 小麦を含む穀類、動物由来原料、および膨張剤を含み、かつ小麦タンパク質の含有量が1.5質量%以上である生地を加熱発泡させて得られ、製品水分含有量が20~35質量%であるペットフード。

Description

ペットフード
 本発明は膨張剤を用いて製造されたペットフードに関する。
 本願は、2015年3月13日に日本に出願された、特願2015-051468号に基づき優先権主張し、その内容をここに援用する。
 特許文献1には、膨張剤を用いて製造した犬用ボーロが記載されている。具体的に、特許文献1の実施例2、4には、馬鈴薯澱粉90質量部程度および小麦粉10質量部程度と、おからパウダー、砂糖、澱粉分解物、液卵、グリセリン、膨張剤1質量部または2質量部、および水を混合した生地を成形した後オーブンで焼成して、水分量が14.1質量%程度の犬用ボーロを製造した例が記載されている。
 また、おから(bean curd refuse)の保水力を利用して生地への添加水を増やし、かつ焼成時の水分蒸発を抑制することで、柔らかくてしっとりした食感のボーロを製造できることが記載されている。特許文献1には、肉類等の動物由来原料を用いることも、焼成時に発泡させることも記載されていない。

 例えばササミジャーキー(chicken breast jerky)やビーフジャーキー等、動物由来原料を含むペットフードはペットの嗜好性が高く、間食用ペットフード(おやつ)として人気が高い。
 本発明者等は、膨張剤を用いて加熱発泡させる方法で、動物由来原料を含む生地を膨らませると、これまでにない新しい食感を有するペットフードを製造できるのではないかという着想に基づいて、種々試作を重ねたところ、動物由来原料を含む生地は膨らみ難い場合があること、その場合に膨張剤を多く使用すると加熱時には膨らむものの、冷却時に収縮しやすいことを知見した。
 本発明は、動物由来原料を含む生地を発泡により膨らませた新規なペットフードを提供することを目的とする。
 本発明者等は、鋭意研究を重ねた結果、生地中の小麦タンパク質の含有量を多くすることによって、上記加熱発泡後の収縮を抑制できることを見出して本発明に至った。
 本発明の一実施態様は以下のとおりである。
 [1] 小麦を含む穀類、動物由来原料、および膨張剤を含み、かつ小麦タンパク質の含有量が1.5質量%以上である生地を加熱発泡させて得られ、製品水分含有量が20~35質量%であるペットフード。
 [2] 前記生地の水分含有量が30~60質量%である、[1]記載のペットフード。
 [3] 前記動物由来原料が、加熱処理されていない肉類を含む、[1]または[2]に記載のペットフード。
 [4] 前記生地が、さらにデキストリンを含む、[1]~[3]のいずれか一項に記載のペットフード。
 [5] 前記生地が、さらにアルギン酸エステルを含む、[1]~[4]のいずれか一項に記載のペットフード。
 [6] 前記生地中の原料合計に対して、膨張剤を1~4質量%含む、[1]~[5]のいずれか一項に記載のペットフード。
 本発明によれば、動物由来原料を含む生地を発泡により膨らませた新規なペットフードが得られる。
[製品水分含有量]
 本明細書において、水分含有量の値は以下の測定方法で得られる値である。
 被測定物を粉砕機にかけて1mmの篩を通過するように粉砕し、これを分析試料とする。分析試料2~5gを正確に量ってアルミニウム製秤量皿(あらかじめ乾燥して重さを正確に量っておいたもの)に入れ、135±2℃で2時間乾燥し、デシケーター中で放冷後、重さを正確に量って、乾燥前後の重量差から水分含有量を求める。
 本明細書において、ペットフードの製品水分含有量は、生地を加熱発泡させ、室温に冷却した後に、包装容器に収容して密閉して製造したペットフード製品を、製造日から30日以内に開封した直後に測定した値、またはこれと同等の条件で測定した値とする。
[粗タンパク質含有量]
 本明細書において、粗タンパク質含有量の値は、ケルダール法を用いて測定される値である。具体的には、ケルダール法により測定した窒素含量(単位%)に、タンパク係数として6.25を乗じて粗タンパク質含有量を算出する。
