Description

耐熱性に優れたチョコレート類利用食品の製造方法
本発明は、耐熱性に優れたチョコレート類利用食品の製造方法に関する。
チョコレートやチョコレート類は油脂の連続相の中に他の原材料であるココア固形分や粉乳類、糖類などの微粒子が分散されたものであるため、チョコレートやチョコレート類の固化や融解などの挙動は油脂の物理的性質に依存している。チョコレートに使用される油脂の代表がココアバターであり、その融点が33℃前後であるため、体温付近で急激に融解し優れた口溶けを示す一方で、35℃を超えると油脂が殆ど融解して耐熱性が失われ、結果として表面のべとつき、互いの付着、保型性の喪失のような問題が生じる。
上記のような問題を防止するために、ココアバターに代わる油脂としてココアバター改良油脂、ココアバター代用油脂などの融点34~42℃の各種油脂が使用されているが、かかる油脂を用いてもチョコレート類の耐熱性は38℃程度が限界であるとともに、体温以上の融点を有する油脂を使用したチョコレート類の口溶けは大幅に低下し嗜好性の低いものになるという問題があった。
上記より、夏場の日本市場や熱帯地域の国々などの40℃を超える耐熱性が要求される市場では、チョコレート類の使用に大きな制限があり、かかる市場では耐熱性と口溶け性を両立した嗜好性の高い耐熱性チョコレートへの高いニーズが存在する。
上記ニーズに対応するべく、耐熱性に優れたチョコレート類に関し、様々な提案がされている。特許文献1は、砂糖の一部または全部を結晶ブドウ糖、果糖、結晶ソルビトール、粉末水飴、粉末水添水飴等の代替糖類の一種または二種以上と置換して調整したチョコレート類生地を成形後に80℃以上に数秒から数十分間の加熱固化させる方法であり、油脂の融点以上の40~90℃でもべたつきのない油性菓子に関するものである。
特許文献2は、油脂及び糖類を主成分とし水分3%以下の油脂性菓子生地表面を吸湿させ、これを焼成する耐熱性の優れた菓子の製造法であり、形が崩れたり、表面がべたついたり、互いに付着したりせず、しかも油脂性菓子生地本来の食感を損なわない、耐熱性の優れた菓子に関するものである。
特許文献3は、含水食品素材上にチョコレート類を載置又は、デポジットして焼成することにより、耐熱性を向上させた複合菓子の製造法である。本方法は、特許文献2の油脂性菓子生地表面を吸湿させる方法に代えて、含水食品素材からチョコレート類生地及び/又はチョコレート類への水分移行を利用して、焼成後のチョコレート類に耐熱性を付与する方法である。

特許文献1の方法は、耐熱性は確かに付与できる方法であるが、硬くてボソボソとした食感になり本来のチョコレートの滑らかな食感と口当たりが得られないという問題に加え、通常のチョコレート類製造工程にない加熱固化工程を追加する必要があった。また、砂糖の一部または全部を代替糖類に置き換えてチョコレート類生地を調製する際に、ロールなどのリファイナー粉砕が容易でなく微粒化が困難で、ざらつく食感の原因になったり、チョコレート類生地のコンチング工程において凝集によるダマ(粗大粒子)の発生や生地の粘度上昇の問題があり、実質的に実用的な方法ではなかった。
特許文献2の方法は、チョコレート類表面を吸湿させるために、チョコレート類を成形後にチョコレート類表面に水や糖類を含有する水をスプレーや塗布するという煩雑な工程が必要であった。また、吸湿後に焼成工程が必須であるという問題と吸湿や焼成の度合いによっては、チョコレート類表面が硬い食感となりチョコレート類本来のソフトな食感が得られないという問題があった。
特許文献3の方法は、含水食品素材からチョコレート類生地及び/又はチョコレート類への水分移行を利用をするため、チョコレート類への吸湿の手間は省けるがやはり含水食品素材へチョコレート類を載置してから焼成する工程が必須であるという問題と焼成によりチョコレート本来の風味がやや低下するという問題があった。
上記のように、従来の耐熱性チョコレート類の製造方法では、耐熱性付与のために加熱処理工程や焼成工程が必須であり、通常のチョコレート類利用の複合菓子、例えばコーチングチョコレート類と焼菓子の複合菓子の製造において、かかる加熱処理工程や焼成工程を追加する必要があった。また、加熱処理工程や焼成工程を経ることによって、チョコレート類表面が硬くなる、チョコレート類が硬くてボソボソとした食感になる、チョコレート風味が低下するというような問題があった。
上記より、耐熱性付与のために加熱処理工程や焼成工程を必要とせず、表面からチョコレート内部までチョコレート本来の滑らかな食感、口溶け及び風味を示すチョコレート類は未だ得られておらず、耐熱性と優れた食感、口溶け及び風味を両立する耐熱性チョコレート類の製造方法が求められていた。
本発明の目的は、耐熱性付与のために加熱処理工程や焼成工程を必要とせず、チョコレート類中の油脂の融点を超える温度域、例えば35~90℃、の耐熱性があり、チョコレート表面からチョコレート内部までチョコレート本来の滑らかな食感、口溶け及び風味を示すチョコレート類及びその製造方法を提供することにある。また、チョコレート類生地調製中の微粒化が困難となる問題、ダマの発生及び生地の粘度上昇の問題がなく、しかもコーチング適性のある特定の粘度範囲のチョコレート類生地調製法と該生地を利用した耐熱性チョコレート類利用食品の製造方法を提供することにある。
本発明者らは、上記の課題に対して鋭意研究を重ねた結果、特定量の粉乳類、グルコース及びレシチンを含有するチョコレート類生地を水分活性0.4~0.95の食品ないし食品原料に被覆または載置後に冷却固化することにより、該チョコレート類生地を加熱処理または焼成することなく、油脂の融点を超える温度域、例えば35~90℃の耐熱性があり、チョコレート表面からチョコレート内部までチョコレート本来のソフトで滑らかな食感、口溶け及び風味に優れるチョコレート類の製造が可能であることを見出し、本発明を完成させた。また、本発明のチョコレート類生地であれば、チョコレート類生地調製中の微粒化困難、ダマの発生及び生地の粘度上昇の問題がないこと、生地粘度としてコーチング適性のある特定の粘度に調製することもできる。
即ち、本発明は
(1)粉乳類を3~35重量%含有するチョコレート類を水分活性0.4~0.95の食品ないし食品原料に接触させることを特徴とするチョコレート類利用食品の製造方法。
