Abstract
Description
含浸チョコレート菓子に関する先行技術としては、特許文献1に記載の含浸食品およびその製造方法、特許文献2に記載のチョコレート含有食品の製造方法、および、特許文献3に記載の食品の含浸処理方法等が提案されている。
そこでこの発明は、チョコレートを含浸させた菓子において、菓子にチョコレートが十分に浸透しており、菓子本来の「軽さ(サクサク食感)」と「味わい(チョコレート感)」の両立を実現した構成を提供することを課題とするものである。
請求項2記載の発明は、前記中空の食品は、中心部を切断した切断面において、切断面の外縁で囲まれた切断面全体の面積に対する空洞部分の面積の比率である中空率が7~30%であることを特徴とする、請求項1記載の含浸チョコレート菓子である。
図1は、この発明の一実施形態に係る含浸チョコレート菓子1の説明図であり、(A)は外観図であり、(B)は(A)のB-Bに沿う中心部の切断面図である。(C)は(B)のチョコレートを含浸させる前の状態の図である。
含浸チョコレート菓子(中空菓子)1は、空洞部分4を有するように膨化成形されたパフ2にチョコレート3を染み込ませたものである。含浸チョコレート菓子1を、図1(A)に示すように、その中心部B-Bで切断した時の切断面は、図1(B)に示すものである。また、図1(C)は、図1(B)のチョコレートを含浸させる前の状態を示すものである。
また、含浸チョコレート菓子(中空菓子)1全体の重量をW1、パフ2の重量をW2、染み込ませたチョコレート3の重量をW3とすると、菓子全体の重量W1(=W2+W3)に占めるチョコレート3の重量W3の割合、すなわちW0=(W3/W1)は、70~80%とされている。
評価項目は、(1)サクサク感、(2)チョコレート感、(3)しっとり感、の3項目とし、各項目について、-3(弱い)~+3(強い)の7段階尺度で評価を行った。
また、官能評価を対比するために、市販のチョコレート菓子4種類について、同じ官能評価を行った。市販品A、市販品Bは、M社のチョコレート菓子であり、市販品Cおよび市販品Dは、当社のチョコレート菓子である。
図2は、図1(C)に示す含浸チョコレート菓子(中空菓子)1における中空の食品における空洞部分4の割合、すなわち中空率S0を変えたときのチョコレート含浸後の官能評価の結果(評価結果)を示す図である。
図3は、この発明の一実施形態に係る含浸チョコレート菓子(中空菓子)1のパフ2を、中空シリアルとして製造する場合の製造工程を示すフロー図である。パフ2をシリアルとして製造する工程は、簡単に説明すると次の通りである。
チョコレート含浸製造工程では、まずパフ2を充填した籠が処理容器内に収容され、密封された後、処理容器内が減圧状態にされる。その圧力差でタンクよりチョコレート3を処理容器内に引き込む(ステップP1)。チョコレート3が十分に充填された後、所定の待ち時間を経て(ステップP2)容器内の圧力を常圧に戻す(ステップP3)。次いで容器内に気体を送り込むことで容器内を加圧状態とし、所定の時間を経てチョコレート3を浸透させる(ステップP4)。これにより、ステップP2の減圧状態からステップP3の常圧に戻るときの圧力差によりパフ2に染み込んだチョコレート3に加えて、更なる量のチョコレート3がパフ2の内部、すなわち空洞部分4にまで染み込むこととなる。容器内の圧力を開放した後(ステップP5)、パフ2に染み込んでいない余剰なチョコレートが回収される(ステップP6)。さらに、パフ2が入った籠が処理容器内で回転することにより、パフ2の表面に付着した余剰なチョコレートが遠心分離される(ステップP7)。その後、減圧状態で遠心分離を行うことで(ステップP8)、ステップP7の常圧遠心分離で取りきれなかったチョコレートを除去できる。そして、遠心分離により生じた余剰なチョコレートは回収され(ステップP9)、チョコレート含浸工程が終了する。次いで、処理容器内のチョコレート3が含浸されたパフ2は、ベルトコンベアにてクーリングトンネルに送り込まれ冷却されることで、チョコレート3が冷却固化される(ステップP10)。その後、不良品の選別工程(ステップP11)、金属混入を防ぐための金属検査(ステップP12)を経て、商品仕様に沿った包材にて包装される(ステップP13)。
この実施例のパフは、オーツフラワー、コーンフラワー、コーングリッツ、フラワー、グラニュー糖および重曹を混合し、加水しながら混練したもので作られる。
また、表6は、一実施例のチョコレートの原材料の配合比率を示している。
上述した中空パフおよびチョコレートの原材料の配合比率は一例に過ぎず、他の原材料を用いてこの発明に係る含浸チョコレート菓子(中空菓子)を製造できることは言うまでもない。

Claims (3)
- 中空の食品に対してチョコレートを染み込ませ、食品全体の重量に占めるチョコレートの重量割合が70~80%であることを特徴とする含浸チョコレート菓子。
- 前記中空の食品は、中心部を切断した切断面において、切断面の外縁で囲まれた切断面全体の面積に対する空洞部分の面積の比率である中空率が7~30%であることを特徴とする、請求項1記載の含浸チョコレート菓子。
- 前記中空の食品は、中空パフを含むことを特徴とする、請求項1または2記載の含浸チョコレート菓子。
