別の好ましい実施態様は、工程(4)で分別された固体部を、SSSを35重量%以上含む油脂として用いることを特徴とする上記記載のトリ飽和脂肪酸グリセリド含有油脂組成物の製造方法に関する。

SUS:1,3-ジ飽和脂肪酸-2-モノ不飽和脂肪酸グリセリド
SSSを35重量%以上含む油脂を得る方法に、特に限定はないが、分別工程を経て低融点油脂を製造する際に、副産物として得られた油脂を用いれば良い。例えば、(SSUとSUSの合計含量)/SSS含量の重量比率が1~4、SSU含量/SUS含量の重量比率が1以上であり、SSSを8~35重量%、SSUとSUSを合計で25~45重量%含む油脂混合物を原料とし、該原料を常法に従ってエステル交換した後、エステル交換後の油脂中のSSSの含有量(X、重量%)、晶析時の固体脂含量(Y、%)の差(X-Y)が2~13になるまで溶剤を用いずに晶析し、液状部を分別した副産物として得られる。このようにして得られる油脂におけるSSS含量は、該油脂全体の35重量%以上であれば特に限定されないが、好ましくは35~90重量%、更に好ましくは35~80重量%である。
前記で得られるSSSを35重量%以上含む油脂と、ヨウ素価35以上の油脂とを混合することにより、構成脂肪酸全体中、飽和脂肪酸(S)を45~75重量%含有し、不飽和脂肪酸(U)を25~55重量%含有する油脂を調整して得る。このときS及びUがこの範囲に無いと、分別後に、目的とする油脂組成物が得られない場合がある。なお、SSSを35重量%以上含有する油脂及びヨウ素価35以上の油脂について、それぞれの脂肪酸組成を測定することにより、容易にS及びUを上記範囲に調整することができる。即ち、前記測定結果に基づいて、SSSを35重量%以上含有する油脂とヨウ素価35以上の油脂との混合比率を調整することで、S及びUを上記範囲とすることができる。
なお、ヨウ素価35以上の油脂については特に種類は問わないが、パーム油、パーム分別油、菜種油、大豆油、ひまわり油、コーン油、豚脂、牛脂などが挙げられるが、価格面からパーム油、又はパーム分別油を用いることがより好ましい。
前記で得られた油脂混合物は、常法に従ってエステル交換すればよい。しかし、SSSを繰り返しエステル交換に供する場合、着色や風味劣化の蓄積を避けるにはエステル交換をリパーゼで行うことが好ましい。即ち、エステル交換、分別を繰り返したSSSを、SSSを35重量%以上含有する油脂として用いる場合には、ナトリウムメチラートなどの塩基触媒を用いると着色成分や風味劣化成分等が蓄積することがあり好ましくない。リパーゼについてはトリグリセリドのエステル交換に用いられるリパーゼなら特に種類は選ばないが、パーム油を原料に用いる場合には、対称型のSUSトリグリセリドを減少させるため、1、3位だけでなく2位に対してもエステル交換活性を持つものが好ましい。具体的にはThermomyces属由来、Alcaligenes属由来のリパーゼなどが挙げられる。
エステル交換後の油脂中に含まれるSSS含量をX(重量%)とし、晶析時の固体脂含量をY(%)とすると、X-Yの値が2~13、好ましくは2~10の範囲になるように晶析する。そのように晶析したものを分別すれば、容易に本発明のトリ飽和脂肪酸グリセリド含有油脂組成物を得ることができる。(X-Y)値が2より小さいと、分別される液状部のSSS含量が少ないために、可塑性油脂原料として用いた場合に温度耐性が低くなったり、また、SSUも一部結晶化する場合があるために、分別効率が悪くなり、トリ飽和脂肪酸グリセリド含有油脂組成物の収率が低下する場合がある。また(X-Y)値が13より大きいと、可塑性油脂原料として用いた場合に口溶けが悪くなる場合がある。(X-Y)値を2~13にするには、エステル交換に供した油脂混合物の種類にもよるが、概ね晶析温度を晶析に用いる原料油脂の融点よりも2℃から14℃低い温度に設定すればよい。ここで、固体脂含量の測定は、概ね5~48時間程度晶析する間に適宜行い、(X-Y)の値が2~13の間にある時点であればいつでも分別すればよい。晶析により、液状部と固体部とを含む油脂が得られる。
