Abstract

La présente invention concerne un mutant de levure riche en polyamine qui est muté par rapport à la levure Kyokai n°7 pour saké, car, dans la séquence d'acides aminés de l'une quelconque parmi la leucine synthase, l'acide aconitique synthase, la S-adénosyl-L-méthionine synthase et une protéine de transport d'acide aspartique/acide glutamique ou dans les séquences d'acides aminés de plus d'une desdites protéines, un ou plusieurs acides aminés sont remplacés, supprimés, insérés ou ajoutés ou au moins deux de ces mutations sont combinées ; et, en variante, dans la séquence de bases de l'un quelconque des gènes LEU 1 codé dans le chromosome 3, ACO2 codé dans le chromosome 10, SAM1 codé dans le chromosome 12 et AGC1 codé dans le chromosome 16 ou dans les séquences de bases de plus d'un desdits gènes, une ou plusieurs bases sont remplacées, supprimées, insérées ou ajoutées ou au moins deux de ces mutations sont combinées.