(2)粉乳類が全脂粉乳、脱脂粉乳、クリームパウダー、ホエーパウダー、バターミルクパウダー、加糖粉乳及び調製粉乳から選択される1種または2種以上である(1)記載のチョコレート類利用食品の製造方法。
(3)粉乳類中に含まれる乳糖の含有量がチョコレート類に対し2~14重量%である(1)または(2)記載のチョコレート類利用食品の製造方法。
(4)チョコレート類がさらにグルコース5~30重量%を含有する(1)~(3)のいずれか1記載のチョコレート類利用食品の製造方法。
(5)チョコレート類がさらにグルコース8~20重量%を含有する(1)~(3)のいずれか1記載のチョコレート類利用食品の製造方法。
(6)チョコレート類のレシチン含有量が0.4重量%以下である(1)~(5)のいずれか1記載のチョコレート類利用食品の製造方法。

本発明によれば、チョコレート類に耐熱性を付与するための加熱処理や焼成することなく、チョコレート類中の油脂の融点を超える温度域、例えば35~90℃、の耐熱性があり、チョコレート表面からチョコレート内部までチョコレート本来のソフトで滑らかな食感、口溶け及び風味に優れるチョコレート類の製造が可能となる。また、チョコレート類生地調製中の微粒化が困難となる問題、ダマの発生及び生地の粘度上昇の問題がなく、生地粘度としてコーチング適性のある特定の粘度に調製することができる。
以下、本発明を詳細に説明する。
本発明におけるチョコレート類とは、油脂が連続相を為すもので、チョコレートやチョコレート様食品が挙げられる。チョコレートとは、「チョコレート類の表示に関する公正競争規約」(昭和46年3月29日、公正取引委員会告示第16号)による「チョコレート生地」及び「準チョコレート生地」を含むものであって、カカオ豆から調製したカカオマス、ココアバター、ココアパウダー及び糖類を原料とし、必要により他の食用油脂、乳製品、香料等を加え、通常のチョコレート製造の工程を経たものをいう。
上記チョコレート様食品とは、物性改良や製造コストの節約等の目的にて、ココアバターの一部または全部に代えて他の油脂(CBEと称される1,3位飽和、2位不飽和のトリグリセリド型油脂に富むものと、CBSと称されるラウリン系タイプ、CBRと称される高エライジン酸タイプ及び低トランス非ラウリンタイプのハードバター、さらには菓子類、パン類、冷菓類のコーチング用には用途に合わせて高融点~低融点の各種油脂や液状油の混合油)を使用したものが挙げられる。
本発明のチョコレート類原料としては、カカオマス、ココアパウダー、糖類、粉乳、油脂類、乳化剤、香料、香味剤、着色料等、通常のチョコレート類に使用される任意の成分等を利用することができる。
本発明のチョコレート類は、粉乳類または粉乳類及びグルコースを必須成分として含有し、その他の糖類として必要に応じて砂糖などを配合したものである。本発明における粉乳類とは、乳等省令に規定されている粉乳類を意味し、生乳、牛乳、特別牛乳を原料として得られる全脂粉乳、脱脂粉乳、クリームパウダー、ホエーパウダー、バターミルクパウダー、加糖粉乳及び調製粉乳が該当する。本発明のチョコレート類は、かかる粉乳類から選択される1種または2種以上を3~35重量%含有するのが好ましい。粉乳類含有量が3重量%未満であると、チョコレート類を水分活性0.4~0.95の食品ないし食品原料との接触後にチョコレート中の油脂の融点を超える温度域での耐熱性が得られず、チョコレート表面がべとついたり、手指に付着するという問題があり好ましくない。また、35重量%を超えると、チョコレート類生地調製中の微粒化が困難になるとともに、調製後の生地粘度が上昇して後の成型作業やコーチング作業が困難になるため好ましくない。
本発明のチョコレート類は、粉乳類中に含まれる乳糖の含有量がチョコレート類に対し2~14重量%であるのが好ましく、さらに好ましくは3~10重量%、最も好ましくは4~8重量%である。該乳糖含有量が2重量%未満であると、チョコレート類を水分活性0.4~0.95の食品ないし食品原料との接触後にチョコレート中の油脂の融点を超える温度域での耐熱性が得られず、チョコレート表面がべとついたり、手指に付着するという問題があり好ましくない。また、14重量%を超えると、チョコレート類生地調製中の微粒化が困難になるとともに、調製後の生地粘度が上昇して後の成型作業やコーチング作業が困難になることがある。
本発明の粉乳類と併用するグルコースとしては、無水グルコースとグルコースー1水和物のいずれも使用することができる。無水グルコースを使用する場合は、好ましくは5~30重量%、さらに好ましくは8~20重量%、最も好ましくは8~15重量%である。また、グルコースー1水和物を使用する場合は、好ましくは5~30重量%、さらに好ましくは8~15重量%、最も好ましくは8~10重量%である。いずれの場合も、下限未満ではチョコレート類を接触させる食品ないし食品原料の水分活性が0.55未満の場合に充分な耐熱性が得られず、上限を超えるとチョコレート類生地調製中の微粒化が困難になるとともに、調製後の生地粘度上昇が顕著になり好ましくない。なお、無水グルコースとグルコースー1水和物を耐熱性と許容範囲の粘度が両立するように、グルコース5~30重量%の範囲で適宜併用することも可能である。
本発明のチョコレート類は上記粉乳類または該粉乳類及びグルコースを必須成分として含有するとともに、レシチン含有量を制限するのが好ましい。レシチンの含有量は0.4重量%以下が好ましく、さらに好ましくは0.1~0.3重量%、最も好ましくは0.1~0.2重量%である。レシチンの含有量が0.1重量%以下の場合、チョコレート類生地の粘度が高くなりすぎて、チョコレート類のモールディング(型流し)やコーチング作業が困難となるため、粘度調整剤としてポリグリセリン縮合リシノレイン酸エステル(以下PGPRと略す。)を添加するのが好ましい。逆に、レシチンの含有量が上限を超えると、水分活性0.4~0.95の食品または食品原料と接触後のチョコレート類の耐熱性が低下し、目的とするチョコレート類中の油脂の融点を超える温度域での耐熱性が得られにくくなるため好ましくない。本発明はチョコレート類生地粘度調製のために、レシチンに加えてPGPRを0.1~0.5重量%含有するのが好ましく、さらに好ましくは0.1~0.3重量%、最も好ましくは0.1~0.2重量%である。レシチンに加えてPGPRを含有することにより、チョコレート類生地粘度を低減できる利点がある。すなわち、レシチン単独で目的とする40℃以上の耐熱性を得る場合は、チョコレート類生地粘度を比較的高く設定する必要があり、モールディングやコーチング作業が困難になる傾向にあるが、PGPR併用により粘度を低く設定することができる。PGPR含有量が下限未満ではチョコレート生地粘度の低減効果が不十分であり、逆に上限を超えてもそれ以上の粘度低減効果が得られない。