 本方法では、純粋なタンパク以外にアミノ酸やアミノ類も含む合計の含有量が、粗タンパク質含有量として測定される。
<原料>
 本実施形態のペットフードは、小麦を含む穀類、動物由来原料、および膨張剤を含む生地を加熱発泡させて得られるものである。

 膨張剤は、加熱されたときにガスを発生するものであればよく、公知の膨張剤を用いることができる。例えば重曹(炭酸水素ナトリウム)、ベーキングパウダーが好ましい。ベーキングパウダーは基剤である重曹の他に、膨張に寄与する成分であるミョウバン(焼ミョウバン、アンモニウムミョウバン等)が任意に含まれ、さらに複数種の助剤が混合された組成物である。市販のベーキングパウダーを適宜用いることができる。
 生地を加熱発泡させるとは、生地中の膨張剤がガスを発生するように加熱して、生地中で気泡を形成(発泡)させることを意味する。加熱発泡させて得られるペットフードは、例えばパン、スポンジのような多孔性の構造を有する。
 膨張剤の配合量は、生地中の原料合計(添加水を含まない、以下同様。)に対して、1~4質量%が好ましく、1.4~3.6質量%がより好ましく、1.8~3.2質量%がさらに好ましい。
 本実施形態において膨張剤の配合量とは、膨張に寄与する成分の合計量を意味する。したがって重曹を単独で使用する場合は、重曹の量が膨張剤の量であり、重曹のほかにミョウバンを含むベーキングパウダーを使用する場合は、重曹とミョウバンの合計量が膨張剤の量である。
 膨張剤の配合量が上記範囲の下限値以上であると生地中に充分な気泡が形成されやすく、上限値以下であると膨らみ過ぎず良好な成形性が得られやすい。また膨張剤の配合量が多すぎると嗜好性の低下も懸念される。
 [穀類]
 穀類は、ペットフードの原料として公知の穀類を用いることができる。例えばトウモロコシ、小麦、米、大麦、燕麦、ライ麦等が挙げられる。これらは1種でもよく、2種以上を併用してもよい。本実施形態では少なくとも小麦を用いる。
 また生地中の小麦タンパク質の含有量を調整するために、穀類の一部として、小麦とは別に、小麦タンパク質を含む加工品を用いることが好ましい。かかる加工品は、小麦よりも、澱粉の含有率が低くタンパク質の含有率が高いものが好ましい。例えば小麦グルテンが好ましい。市販の粉末小麦グルテンを用いることができる。
 生地中の原料合計に対して、小麦タンパク質の含有量は1.5質量%以上であり、2質量%以上が好ましく、2.5質量%以上がより好ましい。1.5質量%以上であると、加熱発泡により生地が膨らんだ後の収縮が良好に抑えられる。
 一方、小麦タンパク質の含有量が多すぎると粒が硬くなる傾向がある。小麦タンパク質の含有量の上限は得ようとする粒の硬さにもよるが、例えば、原料合計に対して10質量%以下が好ましく、8質量%以下がより好ましく、6質量%以下がさらに好ましく、4質量%以下が特に好ましい。
 本明細書において小麦タンパク質の含有量は、原料に配合した、小麦粉中のタンパク質含有量と、小麦タンパク質を含む加工品(好ましくは小麦グルテン)中のタンパク質含有量と、これらの配合割合から算出される値である。タンパク質含有量は原料規格の値を用いることができる。
 生地中の原料合計に対して、穀類の合計は6~44質量%が好ましく、11~26質量%がより好ましく、14~21質量%がさらに好ましい。該穀類の合計が上記範囲の下限値以上であると良好な成形性が得られやすい。上限値以下であると嗜好性への影響が少ない。
 生地の調製に用いる穀類の合計のうち、小麦タンパク質を含む加工品と小麦の合計が占める割合は、60質量%以上が好ましく、70質量%以上がより好ましく、80質量%以上がさらに好ましい。100質量%でもよい。
 [動物由来原料]
 動物由来原料としては、動物(牛、豚、鶏等の家畜および魚等)に由来する肉類(内臓も含む)、肉タンパク分解品(ダイジェスト)、鶏卵が挙げられる。これらは1種でもよく、2種以上を併用してもよい。少なくとも肉類を用いることが好ましい。
