Abstract
La présente invention concerne un procédé de stérilisation et un système de stérilisation qui sont appropriés pour une utilisation dans un procédé de distribution d'aliments frais. Ce procédé de stérilisation comprend : une première étape de stérilisation dans laquelle la surface de l'aliment frais est stérilisée par pulvérisation d'eau de stérilisation vaporisée sur l'aliment frais; et une seconde étape de stérilisation dans laquelle, lorsque l'aliment frais a subi la première étape de stérilisation et a été emballé dans des récipients et que lesdits récipients sont agencés dans un espace entouré de parois à des fins de transport ou de stockage, l'eau de stérilisation est vaporisée et libérée dans l'espace pour stériliser l'espace.