本発明のチョコレート類生地の粘度は、生地調製後の用途にもよるが、該生地中の油脂を完全融解後に45℃に温調した粘度測定値において2,000~20,000cPであるのが好ましい。生地粘度が20,000cPを超えると、チョコレート類のモールディング(型流し)やコーチング作業が困難となるため、好ましくない。チョコレート類用途が焼菓子類やパン類コーチングの場合、該生地中の油脂を完全融解後に45℃に温調した粘度測定値において、2,000~10,000cPであるのが好ましく、さらに好ましくは3,000~8,000cPである。生地粘度が2,000cP未満であるとチョコレート類のコーチング厚みが薄くなりすぎて下地が透けたり、チョコレート風味が薄くなる問題があり、逆に10,000cPを超えるとコーチング厚みが厚くなりすぎる問題とコーチング前保持時間中に更なる粘度上昇の恐れがあり、好ましくない。
本発明におけるチョコレート類に配合される油脂類としては、ココアバターや各種植物油脂を利用することができるが、常温で適度な硬さがあり口溶けに優れた融点30~40℃の所謂ハードバターが好適であり、エライジン酸を構成脂肪酸とするトランス酸型ハードバター、非対称型トリグリセリドであるSSO(1,2-ジステアロ、3-オレイン)やPSO(1-パルミト、2-ステアロ、3-オレイン)、PPO(1,2-ジパルミト、3―オレイン)を主要トリグリセリドとして、一部対称トリグリセリドや少量のトランス脂肪酸含有トリグリセリド、飽和トリグリセリドを混合して調製される低トランス非ラウリン酸型ハードバター、ラウリン酸型ハードバター等のノーテンパリング型油脂、ココアバター、ココアバター代用脂等のテンパリング型油脂が利用できる。その他油脂の硬化、分別、エステル交換等を施した加工油脂が利用できる。原料として例えば、菜種油、大豆油、ヒマワリ種子油、綿実油、落花生油、米糠油、コーン油、サフラワー油、オリーブ油、カポック油、胡麻油、月見草油、パーム油、シア脂、サル脂、ココアバター、ヤシ油、パーム核油等の植物性油脂、並びに、それらの油脂の硬化、分別、エステル交換等を施した加工油脂が例示できる。
本発明のチョコレート類利用食品は、チョコレート類中の油脂の融点を超える温度域で耐熱性を保持するものであるが、例えば40℃~90の温度域で流通、保管する場合においてチョコレート類の品温が30℃以下に低下した時にチョコレート類表面にブルームによる白変が発生することがあるため、かかる場合は上記のハードバターの中でも、エライジン酸を構成脂肪酸とするトランス酸型ハードバター、低トランス非ラウリン酸型ハードバター、ラウリン酸型ハードバター等の所謂ノーテンパリング型ハードバターのいずれかを配合するのが好ましい。
本発明におけるチョコレート類に含まれてもよい更なる成分は、カカオマス、ココアパウダー、大豆粉、豆乳粉末、濃縮大豆蛋白、分離大豆蛋白、大豆ホエー、コーヒー、バニラ、キャラメル、フルーツ、ナッツ、及び、フルーツパウダー及びドライフルーツ、ナッツ、バニラ、ハーブ(例えばミント)などの香味剤や、バニラ香料、ハーブ香料、キャラメル香料などの香料や、ナッツ、シリアル、膨化物、フルーツ、クリーム、又はそれらの混合物や、その他の食用成分である。着色料、香味剤、香料は、前述の成分に限られず、当業者に周知の任意のものが使用される。
レシチン及びPGPR以外の乳化剤は、チョコレート類の生地粘度と加熱処理後の耐熱性を両立する範囲内で適宜利用することができる。例えばショ糖脂肪酸エステル類、ソルビタン脂肪酸エステル類、ポリグリセリン脂肪酸エステル類、分別レシチン及び燐酸アンモニウム等を利用することができる。利用目的は、保管、輸送中に油脂の融点以上の高温に晒された場合の対策として、ブルームの抑制やグレーニングの発生防止などである。
本発明のチョコレート類生地は、例えば下記のような常法通りの製造方法で調製することができる。ココアパウダー、糖類、粉乳などの固形粉末原料に対し、加熱融解したカカオマスや油脂類とレシチン、PGPRなどの乳化剤を添加し、ホバートミキサーなどを用いて混合して、油脂分20~30重量%のぺースト状の生地を調製する。得られた該生地をロールなどのリファイナーで平均粒子径が15~30μmの滑らかな粒子になるよう微粒化する。次いで、40~70℃に保温しながらコンチング(攪拌、混合)を行い滑らかなペースト状としてから、さらに油脂類、乳化剤、香料等を添加、混合して所定のチョコレート類生地を得る。なお、コンチング温度が80℃を超えるとチョコレート類生地の粘度が著しく上昇するため、本発明のチョコレート類生地は40~70℃でのコンチングが好ましい。
上記のチョコレート類生地の調製において、リファイナーなどによる微粒化は平均粒子径が15~30μmであるのが好ましく、さらに好ましくは18~25μm、最も好ましくは18~22μmであり、30μmを超えるとややざらつきを感じる食感となるため好ましくない。また、コンチング工程において生地が粘度上昇を起こすと、ダマが発生したり、ミキサー壁面に付着しやすくなり滑らかなペースト状とするために長時間を要したり、最終的に調製されたチョコレート類生地の粘度が高すぎたりして、後の成形工程に支障を来たすような問題が生じる。従って、コンチング工程で生地の粘度上昇が許容範囲となるようなチョコレート類生地の配合設定が重要である。かかる配合設定に適合するのが、本発明のチョコレート類の生地配合である。
本発明のチョコレート類生地の水分は2重量%以下であるのが好ましく、さらに好ましくは1重量%以下である。水分が上限を超えると、上記のような生地調製中の粘度上昇やダマの発生の問題が起こりやすくなるため好ましくない。また、本発明のチョコレート類生地の油脂分は25~45重量%であるのが好ましく、さらに好ましくは30~40重量%、最も好ましくは32~38重量%である。油脂分が25重量%未満ではチョコレートの滑らかな食感が損なわれて、ごりごりした食感になったり、保管環境によっては糖の吸湿によりべたつく物性になる傾向があるため好ましくない。また、油脂分が45重量%を超えると、チョコレート表面へのオイルオフが顕著になるため好ましくない。