 肉類は、特に加熱処理されていない肉類を用いると、ペットの嗜好性がより向上する点で好ましい。
 生地中の原料合計に対して、動物由来原料の合計が10~50質量%が好ましく、30~50質量%がより好ましく、40~50質量%がさらに好ましい。上記範囲の下限値以上であると良好な嗜好性が得られやすく、上限値以下であると発泡による多孔性構造が得られやすい。
 生地の調製に用いられる各原料のうち、単一原料での配合量(質量基準)が最も多い原料が肉類であることが、良好な嗜好性が得られやすい点で好ましい。
 このように肉類を多く含むペットフードは、特に間食用ペットフード(おやつ)として好適である。
 [その他の原料]
 上記の原料以外にも、ペットフードの製造に用いられる公知の原料を適宜配合することができる。
 例えば豆類(丸大豆、大豆タンパク等)、油脂類(動物性油脂または植物性油脂)、野菜類、粉状の添加物(ビタミン類、ミネラル類、アミノ酸、保存料、pH調整剤、フレーバー原料、繊維、着色料、嗜好剤等)、液状の添加物(増粘安定剤、品質保持剤等)が挙げられる。
 粉状の添加物であるアルギン酸エステルを配合すると、加熱発泡後の収縮が抑制されやすい点で好ましい。
 アルギン酸エステルを配合する場合、生地中の原料合計に対して0.05質量%以上が好ましく、0.1質量%以上がより好ましく、0.3質量%以上がさらに好ましい。上記下限値以上であると収縮抑制効果が充分に得られやすい。
 一方、アルギン酸エステルの含有量が多すぎると粒が硬くなる傾向がある。得られる粒が硬すぎない点で、アルギン酸エステルの含有量は1質量%以下が好ましく、0.8質量%以下がより好ましく、0.6質量%以下がさらに好ましい。
 粉状の添加物であるデキストリンを配合すると、加熱発泡後の収縮が抑制されやすい点で好ましい。またデキストリンの代わりに、またはデキストリンに加えてセルロースを用いることもでき、デキストリンと同様の収縮抑制効果が得られる。
 デキストリンを配合する場合、生地中の原料合計に対して0.1質量%以上が好ましく、0.2質量%以上がより好ましく、0.4質量%以上がさらに好ましい。上記下限値以上であると収縮抑制効果が充分に得られやすい。
 一方、デキストリンの含有量が多すぎると粒を構成する成分の結着性が低下して、粒がもろくなる傾向がある。デキストリンの含有量は3質量%以下が好ましく、2質量%以下がより好ましく、1質量%以下がさらに好ましい。
 粉状の添加物であるトレハロースは、粒の保湿効果、澱粉の老化防止効果に寄与する。
トレハロースを配合すると、粒の柔軟性が向上し、嗜好性が高まる点で好ましい。
 トレハロースを配合する場合、生地中の原料合計に対して、0.5~5質量%が好ましく、1~3質量%がより好ましく、1.5~2質量%がさらに好ましい。
 酸性領域で効果を発揮する保存料(例えばソルビン酸、ソルビン酸カリウム)を配合するとともに、ペットフード(粒)のpHが該酸性領域となるようにpH調整剤を配合すると、良好な保存性が得られる点で好ましい。
 pH調整剤として、特に、常温(25℃)で固体である酸成分を、常温で固体である油脂でコーティングして粒状としたpH調整剤を用いると、膨張性が向上し、加熱発泡による粒の膨らみが大きくなる点で好ましい。油脂コーティングされた酸成分は、加熱前は生地中の成分と接触せず、加熱時にコーティング層が溶けて生地中の成分と接触する。このため、生地中の膨張剤が、加熱発泡前に酸成分と反応してガスが発生するのが防止され、加熱時の発泡が効率良く安定して行われるためと考えられる。
 常温で固体である酸成分としてはフマル酸、クエン酸、リンゴ酸等が挙げられる。該酸成分をコーティングする油脂としては、例えばパーム油等の硬化油が挙げられる。
 pH調整剤の配合量は、所望のpHが得られる量に設定される。酸性度が高くなりすぎると嗜好性が低下しやすい点からは、生地中の原料合計に対して3質量%以下が好ましく、1.5質量%以下がより好ましい。
<ペットフード>
 本実施形態のペットフードの形状は特に制限されず、ペットが食する形状であればいかなる形状であってもよい。例えば、各種形状の粒状(ペレット状)、棒状(スティック状)等が挙げられる。