前記で晶析した油脂を、常法に従って分別し、液状部を分取することで本発明の油脂組成物を得ることができる。本発明における分別では、安全性の問題やコストの観点から溶剤を使用しない乾式分別が好ましい。分別時の温度条件は、晶析温度±3℃程度であれば容易に本発明のトリ飽和脂肪酸グリセリド含有油脂組成物を得ることができる。また通常、乾式分別では分別精度が劣るが、本発明の製造方法に従えば、SSSを35重量%以上含む油脂を原料として用いても、容易且つ効率よく所望のトリ飽和脂肪酸グリセリド含有油脂組成物を得ることができる。
実施例・比較例における各トリグリセリド含量は、「AOCS Official Method Ce 5c-93」に準拠して、高速液体クロマトグラフィー(HPLC)を用いてODSカラムにより分析した。
SSU含量/SUS含量の重量比率の分析は、HPLCを用いて硝酸銀カラムにより分析した。分析条件は、「Journal of the American Oil Chemists Society,68,289-293,1991」に記載の方法に基づいて実施した。
「日本油化学会制定、基準油脂分析試験法2.3.4.1-1996」に従い分析を行った。
FID恒温ガスクロマトグラフ法により行った。FID恒温ガスクロマトグラフ法とは、「日本油化学会制定、基準油脂分析試験法2.4.2.1-1996」に記載された方法である。
晶析中の油脂をピペットで晶析温度と同じ温度で温調した試験管に採取し、BRUKER製minispecシリーズ「mq20 NMR Analyzer(解析ソフト:BRUKER the MINISPEC)」により測定した。
実施例・比較例で得られた油脂組成物の色調は、「日本油化学会制定、基準油脂分析試験法2.2.1.1-1996」に記載された方法でロビボンド値を測定し、その測定値を評価値とした。評価値が30以下であれば、その油脂組成物は変色が少なく、良好な色調を有しているが、評価値が小さいほど、変色の度合いが少ない。
実施例・比較例で得られた油脂組成物の酸化安定性は、CDM試験により評価した。該試験は、「日本油化学会制定、基準油脂分析試験法2.5.1.2-1996」に記載された方法で実施した。CDM試験による誘導時間が10時間以上であれば、その油脂は良好な酸化安定性を有しているが、誘導時間が長いほど、酸化安定性が高い。
実施例・比較例で得られた油脂組成物の風味の評価は、官能評価により実施した。その際の評価基準は以下の通りであった。
◎:異味、異臭がない上に油脂のおいしさを感じる。
○:異味、異臭を感じない。
△:異味、異臭をわずかに感じる。
×:異味、異臭を感じる。
<SSSを35重量%以上含む油脂の製造工程>
極度硬化菜種油50重量部と菜種油50重量部を混合してから、500Paの減圧下90℃に加熱し、0.2重量部のナトリウムメチラートを加えてエステル交換し、該エステル交換油を水洗した後、500Paの減圧下、90℃で2重量部の白土を加えて脱色した。この油脂を70℃に加熱して完全に溶解し、49℃で攪拌しながら24時間晶析した。晶析後の油脂を3.0MPaでフィルタープレスして、SSS(パルミチン酸含量8重量%)を78重量%含む固体部を得た。
ここで得た固体部15重量部に対して、ヨウ素価53の油脂(極度硬化菜種油:菜種油=44:56の混合油脂)85重量部を混合し、油脂混合物(構成脂肪酸全体中、Sの含量:52重量%、Uの含量:48重量%)を得た。
前記油脂混合物をリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換して油脂A1を得た。油脂A1中のSSS含量(X)は、13.4重量%であった。
油脂A1を70℃に加熱して完全に溶解し、49℃で攪拌しながら24時間晶析し、その時点での固体脂含量(Y)は8.6%であった。従って、その時点での(X-Y)値は4.8であった(表1)。
晶析後の油脂を3.0MPaでフィルタープレスして、SSSを77重量%含む固体部及び液状部を得た。得られた液状部を200Paの減圧下240℃で脱臭し、油脂組成物1を得た。得られた油脂組成物1の収率及びトリグリセリド組成については、表1にまとめた。