本発明のチョコレート類利用食品とは、上記チョコレート類を水分活性0.4~0.95の食品ないし食品原料に接触させた食品である。かかる食品ないし食品原料と接触させることにより、接触後のチョコレート類はチョコレート類中の油脂の融点以上の温度域、例えば35~90℃で、チョコレート類表面がべとついたり、チョコレート類同士が付着したり、型崩れしないような耐熱性を有するとともに、チョコレート類表面からチョコレート類内部までチョコレート類本来のソフトで滑らかな食感、口溶け及び風味に優れるチョコレート類とすることができる。
本発明のチョコレート類利用食品は、上記の方法によって調製したチョコレート類生地をチョコレート類中の油脂の融点以上の温度、例えば40~60℃、で30分以上保持して融解状としてから、焼き菓子やパンなどの食品ないし食品原料に被覆または載置などの方法によって接触させた後に、最終的に冷却してチョコレート類中の油脂を固化させることによりチョコトレート類が被覆または載置された焼き菓子やパンのようなチョコレート類利用食品を得ることができる。本発明のチョコレート類利用食品のチョコレート類が優れた耐熱性を示す理由は定かではないが、水分活性0.4~0.95の食品ないし食品原料から接触させたチョコレート類への水分移行により、チョコレート類中に存在する粉乳類中の乳糖、乳蛋白、及びグルコースが水分を吸水することによって、ガラス状構造体が形成される結果、チョコレート類中の油脂が融解する温度域である35~90℃でも耐熱性を有するものになると考えられる。なお、食品ないし食品原料との接触後の冷却は、0~15℃の冷蔵庫放置冷却やクーリングトンネルなどの冷風冷却、30℃以下の室温放置冷却などを利用することができる。
本発明に用いる食品ないし食品原料の水分活性は、0.4~0.95であるのが好ましく、さらに好ましくは0.55~0.95、最も望ましくは0.7~0.95である。水分活性が0.4未満であると、チョコレート類との接触後のチョコレート類の耐熱性が不十分となるため、好ましくない。水分活性が上限を超えると、水分移行の度合いが大きくなりすぎてチョコレート類との接触後のチョコレート類がガナッシュ状に流動化してやはり耐熱性が失われるため好ましくない。なお、チョコレート類が粉乳類中の乳糖をチョコレート類に対し2重量以上含有しグルコースを含有しない場合は、接触させる食品ないし食品原料の水分活性は0.7~0.95であるのが好ましい。0.7未満では耐熱性が不十分となることがある。また、チョコレート類が粉乳類中の乳糖をチョコレート類に対し2重量%以上とグルコース5~8重量%未満を含有する場合は、接触させる食品ないし食品原料の水分活性は0.55~0.95であるのが好ましい。0.55未満では耐熱性が不十分となることがある。さらに、チョコレート類が粉乳中の乳糖をチョコレート類に対し2重量%以上とグルコース8重量%以上含有する場合は、接触させる食品ないし食品原料の水分活性は0.4~0.95であるのが好ましい。0.4未満では耐熱性が不十分となることがある。
本発明に用いる食品ないし食品原料としては、水分活性が0.4~0.95であれば特に制限はないが、葡萄やパパイヤなどの乾燥フルーツ、煎餅、丸ボーロ、キャラメル、マシュマロ、ゼリービーンズなどの水分7~21重量%の干菓子、マロングラッセ、カップケーキ、バウムクーヘン、パウンドケーキ、バターケーキ、スポンジケーキ、ワッフルなどの水分14~44重量%の半生菓子、プリン、ゼリーなどの水分65~75重量%のデザート菓子、ドーナッツ、パイ、デニッシュ、スナックパン、コッペパン、ロールパンなどの水分20~45重量%のパン類が例示できる。
以下に実施例を記載する。各例中の%及び部は重量基準を意味する。
なお、各例において調製したチョコレート類生地の平均粒子径、粘度、ダマの発生は下記の方法で測定または確認した。
(平均粒子径)
マイクロメーター(株式会社ミツトヨ社製、商品名「デジマチック標準外側マイクロメーター MDC-25PJ」)の測定面にチョコレート類(油分が50%未満に満たない場合は、液油により希釈し油分50~60%に調製)を付着させ、測定面同士を付着させてチョコレート類が測定面よりはみ出す状態で粒度を測定する。粒度は5回測定し、最大と最小の値を除く3回の測定値の平均値を平均粒子径とした。
(粘度)
チョコレート類の品温を45℃に調整し、BM型粘度計(東京計器株式会社製)で10,000cP以下の場合は3号ローター、12rpmにて測定し、10,000cPを超える場合は4号ローター、12rpmにて測定した。
(ダマの確認)
コンチング終了後のチョコレート類生地1.5Kgを100メッシュ篩を通過させ、メッシュ上の粒状物の有無を目視で確認する。粒状物がないものを合格、あるものを不合格とした。
また、調製したチョコレート類利用食品のチョコレート類の耐熱性評価、食感と風味評価は下記の基準で評価した。
(耐熱性評価)
チョコレート類生地を45℃、30分間以上保持して融解状としたものを食品ないし食品原料の表面に被覆し、20℃室温で一晩放置しチョコレート類を冷却固化させた。冷却固化したチョコレート類利用食品をガゼット袋に密封し20℃、3日間安定化後、40℃恒温槽に7日間放置してから、チョコレート表面を手で触って手指への付着の有無、オイルオフの有無、変形の有無を確認した。また、ガゼット袋へのチョコレート類の付着の有無を確認した。
(耐熱性:手指への付着)
    ◎:非常に良好(手指への付着、オイルオフ、変形いずれもない)
    ○:良好   (手指へわずかにオイルが付着するが、変形はない)
    △:やや不良 (手指への付着、オイルオフがあるが、変形はない)

試作例1
ココアパウダー(油分11%)7部、砂糖41.2部、全脂粉乳(乳糖含有量39%)11.4部、グルコース-1水和物(商品名「ハイメッシュ」、サンエイ糖化株式会社製)8部を計量、混合し、あらかじめ融解したカカオマス(油分55%)3.4部、ラウリン酸型ハードバター(商品名「パルケナH」、上昇融点35℃、不二製油株式会社製)21部をミキサー(愛工舎株式会社製AM30)を用いて攪拌しながら添加した。得られたドウ状の生地をロールリファイナー(BUHLER株式会社製「Three-roll mill SDY-300」)により微粉砕し、ロールフレークを得た。得られたロールフレークをパルケナH 4部とレシチン0.2部及びPGPR(商品名:CRS75、阪本薬品工業株式会社製)0.15部と共にコンチングミキサー(株式会社品川工業所製)にて、55℃に保温しながら中速攪拌した。フレークがややソフトなドウ状となってから、パルケナH 4部を攪拌しながら添加し、チョコレート類生地1を得た。チョコレート類生地1の平均粒子径は20μm、粘度は5,500cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地1の乳糖含有量は4.5%であった。
