた本実施形態に係る造粒物は、十分に高い水溶性を有し、経口摂取する際に飲みやすい。例えば、水100mlを収容した容器に造粒物7gを加え撹拌した後、目開き500μmの篩で篩過し、篩上に残存する造粒物を98℃で4時間乾燥させた際の、造粒物の残渣量(乾燥重量)は1g以下であり、好ましくは0.8g以下であり、より好ましくは0.7g以下であり、さらに好ましくは0.5g以下である。造粒物の残渣量が上記範囲であることによって、溶け残りが少ないため飲みやすい。
以下、本発明を実施例および比較例によりさらに説明するが、本発明は下記例に制限されない。
〔測定方法〕
本実施例において用いた測定方法について以下に説明する。
[平均粒子径、均一度U、粗大粉及び微粉の含有比率]
レーザー回折・散乱式粒度分布測定装置のマスターサイザー3000(マルバーン社製)および付属のソフトMastersizer 3000を用い、横軸を粒子径、縦軸を粒子の存在比率としてプロットした体積基準粒度分布を得た。測定条件として、ホッパー間隙は3.5mm、フィーダー強度は20~40%、粉体搬送の空気圧は0.2barとした。
得られた体積基準粒度分布より、平均粒子径(メジアン径)、粒子径が500μm以上の粗大粉、及び粒子径が150μm以下の微粉の含有比率を求めた。また、均一度Uは、
得られた体積基準粒度分布をもとに、下記式(1)より求めた。
本実施例において用いた測定方法について以下に説明する。
[平均粒子径、均一度U、粗大粉及び微粉の含有比率]

式(1)中、Dpは平均粒子径(μm)、Xiは前記体積基準粒度分布における各粒子径における粒子の存在比率、Diは各粒子の粒子径(μm)を表す。
〔製造例1〕
以下の各成分を混合することにより、造粒前のホエイタンパク質含有組成物1を調製した。
WPC80(レプリノフーズ社製:ホエイタンパク質含有率:78質量%)
マルトデキストリン
ビタミン混合物(ビタミンA,B1、B2、B6、B12、C、D、E、K、パントテン酸、葉酸、ナイアシンを含有)
以下の各成分を混合することにより、造粒前のホエイタンパク質含有組成物1を調製した。
WPC80(レプリノフーズ社製:ホエイタンパク質含有率:78質量%)
マルトデキストリン
ビタミン混合物(ビタミンA,B1、B2、B6、B12、C、D、E、K、パントテン酸、葉酸、ナイアシンを含有)
調製された上記組成物1を、液体成分(バインダー)である乳化剤(ポリグリセリン脂肪酸エステル)、及び増粘多糖類(プルランおよびアラビアガム)水溶液とともに流動層造粒機に導入し、表1に示す組成を有する造粒物を得た。なお、バインダー添加量やスプレーエア流量等を変更することにより、表2に示す8種類の造粒物A~Hが得られた。
造粒前の上記組成物1の粒子径は180~220μmとし、造粒時間は10分とした。

続いて、得られた造粒物A~Hの水溶性を下記の方法によって評価した。
25℃の水100mlを収容した300ml容のビーカーに造粒物7gを加え、攪拌機により周速度0.25m/secで10秒間撹拌し、撹拌した後の該造粒物を目開き500μmの篩で篩過し、篩上に残存する造粒物を恒温器にて98℃、4時間乾燥し、残渣量(乾燥重量)を測定し、水溶性の評価を行った。
結果を下記表2及び図2に示す。
25℃の水100mlを収容した300ml容のビーカーに造粒物7gを加え、攪拌機により周速度0.25m/secで10秒間撹拌し、撹拌した後の該造粒物を目開き500μmの篩で篩過し、篩上に残存する造粒物を恒温器にて98℃、4時間乾燥し、残渣量(乾燥重量)を測定し、水溶性の評価を行った。
結果を下記表2及び図2に示す。
表2及び図2の結果から、平均粒子径が207~570μmの範囲内の造粒物C~Hにおいては、残渣重量が1g以下となり、優れた水溶性を示すことがわかった。
〔製造例2〕
製造例2では、平均粒子径をおおよそ揃え、均一度Uによる残渣重量の違いを確認した。
製造例1で調製された上記組成物1を、液体成分(バインダー)である乳化剤、及び増粘多糖類水溶液とともに流動層造粒機に導入し、バインダー添加量やスプレーエア流量等を変更することにより、表3に示す5種類の造粒物I~Mが得られた。
また、製造例1と同様に、得られた造粒物I~Mについて水溶性の評価を行った。
結果を下記表3及び図3に示す。
製造例2では、平均粒子径をおおよそ揃え、均一度Uによる残渣重量の違いを確認した。
製造例1で調製された上記組成物1を、液体成分(バインダー)である乳化剤、及び増粘多糖類水溶液とともに流動層造粒機に導入し、バインダー添加量やスプレーエア流量等を変更することにより、表3に示す5種類の造粒物I~Mが得られた。
また、製造例1と同様に、得られた造粒物I~Mについて水溶性の評価を行った。
結果を下記表3及び図3に示す。
表3及び図3の結果から、平均粒子径が207~570μmの範囲内の造粒物において、均一度Uが0.58以下である造粒物I~Kは、残渣重量が1g以下となり、優れた水溶性を示すことがわかった。
〔製造例3〕
製造例3では、粒子径が500μm以上の粗大粉の含有比率(体積比)による残渣重量の違いを確認した。