ここで得た固体部15重量部に対してヨウ素価53の油脂(極度硬化菜種油:菜種油=44:56の混合油脂)85重量部を混合し、油脂混合物(構成脂肪酸全体中、Sの含量:52重量%、Uの含量:48重量%)を得た。該油脂混合物をリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換して油脂A1’を得た。油脂A1’中のSSS含量(X)は、13.1重量%であった。
<SSSを35重量%以上含む油脂の製造工程>
パーム油75重量部に極度硬化菜種油15重量部及び菜種油10重量部を混合してからリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換した油脂を、70℃に加熱して完全に溶解し、34℃で攪拌しながら24時間晶析した。晶析後の油脂を3.0MPaでフィルタープレスして、SSSを38重量%含む固体部(パルミチン酸46重量%含有)及び液状部を得た。
ここで得た固体部40重量部に対して、ヨウ素価67の油脂(重量比で極度硬化菜種油:パームステアリン:菜種油=13:40:47の混合油脂)60重量部を混合し、油脂混合物(Sの含量51重量%、Uの含量48重量%)を得た。
前記油脂混合物をリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換して油脂A2を得た。油脂A2中のSSS含量(X)は、12.8重量%であった。
油脂A2を70℃に加熱して完全に溶解し、34℃で攪拌しながら24時間晶析し、その時点での固体脂含量(Y)は9.8%であった。従って、その時点での(X-Y)値は3.0であった(表1)。
晶析後の油脂を3.0MPaでフィルタープレスして液状部を得た。得られた液状部を200Paの減圧下240℃で脱臭し、油脂組成物2を得た。得られた油脂組成物2の収率及びトリグリセリド組成については、表1にまとめた。
<SSSを35重量%以上含む油脂の製造工程>
パームステアリン(ヨウ素価34)80重量部に極度硬化菜種油10重量部と菜種油10重量部を混合してからリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換した油脂を、70℃に加熱して完全に溶解し、42℃で攪拌しながら24時間晶析した。晶析後の油脂を3.0MPaでフィルタープレスして、SSSを42重量%含む固体部(パルミチン酸55重量%含有)及び液状部を得た。
ここで得た固体部40重量部に対して、ヨウ素価46の油脂(重量比で菜種油:パームステアリン:極度硬化菜種油=21:70:9の混合油脂)60重量部を混合し、油脂混合物(Sの含量63重量%、Uの含量36重量%)を得た。
前記油脂混合物をリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換して油脂A3を得た。油脂A3中のSSS含量(X)は、23.6重量%であった。
油脂A3を70℃に加熱して完全に溶解し、42℃で攪拌しながら24時間晶析し、その時点での固体脂含量(Y)は14.9%であった。従って、その時点での(X-Y)値は8.7%であった(表1)。
晶析後の油脂を3.0MPaでフィルタープレスして、液状部を得た。得られた液状部を200Paの減圧下240℃で脱臭し、油脂組成物3を得た。得られた油脂組成物3の収率及びトリグリセリド組成については、表1にまとめた。
<SSSを35重量%以上含む油脂の製造工程>
パームステアリン(ヨウ素価34)を溶解してからリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換した油脂を、70℃に加熱して完全に溶解し、46℃で攪拌しながら24時間晶析した。晶析後の油脂を3.0MPaでフィルタープレスして、SSSを78重量%含む固体部(パルミチン酸80重量%含有)及び液状部を得た。
ここで得た固体部25重量部に対して、ヨウ素価41の油脂(重量比で
パーム油:パームステアリン=43:57の混合油脂)75重量部を混合し、油脂混合物(Sの含量65重量%、Uの含量33重量%)を得た。
前記油脂混合物をリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換して油脂A4を得た。油脂A4中のSSS含量(X)は、24.3重量%であった。