実施例1
試作例1のチョコレート類生地を45℃、30分保持して融解状としてから、ドライパパイヤ(水分活性0.46)をチョコレート類生地1に浸漬し、浸漬後のドライパパイヤをピンセットで取り出し、約2秒間振って余分なチョコレート類生地を振り落としてチョコレート類生地が被覆されたドライパパイヤを得た。得られたドライパパイヤを20℃、1晩放置後、ガゼット袋に充填し、さらに20℃、3日間保管した。その後、ガゼット袋のままで、40℃恒温槽に7日間放置後、ガゼット袋を開封して被覆チョコレート類の耐熱性(手指、ガゼット袋内面への付着)を評価したところ、手指への付着は全くなくガゼット袋への付着もほとんど見られなかった。
実施例2
実施例1のドライパパイヤに代えて、キャラメル(水分活性0.56)を用いて、チョコレート類被覆キャラメルを実施例1同様に調製した。さらに、実施例1同様に被覆チョコレート類の耐熱性を評価したところ、手指及びガゼット袋への付着は全くなく、良好な耐熱性を示した。
実施例3
実施例1のドライパパイヤに代えて、市販のカステラ(水分活性0.79)を用いて、カステラの片面がチョコレート類で被覆されたチョコレート類被覆カステラを実施例1同様に調製した。さらに、実施例1同様に被覆チョコレート類の耐熱性を評価したところ、手指及びガゼット袋への付着は全くなく、良好な耐熱性を示した。
実施例4
実施例1のドライパパイヤに代えて、市販のスナックパン(水分活性0.83)を用いて、スナックパンの上面がチョコレート類で被覆されたチョコレート類被覆スナックパンを実施例1同様に調製した。さらに、実施例1同様に被覆チョコレート類の耐熱性を評価したところ、手指及びガゼット袋への付着は全くなく、良好な耐熱性を示した。
実施例5
実施例1のドライパパイヤに代えて、市販のロールパン(水分活性0.91)を用いて、ロールパンの上面がチョコレート類で被覆されたチョコレート類被覆ロールパンを実施例1同様に調製した。さらに、実施例1同様に被覆チョコレート類の耐熱性を評価したところ、手指への付着はなかったが、ガゼット袋への付着がやや見られた。
比較例1
実施例1のドライパパイヤに代えて、ドライピーナッツ(水分活性0.34)を用いて、チョコレート類被覆ピーナッツを実施例1同様に調製した。さらに、実施例1同様に被覆チョコレート類の耐熱性を評価したところ、手指及びガゼット袋への付着が激しく、全く耐熱性がないものであった。
比較例2
実施例1のドライパパイヤに代えて、市販の食パン(水分活性0.96)を用いて、食パンの上面片面がチョコレート類で被覆されたチョコレート類被覆食パンを実施例1同様に調製した。さらに、実施例1同様に被覆チョコレート類の耐熱性を評価したところ、手指及びガゼット袋への付着があり、やや耐熱性に乏しいものであった。
表1に、実施例1~5及び比較例1~2のチョコレート類が被覆されたチョコレート利用食品の評価結果を示す。

表1に示すように、食品の水分活性が0.46~0.91の実施例1~5のチョコレート利用食品の被覆チョコレート類はチョコレート類中の油脂の融点35℃を超える40℃で優れた耐熱性を示した。水分活性が0.34と低いドライピーナッツの被覆チョコレート類では、耐熱性が全く得られなかった。また、水分活性が0.96と高い食パンの被覆チョコレート類では、食パンからの水分移行度合いが高いためか被覆チョコレート類がガナッシュ状に流動化しており、やはり耐熱性に乏しいものであった。なお、実施例1~5のチョコレート類は、表面~内部までソフトで滑らかな良好な食感であった。
試作例2

試作例3
試作例2の全脂粉乳5部を8部に、砂糖55.6部を52.6部に変更して、試作例2同様にチョコレート類生地を調製し、チョコレート類生地3を得た。チョコレート類生地3の平均粒子径は19μm、粘度は5,900cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地3の乳糖含有量は3.1%であった。
試作例4
試作例2の全脂粉乳5部を11.4部に、砂糖55.6部を49.2部に変更して、試作例2同様にチョコレート類生地を調製し、チョコレート類生地4を得た。チョコレート類生地4の平均粒子径は19μm、粘度は4,550cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地4の乳糖含有量は4.5%であった。
試作例5
試作例2の全脂粉乳5部を15部に、砂糖55.6部を45.6部に変更して、試作例2同様にチョコレート類生地を調製し、チョコレート類生地5を得た。チョコレート類生地5の平均粒子径は19μm、粘度は4,400cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地5の乳糖含有量は5.9%であった。
試作例6
試作例2の全脂粉乳5部を30部に、砂糖55.6部を30.6部に変更して、試作例2同様にチョコレート類生地を調製し、チョコレート類生地6を得た。チョコレート類生地6の平均粒子径は19μm、粘度は4,000cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地6の乳糖含有量は11.7%であった。
試作例7
試作例4の全脂粉乳11.4部をグルコース-1水和物「ハイメッシュ」11.4部に変更して、試作例4同様にチョコレート類生地を調製し、チョコレート類生地7を得た。チョコレート類生地7の平均粒子径は21μm、粘度は5,230cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地7は乳糖を含有していない。
試作例8
