Claims (16)
- 食品生地片を成形する方法であって、ノズルから食品生地を下方に向かって連続的に押出す押出工程と、切断刃を前進させて前記食品生地をその径方向から食品生地片に切断する切断工程と、前記薄片が前記切断刃の前進方向に沿って移動しながら落下する落下工程と、前記薄片がノズルの下方に配置され前記切断刃の前進方向に進行する搬出コンベアに載置する載置工程とを含むことを特徴とする食品生地片の成形方法。
- 前記切断工程において、前記切断刃に超音波を付与して食品生地を切断することを特徴とする請求項1に記載の食品生地片の成形方法。
- 前記切断刃の超音波による振動の振幅は、60μm~120μmの間にあることを特徴とする請求項1又は2に記載の食品生地片の成形方法。
- 前記切断刃は、前記ノズルと1mm以下の間隙を設けて前記食品生地を切断することを特徴とする請求項1乃至3の何れかに記載の食品生地片の成形方法。
- 前記切断刃に粘着防止液を塗布して前記食品生地を切断することを特徴とする請求項1乃至請求項4の何れかに記載の食品生地片の成形方法。
- 前記切断刃が前記食品生地を複数回切断した後に前記切断刃に粘着防止液を塗布することを特徴とする請求項5に記載の食品生地片の成形方法。
- 食品生地片を成形する装置であって、押出装置と切断装置を備え、前記押出装置は、食品生地を下方に向かって連続的に押出すノズルを備え、前記切断装置は、前記食品生地から食品生地片に切断する切断刃と、前記切断刃を初期位置から前進させ、その後、下方に移動させて、さらに、前記初期位置に復帰させる切断刃移動機構と、前記ノズルの下方に配置され前記切断刃の前進方向に進行する搬出コンベアを備えたことを特徴とする食品生地片の成形装置。
- 前記切断刃は超音波カッタであることを特徴とする請求項7に記載の食品生地片の成形装置。
- 前記超音波カッタの振幅は、60μm~120μmの間にあることを特徴とする請求項7又は8に記載の食品生地片の成形装置。
- 前記切断刃は、前進する際に前記ノズルと1mm以下の間隙が設けられていることを特徴とする請求項7乃至9の何れかに記載の食品生地片の成形装置。
- 前記切断刃に粘着防止液を塗布する塗布装置を備えたことを特徴とする請求項7乃至10の何れかに記載の食品生地片の成形装置。
- 前記切断刃移動機構は、回転軸に連結され前記切断刃を前後動させる前後動機構と、前記回転軸に連結され前記切断刃を昇降させる昇降機構を備えたことを特徴とする請求項7乃至10の何れかに記載の食品生地片の成形装置。
- 前記回転軸の回転角速度を制御することにより前記切断刃の動作を制御可能な制御装置を備えたことを特徴とする請求項11に記載の食品生地片の成形装置。
- 前記回転軸が1回転した後に所要時間だけ回転を停止する間欠駆動を繰り返し行うことにより前記切断刃を間欠的に駆動する制御装置を備えたことを特徴とする請求項12に記載の食品生地片の成形装置。
- 前記回転軸が1回転する際に前記回転軸の回転角速度を変速駆動させて前記切断刃が前進する時間と前記切断刃が後退する時間を相違させて駆動する制御装置を備えたことを特徴とする請求項12に記載の食品生地片の成形装置。
- 前記押出装置と前記切断装置とを組み合わせるための固定機構と、前記押出装置と前記切断装置とが組み合わされたことを検出する検出装置を備え、前記検出装置が検出信号を発信するときに前記押出装置と前記切断装置を駆動可能に制御する制御装置を備えたことを特徴とする請求項7乃至14の何れかに記載の食品生地片の成形装置。