 本実施形態のペットフードの製品水分含有量は20~35質量%である。製品水分含有量が上記範囲であると適度な柔らかさが得られ、ペットの嗜好性が向上する。特に、多孔性の構造を有するとともに、製品水分含有量が上記の範囲であると、良好な弾力感が得られ、嗜好性がより向上する。該製品水分含有量は25~30質量%がより好ましい。
 製品水分含有量は、生地の水分含有量、生地を加熱する際の加熱条件、および/または乾燥工程を行う場合は乾燥条件によって調整できる。
 本実施形態のペットフードの粗タンパク質含有量は10~35質量%が好ましく、15~30質量%がより好ましく、20~30質量%がさらに好ましい。上記範囲の下限値以上であると良好な嗜好性が得られやすい。上限値以下であると、発泡により良好な多孔性構造が形成されやすい。
<製造方法>
 本実施形態のペットフードは、全原料および水(添加水)を混合して生地を調製する工程と、該生地を成型する工程と、成型物を加熱発泡させる工程を経て製造される。
 加熱発泡後に、必要に応じて乾燥工程を経て、室温に冷却した後、包装容器に収容して密閉することによりペットフード製品が得られる。
 生地の成型は、加熱発泡前に所望の製品形状に成型してもよく、加熱発泡前に一次成型して加熱発泡させ、その後に二次成型して所望の製品形状としてもよい。
 例えば、生地を紐状に押し出し成型(一次成型)し、該紐状の成形物を加熱して発泡させた後、所定の長さに切断(二次成型)することにより、最終の製品形状である粒状またはスティック状としてもよい。
 生地の水分含有量は30~60質量%が好ましく、35~55質量%がより好ましく、40~50質量%がさらに好ましい。該生地の水分含有量が上記の範囲内であると良好な成形性が得られやすい。
 特に、押し出し成型機を用いて連続的に成型する場合は、生地の水分含有量が低すぎると生地が硬くて押出しが困難となり、水分含有量が高すぎると押し出された成形物の形が保たれないため、上記の範囲内とすることが好ましい。
 また、水分含有量が35質量%以上と多い生地は、従来のエクストルーダーを用いて多孔質の膨化粒を製造する方法では成型および膨化が困難であるが、本実施形態によれば良好な多孔質構造を有するペットフードを製造することができる。
 本明細書において生地の水分含有量は、原料中の水分量と添加水の合計量である。
 成型物を加熱発泡させる際の加熱条件は所望の発泡状態が得られるように設定することが好ましい。加熱温度が低すぎたり、加熱時間が短すぎると発泡が不十分となり、良好な多孔質構造が得られない。一方、加熱温度が高すぎたり、加熱時間が長すぎると生地が膨らみすぎて収縮が激しくなるおそれがある。
 例えば加熱温度は、雰囲気温度80~120℃が好ましく、90~110℃がより好ましく、95~100℃がさらに好ましい。加熱時間は、加熱される成型物の大きさや加熱温度にもよるが、例えば4~40分の範囲内が好ましい。
 加熱発泡後に乾燥工程を行うことにより、所望の製品水分量に調整することができる。
乾燥工程は、公知の乾燥方法を適宜用いて実施することができる。
 以下に実施例を用いて本発明をさらに詳しく説明するが、本発明はこれら実施例に限定されるものではない。
 表1に示す主な原料は以下の通りである。
 肉類:冷凍ササミ、水分75質量%。
 小麦粉:水分13質量%、小麦タンパク質10質量%。
 小麦グルテン:水分8質量%、小麦タンパク質75質量%。
 大豆タンパク:水分7質量%。
 膨張剤a:ベーキングパウダー、重曹39質量%、焼ミョウバン35質量%、助剤として第一リン酸カルシウム、L-酒石酸水素カリウム、ショ糖脂肪酸エステルを含む。
 膨張剤b:ベーキングパウダー、重曹28質量%、アンモニウムミョウバン25質量%、助剤として酸性ピロリン酸ナトリウム、高級脂肪酸、リン酸三カルシウムを含む。
 膨張剤c:ベーキングパウダー、重曹27質量%、焼ミョウバン26質量%、助剤として第一リン酸カルシウム、L-酒石酸水素カリウム、グリセリン脂肪酸エステルを含む。