試作例2の全脂粉乳5部を2.5部に、砂糖55.6部を58.1部に変更して、試作例2同様にチョコレート類生地を調製し、チョコレート類生地8を得た。チョコレート類生地8の平均粒子径は20μm、粘度は6,160cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地8の乳糖含有量は1%であった。
実施例6
試作例2のチョコレート類生地2を45℃、30分保持して融解状としてから、市販のカステラ(水分活性0.79)の上面をチョコレート類生地1に浸漬し、浸漬後のカステラを取り出し、約2秒間振って余分なチョコレート類生地を振り落としてチョコレート類生地が被覆されたカステラを得た。得られたカステラを20℃、1晩放置後、ガゼット袋に充填し、さらに20℃、3日間保管した。その後、ガゼット袋のままで、40℃恒温槽に7日間放置後、ガゼット袋を開封して被覆チョコレート類の耐熱性(手指、ガゼット袋内面への付着)を評価したところ、手指への付着は全くなかったが、ガゼット袋への付着がわずかに認められた。

実施例6のチョコレート類生地2を試作例3で調製したチョコレート類生地3に変更して、実施例6同様にチョコレート類生地が被覆されたカステラを得た。得られたカステラ被覆チョコレート類を実施例6同様に耐熱性を評価したところ、手指及びガゼット袋への付着は全くなく、良好な耐熱性を示した。
実施例8
実施例6のチョコレート類生地2を試作例4で調製したチョコレート類生地4に変更して、実施例6同様にチョコレート類生地が被覆されたカステラを得た。得られたカステラ被覆チョコレート類を実施例6同様に耐熱性を評価したところ、手指及びガゼット袋への付着は全くなく、良好な耐熱性を示した。
実施例9
実施例6のチョコレート類生地2を試作例5で調製したチョコレート類生地5に変更して、実施例6同様にチョコレート類生地が被覆されたカステラを得た。得られたカステラ被覆チョコレート類を実施例6同様に耐熱性を評価したところ、手指及びガゼット袋への付着は全くなく、良好な耐熱性を示した。
実施例10
実施例6のチョコレート類生地2を試作例6で調製したチョコレート類生地6に変更して、実施例6同様にチョコレート類生地が被覆されたカステラを得た。得られたカステラ被覆チョコレート類を実施例6同様に耐熱性を評価したところ、手指及びガゼット袋への付着は全くなく、良好な耐熱性を示した。
比較例3
実施例6のチョコレート類生地2を試作例7で調製したチョコレート類生地7に変更して、実施例6同様にチョコレート類生地が被覆されたカステラを得た。得られたカステラ被覆チョコレート類を実施例6同様に耐熱性を評価したところ、手指及びガゼット袋への付着があり、耐熱性に乏しいものであった。
比較例4
実施例6のチョコレート類生地2を試作例8で調製したチョコレート類生地8に変更して、実施例6同様にチョコレート類生地が被覆されたカステラを得た。得られたカステラ被覆チョコレート類を実施例6同様に耐熱性を評価したところ、手指への付着はほとんどなかったが、ガゼット袋への付着が認められ、やや耐熱性に乏しいものであった。

表2のように、全脂粉乳含有量が5~30%、全脂粉乳中の乳糖含有量が2~11.7%の実施例6~10のカステラに被覆されたチョコレート類は優れた耐熱性を示した。粉乳及び粉乳中の乳糖を含有せずグルコースー1水和物11.4%を含有する比較例3や全脂粉乳含有量が2.5%、全脂粉乳中の乳糖含有量が1%と低い比較例4は、耐熱性に乏しいものであった。なお、実施例6~10のチョコレート類は、表面~内部までソフトで滑らかな良好な食感であった。
試作例9
試作例4の全脂粉乳11.4部を、チーズホエーパウダー(商品名:DEMINAL50、Friesland Campina DOMO社製、乳糖含有量79%)11.4部に変更して、試作例2同様にチョコレート類生地を調製し、チョコレート類生地9を得た。チョコレート類生地9の平均粒子径は21μm、粘度は4,700cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地9の乳糖含有量は9%であった。
試作例10
試作例4の全脂粉乳11.4部を、脱脂粉乳(乳糖含有量53%)11.4部に変更して、試作例2同様にチョコレート類生地を調製し、チョコレート類生地10を得た。チョコレート類生地10の平均粒子径は21μm、粘度は4,600cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地10の乳糖含有量は6%であった。
試作例11
試作例4の全脂粉乳11.4部を、脱乳糖低脂肪粉乳(商品名:Promilk 85、Ingredia社製、乳糖含有量5.5%)11.4部に変更して、試作例2同様にチョコレート類生地を調製し、チョコレート類生地11を得た。チョコレート類生地11の平均粒子径は201μm、粘度は4,800cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地11の乳糖含有量は0.6%であった。
実施例11
実施例6のチョコレート類生地2を試作例9で調製したチョコレート類生地9に変更して、実施例6同様にチョコレート類生地が被覆されたカステラを得た。得られたカステラ被覆チョコレート類を実施例6同様に耐熱性を評価したところ、手指及びガゼット袋への付着は全くなく、良好な耐熱性を示した。
実施例12
実施例6のチョコレート類生地2を試作例10で調製したチョコレート類生地10に変更して、実施例6同様にチョコレート類生地が被覆されたカステラを得た。得られたカステラ被覆チョコレート類を実施例6同様に耐熱性を評価したところ、手指及びガゼット袋への付着は全くなく、良好な耐熱性を示した。
比較例5
実施例6のチョコレート類生地2を試作例11で調製したチョコレート類生地11に変更して、実施例6同様にチョコレート類生地が被覆されたカステラを得た。得られたカステラ被覆チョコレート類を実施例6同様に耐熱性を評価したところ、手指及びガゼット袋への付着があり、耐熱性に乏しいものであった。

表3のように、チーズホエーパウダーまたは脱脂粉乳をそれぞれ11.4%含有し、チーズホエーパウダーまたは脱脂粉乳中の乳糖含有量がそれぞれ9%、5%である実施例11、12のカステラに被覆されたチョコレート類は優れた耐熱性を示した。脱乳糖低脂肪粉乳含有の比較例5はやや耐熱性に乏しいものであった。なお、実施例11及び12のチョコレート類は、表面~内部までソフトで滑らかな良好な食感であった。
試作例12