油脂A4を70℃に加熱して完全に溶解し、46℃で攪拌しながら24時間晶析し、その時点での固体脂含量(Y)は14.2%であった。従って、その時点での(X-Y)値は10.1であった(表1)。
晶析後の油脂を3.0MPaでフィルタープレスして、SSSを79重量%含む固体部及び液状部を得た。得られた液状部を200Paの減圧下240℃で脱臭し、油脂組成物4を得た。得られた油脂組成物4の収率及びトリグリセリド組成については、表1にまとめた。
ここで得た固体部25重量部に対して、ヨウ素価41の油脂(重量比でパーム油:パームステアリン=43:57の混合油脂)75重量部を混合し、油脂混合物(Sの含量65重量%、Uの含量33重量%)を得た。該油脂混合物をリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換して油脂A4’を得た。油脂A4’中のSSS含量(X)は、24.7重量%であった。
<SSSを35重量%以上含む油脂の製造工程>
パーム油(ヨウ素価51)を溶解してからリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換した油脂を、70℃に加熱して完全に溶解し、37℃で攪拌しながら24時間晶析した。晶析後の油脂を3.0MPaでフィルタープレスして、SSSを75重量%含む固体部(パルミチン酸75重量%含有)及び液状部を得た。
ここで得た固体部14重量部に対して、ヨウ素価56の油脂(重量比でパーム油:パームダブルオレイン=40:60の混合油脂)86重量部を混合し、油脂混合物(Sの含量50重量%、Uの含量48重量%)を得た。
前記油脂混合物をリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換して油脂A5を得た。油脂A5中のSSS含量(X)は、11.0重量%であった。
油脂A5を70℃に加熱して完全に溶解し、37℃で攪拌しながら24時間晶析し、その時点での固体脂含量(Y)は8.5%であった。従って、その時点での(X-Y)値は2.5であった(表1)。
晶析後の油脂を3.0MPaでフィルタープレスして、SSSを76重量%含む固体部及び液状部を得た。得られた液状部を200Paの減圧下240℃で脱臭し、油脂組成物5を得た。得られた油脂組成物5の収率及びトリグリセリド組成については、表1にまとめた。
ここで得た固体部14重量部に対して、ヨウ素価56の油脂(重量比でパーム油:パームダブルオレイン=40:60の混合油脂)75重量部を混合し、油脂混合物(Sの含量50重量%、Uの含量48重量%)を得た。該油脂混合物をリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換して油脂A5’を得た。油脂A5’中のSSS含量(X)は、10.5重量%であった。
<SSSを35重量%以上含む油脂の製造工程>
極度硬化菜種油50重量部と菜種油50重量部を500Paの減圧下90℃に加熱し、0.2重量部のナトリウムメチラートを加えてエステル交換した油脂を水洗した後、500Paの減圧下、90℃で2重量部の白土を加えて脱色した。この油脂を70℃に加熱して完全に溶解し、49℃で攪拌しながら24時間晶析した。晶析後の油脂を3.0MPaでフィルタープレスして、SSSを78重量%含む固体部及び液状部を得た。
ここで得た固体部15重量部に対して、ヨウ素価53の油脂(極度硬化菜種油:菜種油=44:56の混合油脂)85重量部を混合し、油脂混合物(Sの含量52重量%、Uの含量48重量%)を得た。
前記油脂混合物を上記と同様の条件でナトリウムメチラートによりエステル交換し、脱色して油脂A6を得た。油脂A6中のSSS含量(X)は、13.1重量%であった。
<晶析工程及び分別工程>
油脂A6を70℃に加熱して完全に溶解し、49℃で攪拌しながら24時間晶析した。
晶析後の油脂を3.0MPaでフィルタープレスして液状部を得た。得られた液状部を200Paの減圧下240℃で脱臭し、油脂組成物6を得た。得られた油脂組成物6のトリグリセリド組成については、表2にまとめた。
<SSSを35重量%以上含む油脂の製造工程>