製造例1で調製された上記組成物1を、液体成分(バインダー)である乳化剤、及び増粘多糖類水溶液とともに流動層造粒機に導入し、バインダー添加量やスプレーエア流量等を変更することにより、表4に示す5種類の造粒物N~Rが得られた。
また、製造例1と同様に、得られた造粒物N~Rについて水溶性の評価を行った。
結果を下記表4及び図4に示す。
製造例3では、粒子径が500μm以上の粗大粉の含有比率(体積比)による残渣重量の違いを確認した。
製造例1で調製された上記組成物1を、液体成分(バインダー)である乳化剤、及び増粘多糖類水溶液とともに流動層造粒機に導入し、バインダー添加量やスプレーエア流量等を変更することにより、表4に示す5種類の造粒物N~Rが得られた。
また、製造例1と同様に、得られた造粒物N~Rについて水溶性の評価を行った。
結果を下記表4及び図4に示す。
表4及び図4の結果から、平均粒子径が207~570μmの範囲内であり、かつ均一度Uが0.58以下である造粒物において、粗大粉の含有比率(体積比)が22%以下である造粒物N、Oは、残渣重量が1g以下となり、優れた水溶性を示すことがわかった。
〔製造例4〕
製造例4では、粒子径が150μm以下の微粉の含有比率(体積比)による残渣重量の違いを確認した。
製造例1で調製された上記組成物1を、液体成分(バインダー)である乳化剤、及び増粘多糖類水溶液とともに流動層造粒機に導入し、バインダー添加量やスプレーエア流量等を変更することにより、表5に示す4種類の造粒物S~Vが得られた。なお、表5中の造粒物Nは、製造例3で調製したもの同一である。
また、製造例1と同様に、得られた造粒物N、S~Vについて水溶性の評価を行った。
結果を下記表5及び図5に示す。
製造例4では、粒子径が150μm以下の微粉の含有比率(体積比)による残渣重量の違いを確認した。
製造例1で調製された上記組成物1を、液体成分(バインダー)である乳化剤、及び増粘多糖類水溶液とともに流動層造粒機に導入し、バインダー添加量やスプレーエア流量等を変更することにより、表5に示す4種類の造粒物S~Vが得られた。なお、表5中の造粒物Nは、製造例3で調製したもの同一である。
また、製造例1と同様に、得られた造粒物N、S~Vについて水溶性の評価を行った。
結果を下記表5及び図5に示す。
表5及び図5の結果から、平均粒子径が207~570μmの範囲内であり、かつ均一度Uが0.58以下である造粒物において、微粉の含有比率(体積比)が31%以下である造粒物N、S~Uは、残渣重量が1g以下となり、優れた水溶性を示すことがわかった。
以上の結果から、平均粒子径が207~570μmであり、均一度Uが0.58以下であり、粒子径が500μm以上の粗大粉の含有比率(体積比)が22%以下であり、かつ、粒子径が150μm以下の微粉の含有比率(体積比)が31%以下である、ホエイタンパク質を主成分として含有するタンパク質造粒物は、水に対して十分に高い溶解性を示すことがわかり、溶け残りが少なく、飲みやすいタンパク質溶液を調製可能であることが確認された。
以上、図面を参照しながら各種の実施の形態について説明したが、本発明はかかる例に限定されないことは言うまでもない。当業者であれば、特許請求の範囲に記載された範疇内において、各種の変更例又は修正例に想到し得ることは明らかであり、それらについても当然に本発明の技術的範囲に属するものと了解される。また、発明の趣旨を逸脱しない範囲において、上記実施の形態における各構成要素を任意に組み合わせてもよい。
なお、本出願は、2019年9月20日出願の日本特許出願(特願2019-172258)に基づくものであり、その内容は本出願の中に参照として援用される。
Claims (6)
- ホエイタンパク質を主成分として含有するタンパク質造粒物であって、
下記測定方法により求められる平均粒子径が207~570μmであり、均一度Uが0.58以下であり、粒子径が500μm以上の粗大粉の含有比率(体積比)が22%以下であり、かつ、粒子径が150μm以下の微粉の含有比率(体積比)が31%以下である、タンパク質造粒物。
[平均粒子径、均一度U、粗大粉及び微粉の含有比率の測定方法]
1.造粒物についてレーザー回折・散乱式測定法により、横軸を粒子径、縦軸を粒子の含有比率としてプロットした体積基準粒度分布を得る
2.平均粒子径、粗大粉及び微粉の含有比率は、前記体積基準粒度分布より求める
3.均一度Uは、下記式(1)により求める
- タンパク質含有量が50質量%以上である、請求項1に記載のタンパク質造粒物。
- 平均粒子径が260~330μmである、請求項1または2に記載のタンパク質造粒物。
- 均一度Uが0.36~0.47である、請求項1~3のいずれか1項に記載のタンパク質造粒物。
- 粒子径が500μm以上の粗大粉の含有比率(体積比)が11%以下であり、かつ、粒子径が150μm以下の微粉の含有比率(体積比)が17%以下である、請求項1~4のいずれか1項に記載のタンパク質造粒物。
- 水100mlに造粒物7gを加え撹拌した後、目開き500μmの篩で篩過し、篩上に残存する造粒物を98℃で4時間乾燥させた際の、造粒物の残渣量が1g以下である、請求項1~5のいずれか1項に記載のタンパク質造粒物。