試作例1(全脂粉乳11.4%含有)のグルコースー1水和物「ハイメッシュ」8部を0部に、砂糖41.2部を49.2部に変更して、試作例1同様にチョコレート類生地12を得た。チョコレート類生地12の平均粒子径は19μm、粘度は4,550cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地12の乳糖含有量は4.5%であった。

試作例1のグルコースー1水和物「ハイメッシュ」8部を2.5部に、砂糖41.2部を46.7部に変更して、試作例1同様にチョコレート類生地13を得た。チョコレート類生地13の平均粒子径は19μm、粘度は4,830cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地13の乳糖含有量は4.5%であった。
試作例14
試作例1のグルコースー1水和物「ハイメッシュ」8部を5部に、砂糖41.2部を44.2部に変更して、試作例1同様にチョコレート類生地14を得た。チョコレート類生地14の平均粒子径は20μm、粘度は5,020cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地14の乳糖含有量は4.5%であった。
試作例15
試作例1のグルコースー1水和物「ハイメッシュ」8部を12部に、砂糖41.2部を37.2部に変更して、試作例1同様にチョコレート類生地15を得た。チョコレート類生地15の平均粒子径は20μm、粘度は5,670cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地15の乳糖含有量は4.5%であった。
試作例16
試作例1のグルコースー1水和物「ハイメッシュ」8部を15部に、砂糖41.2部を34.2部に変更して、試作例1同様にチョコレート類生地16を得た。チョコレート類生地16の平均粒子径は22μm、粘度は5,980cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地16の乳糖含有量は4.5%であった。
実施例13
試作例12のチョコレート類生地12を45℃、30分保持して融解状としてから、キャラメル(水分活性0.56)をチョコレート類生地12に浸漬し、浸漬後のキャラメルをピンセットで取り出し、約2秒間振って余分なチョコレート類生地を振り落としてチョコレート類生地が被覆されたキャラメルを得た。得られたキャラメルを20℃、1晩放置後、ガゼット袋に充填し、さらに20℃、3日間保管した。その後、ガゼット袋のままで、40℃恒温槽に7日間放置後、ガゼット袋を開封して被覆チョコレート類の耐熱性(手指、ガゼット袋内面への付着)を評価したところ、手指への付着とガゼット袋への付着が認められ、やや耐熱性に乏しいものであった。
実施例14
実施例13のチョコレート類生地12を試作例13のチョコレート類生地13に代えて、実施例13同様にチョコレート類生地が被覆されたキャラメルを得た。得られたチョコレート類被覆キャラメルの耐熱性を実施例13同様に評価したところ、手指への付着とガゼット袋への付着が認められ、やや耐熱性に乏しいものであった。
実施例15
実施例13のチョコレート類生地12を試作例14のチョコレート類生地14に代えて、実施例13同様にチョコレート類生地が被覆されたキャラメルを得た。得られたチョコレート類被覆キャラメルの耐熱性を実施例13同様に評価したところ、手指への付着はなかったが、ガゼット袋への付着がわずかに認められた。
実施例16
実施例13のチョコレート類生地12を試作例15のチョコレート類生地15に代えて、実施例13同様にチョコレート類生地が被覆されたキャラメルを得た。得られたチョコレート類被覆キャラメルの耐熱性を実施例13同様に評価したところ、手指への付着及びガゼット袋への付着とも全くなく、優れた耐熱性を示した。
実施例17
実施例13のチョコレート類生地12を試作例16のチョコレート類生地16に代えて、実施例13同様にチョコレート類生地が被覆されたキャラメルを得た。得られたチョコレート類被覆キャラメルの耐熱性を実施例13同様に評価したところ、手指への付着及びガゼット袋への付着とも全くなく、優れた耐熱性を示した。
実施例18
実施例13のキャラメル(水分活性0.56)をカステラ(水分活性0.79)に代えて、試作例12のチョコレート類生地12が被覆されたカステラを得た。得られたチョコレート類被覆カステラの耐熱性を実施例13同様に評価したところ、手指への付着及びガゼット袋への付着とも全くなく、優れた耐熱性を示した。
実施例19
実施例18のチョコレート類生地12を試作例13のチョコレート類生地13に代えて、実施例18同様にチョコレート類生地13が被覆されたカステラを得た。得られたチョコレート類被覆カステラの耐熱性を実施例18同様に評価したところ、手指への付着及びガゼット袋への付着とも全くなく、優れた耐熱性を示した。
表4に、実施例13~19のチョコレート類が被覆されたチョコレート類被覆キャラメル及びカステラの評価結果を示す。

表4のように、食品水分活性が0.56の場合は全脂粉乳11.4%(全脂粉乳中の乳糖4.5%)に加えて、5%以上好ましくは8%以上のグルコースを含有しないと十分な耐熱性が得られない結果であった。食品水分活性が0.79の場合は、実施例18のように全脂粉乳11.4%(全脂粉乳中の乳糖4.5%)だけ含有でも良好な耐熱性が得られた。なお、実施例13~19のチョコレート類は、いずれも表面~内部までソフトで滑らかな良好な食感であった。
試作例17
試作例12のレシチン0.2%を0.3%に代えて、試作例12同様にチョコレート類生地17を得た。チョコレート類生地17の平均粒子径は22μm、粘度は7,200cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地17の乳糖含有量は4.5%であった。
試作例18
試作例12のレシチン0.2%を0.4%に代えて、試作例12同様にチョコレート類生地18を得た。チョコレート類生地18の平均粒子径は21μm、粘度は8,800cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地18の乳糖含有量は4.5%であった。
試作例19