 pH調整剤a:油脂コーティングされたフマル酸。
 pH調整剤b:乳酸。
 デキストリン:水分7質量%。
 トレハロース:水分1.5質量%。
(例1~9)
 例1~7は実施例、例8、9は小麦タンパク質の含有量が少ない比較例である。
 まず表1に示す配合の原料と水(添加水)を加えて混合して生地を調製した。生地の柔らかさが同程度になるように添加水の量を調整した。各例の生地の水分含有量は多少前後するが約45質量%であった。表1の配合比は添加水を含まない原料合計における比率(単位は質量部)である。
 次いで、生地をノズルから押出して長尺の角紐状(断面は一辺が約7mmの略正方形)に成型し、加熱して発泡させた。加熱条件は雰囲気温度90℃で40分間加熱した。
 続いて、加熱発泡後の収縮の有無を評価するために過酷な条件で冷却した。すなわち加熱発泡後の粒に冷風を当てて急冷した。
 冷却後、角紐状物を長さ約10mm毎に切断して粒状とした。
 さらに、雰囲気温度65℃で20~30分間加熱乾燥して、粒状のペットフードを得た。
 例5の配合は、例6の配合に対してデキストリン0.5質量部を加えたものであり、例6の配合は、例7の配合に対してアルギン酸エステル0.42質量部を加えたものであり、例7の配合は、例8の配合に対してグルテン2.5質量部を加えた例である。
(評価)
 加熱直後のペットフード(粒)の表面と、冷却後のペットフード(粒)の表面を目視で観察して、粒の膨らみの状態を比較した。
 加熱直後には、表面にしわが無く膨らんだ状態の粒が得られても、冷却後に収縮してしわが発生する場合がある。しわが多いほど収縮が大きいことを意味する。
 例1~9で得られたペットフード(加熱直後および冷却後)を比較し、しわの発生が多い順に順位をつけた。結果を表1に示す。例えば1位と2位とは、目視で収縮の程度が異なることが認められ、1位の方がしわが多く、収縮が大きいことを示す。同じ順位であるものは、表面の状態(収縮の状態、しわが無い場合は膨らみの状態)が同程度であることを意味する。4位と5位はしわは無く、粒の膨らみが大きい方を5位とした。

 表1の結果に示されるように、例1~9のいずれにおいても加熱直後には膨らんだ状態の粒が得られた。酸成分を油脂でコーティングしたpH調整剤を用いた例1、2は、かかるコーティングが施されていない酸成分を用いた例3~9よりも、粒の膨らみが大きく、加熱発泡時の膨張性に優れていた。
 例1~9のうち、グルテンを配合して生地中の小麦タンパク質の含有量を増加させた例1~7は、グルテンを配合しなかった例8、9に比べて加熱発泡後の収縮が改善された。
 例1~7で得られたペットフードはいずれも、多孔性の構造を有し、弾力感を有する粒であった。また例1~7の各例において、連続して製造された多数の粒において、収縮の程度にばらつきがなく品質の安定性も良好であった。
 一方、例8、9は粒の収縮が大きく、粒内の気泡の一部が潰れており、弾力感に劣るものであった。
 特に、例5と例6とを比べると、デキストリンを加えることによって、加熱発泡後の収縮が改善されることが認められる。
 また例6と例7とを比べると、アルギン酸エステルを加えることによって、加熱発泡後の収縮が改善されることが認められる。

Claims (6)

  1.  小麦を含む穀類、動物由来原料、および膨張剤を含み、かつ小麦タンパク質の含有量が1.5質量%以上である生地を加熱発泡させて得られ、製品水分含有量が20~35質量%であるペットフード。
  2.  前記生地の水分含有量が30~60質量%である、請求項1記載のペットフード。
  3.  前記動物由来原料が、加熱処理されていない肉類を含む、請求項1または2に記載のペットフード。
  4.  前記生地が、さらにデキストリンを含む、請求項1~3のいずれか一項に記載のペットフード。
  5.  前記生地が、さらにアルギン酸エステルを含む、請求項1~4のいずれか一項に記載のペットフード。
  6.  前記生地中の原料合計に対して、膨張剤を1~4質量%含む、請求項1~5のいずれか一項に記載のペットフード。