試作例12のレシチン0.2%を0.5%に代えて、試作例12同様にチョコレート類生地19を得た。チョコレート類生地19の平均粒子径は21μm、粘度は12,000cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地19の乳糖含有量は4.5%であった。
実施例20
実施例6の試作例2のチョコレート類生地2に代えて、試作例17のチョコレート類生地17を用いてチョコレート類生地17で被覆されたカステラを得た。得られたチョコレート類被覆カステラの耐熱性を実施例6同様に評価したところ、手指への付着及びガゼット袋への付着とも全くなく、優れた耐熱性を示した。
実施例21
実施例6の試作例2のチョコレート類生地2に代えて、試作例18のチョコレート類生地18を用いてチョコレート類生地18で被覆されたカステラを得た。得られたチョコレート類被覆カステラの耐熱性を実施例6同様に評価したところ、手指への付着はなかったが、ガゼット袋への付着がわずかに認められた。
実施例22
実施例6の試作例2のチョコレート類生地2に代えて、試作例19のチョコレート類生地19を用いてチョコレート類生地19で被覆されたカステラを得た。得られたチョコレート類被覆カステラの耐熱性を実施例6同様に評価したところ、手指への付着はなかったが、ガゼット袋への付着が認められ、やや耐熱性に乏しいものであった。
表5に、実施例8及び実施例20~22のチョコレート類が被覆されたチョコレート類被覆カステラの評価結果を示す。

表5のように、レシチン含有量は低い方が優れた耐熱性を示す傾向があり、0.4%未満が好ましく、0.3%以下がさらに好ましく、最も好ましくは0.2%以下という結果であった。なお、実施例8及び実施例20~22のチョコレート類は、いずれも表面~内部までソフトで滑らかな良好な食感であった。
実施例23
試作例6(全脂粉乳30%、全脂粉乳中の乳糖11.7%含有)のチョコレート類生地6及び市販の食パン(水分活性0.93)を用いて、食パンの上面片面がチョコレート類で被覆されたチョコレート類被覆食パンを実施例1同様に調製した。調製した食パン被覆チョコレート類の耐熱性を実施例1同様に評価したところ、手指への付着がなく、ガゼット袋へわずかに付着があるという良好な耐熱性を示した。
試作例20
試作例1のラウリン酸型ハードバター(商品名「パルケナH」)を、ノンラウリン系トランス酸型ハードバター(商品名「メラノH-1000」、不二製油株式会社製)に代えて、試作例1同様にチョコレート類生地20を調製した。チョコレート類生地20の平均粒子径は20μm、粘度は5,600cP、水分は0.8%であり、ダマの発生はなく合格であった。本チョコレート類生地20の乳糖含有量は4.5%であった。
実施例24
市販のカステラ(水分活性0.79)を用いて、カステラの片面がチョコレート類20で被覆されたチョコレート類被覆カステラを実施例1同様に調製した。さらに、実施例1同様に被覆チョコレート類の耐熱性を評価したところ、手指及びガゼット袋への付着は全くなく、良好な耐熱性を示した。また、被覆チョコレート類は、表面~内部までソフトで滑らかな良好な食感であった。
実施例25
砂糖44.3部、全脂粉乳22.2部、ココアバター18.7部、カカオマス14.5部、レシチン0.2部、PGPR0.15部を用いて、試作例1同様にチョコレート生地21を調製した。調製したチョコレート生地21の品温を35℃に調整した状態で撹拌しながら、市販のチョコレートテンパリングシード剤(商品名「チョコシードB」、不二製油株式会社製)をチョコレート生地21 100部に対し3部添加、分散した。35℃で1時間撹拌後、市販のカステラ(水分活性0.79)の片面をチョコレート生地に浸漬し、約2秒間振って余分なチョコレート生地を振り落としてチョコレート生地21が被覆されたカステラを得た。得られたカステラを20℃、1晩放置後、ガゼット袋に充填し、さらに20℃、3日間保管した。その後、ガゼット袋のままで、37℃恒温槽に3日間放置後、ガゼット袋を開封して被覆チョコレートの耐熱性(手指、ガゼット袋内面への付着)を評価したところ、手指への付着は全くなくガゼット袋への付着もほとんど見られなかった。また、被覆チョコレートは、表面~内部までソフトで滑らかな良好な食感であった。なお、耐熱性確認後に20℃まで冷却してから被覆チョコレートの外観を観察したところ、ブルームによる白変もなく良好な外観を保持していた。
本発明により、チョコレート類に耐熱性を付与するための加熱処理や焼成することなく、油脂の融点を超える温度域、例えば35~90℃、の耐熱性があり、チョコレート表面からチョコレート内部までチョコレート本来のソフトで滑らかな食感、口溶け及び風味に優れるチョコレート類を利用した食品を製造することができる。

Claims (10)

  1. 粉乳類を3~35重量%含有するチョコレート類を水分活性0.4~0.95の食品ないし食品原料に接触させることを特徴とするチョコレート類利用食品の製造方法。
  2. 粉乳類が全脂粉乳、脱脂粉乳、クリームパウダー、ホエーパウダー、バターミルクパウダー、加糖粉乳及び調製粉乳から選択される1種または2種以上である請求項1記載のチョコレート類利用食品の製造方法。
  3. 粉乳類中に含まれる乳糖の含有量がチョコレート類に対し2~14重量%である請求項1または請求項2記載のチョコレート類利用食品の製造方法。
  4. チョコレート類がさらにグルコース5~30重量%を含有する請求項1~請求項3のいずれか1項記載のチョコレート類利用食品の製造方法。
  5. チョコレート類がさらにグルコース8~20重量%を含有する請求項1~請求項3のいずれか1項記載のチョコレート類利用食品の製造方法。
  6. チョコレート類のレシチン含有量が0.4重量%以下である請求項1~請求項5のいずれか1項記載のチョコレート類利用食品の製造方法。
  7. チョコレート類のレシチン含有量が0.1~0.3重量%である請求項1~請求項5のいずれか1項記載のチョコレート類利用食品の製造方法。
  8. チョコレート類生地の45℃における粘度が2,000~20,000cPである請求項6または請求項7記載のチョコレート類利用食品の製造方法。
  9. 食品ないし食品原料の水分活性が0.55~0.95である請求項1~請求項8のいずれか1項記載のチョコレート類利用食品の製造方法。
  10. 食品ないし食品原料の水分活性が0.7~0.95である請求項1~請求項8のいずれか1項記載のチョコレート類利用食品の製造方法。