パーム油(ヨウ素価51)を溶解してからナトリウムメチラートによりエステル交換した油脂を、70℃に加熱して完全に溶解し、37℃で攪拌しながら24時間晶析した。晶析後の油脂を3.0MPaでフィルタープレスして、SSSを75重量%含む固体部(パルミチン酸75重量%含有)及び液状部を得た。
ここで得た固体部14重量部に対して、ヨウ素価56の油脂(重量比でパーム油:パームダブルオレイン=40:60の混合油脂)86重量部を混合し、油脂混合物(Sの含量50重量%、Uの含量48重量%)を得た。
<ナトリウムメチラートによるエステル交換工程>
前記油脂混合物をナトリウムメチラートによりエステル交換して油脂A7を得た。油脂A7中のSSS含量(X)は、11.0重量%であった。
油脂A7を70℃に加熱して完全に溶解し、37℃で攪拌しながら24時間晶析し、その時点での固体脂含量(Y)は8.5%であった。従って、その時点での(X-Y)値は2.5であった(表2)。晶析後の油脂を3.0MPaでフィルタープレスして、SSSを76重量%含む固体部及び液状部を得た。得られた液状部を200Paの減圧下240℃で脱臭し、油脂組成物7を得た。得られた油脂組成物7の収率及びトリグリセリド組成については、表2にまとめた。
ここで得た固体部14重量部に対して、ヨウ素価56の油脂(重量比でパーム油:パームダブルオレイン=40:60の混合油脂)75重量部を混合し、油脂混合物(Sの含量50重量%、Uの含量48重量%)を得た。該油脂混合物をナトリウムメチラートによりエステル交換して油脂A7’を得た。油脂A7’中のSSS含量(X)は、10.5重量%であった。油脂A7’を70℃に加熱して完全に溶解し、37℃で攪拌しながら24時間晶析し、その時点での固体脂含量(Y)は8.3%であった。従って、その時点での(X-Y)値は2.2であった(表2)。
パームステアリン(ヨウ素価34)を溶解してからリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換した油脂を、70℃に加熱して完全に溶解し、46℃で攪拌しながら24時間晶析した。晶析後の油脂を3.0MPaでフィルタープレスして、SSSを78重量%含む固体部(パルミチン酸80重量%含有)及び液状部を得た。
パームステアリン(ヨウ素価34)を溶解してからリパーゼ(ノボザイムズジャパン社製LipozymeTL-IM)によりエステル交換した油脂を、70℃に加熱して完全に溶解し、46℃で攪拌しながら24時間晶析した。晶析後の油脂を3.0MPaでフィルタープレスして、SSSを78重量%含む固体部(パルミチン酸80重量%含有)及び液状部を得た。ここで得た固体部25重量部に対して、ヨウ素価41の油脂(重量比でパーム油:パームステアリン=43:57の混合油脂)75重量部を混合し、油脂混合物(Sの含量65重量%、Uの含量33重量%)を得た。
Claims (4)
- 油脂組成物全体中、SSSを2~13重量%含有し、SSUとSUSとを合計で34~54重量%含有し、(SSUとSUSとの合計含量)/SSS含量(重量比率)が4~20且つSSU含量/SUS含量の重量比率が1以上であるトリ飽和脂肪酸グリセリド含有油脂組成物の製造方法であって、
SSSを35重量%以上含む油脂と、ヨウ素価35以上の油脂とを混合することにより、構成脂肪酸全体中飽和脂肪酸(S)が45~75重量%、不飽和脂肪酸(U)が25~55重量%となる油脂混合物を作製する工程(1)、該油脂混合物をリパーゼによりエステル交換する工程(2)、及びエステル交換後の油脂中に含まれるSSS含量をX(重量%)とし、晶析時の固体脂含量をY(%)としたとき、X-Yの値が2~13になるまで溶剤を用いずに晶析し、液状部と固体部とを含む油脂を得る工程(3)、さらに該油脂を分別して該液状部を分取する工程(4)、
を有するトリ飽和脂肪酸グリセリド含有油脂組成物の製造方法。
SSS:トリ飽和脂肪酸グリセリド
SSU:1,2-ジ飽和脂肪酸-3-モノ不飽和脂肪酸グリセリド(光学異性体を含む)
SUS:1,3-ジ飽和脂肪酸-2-モノ不飽和脂肪酸グリセリド - SSSを35重量%以上含む油脂の構成脂肪酸全体中、パルミチン酸(P)が50重量%以上である請求項1に記載のトリ飽和脂肪酸グリセリド含有油脂組成物の製造方法。
- ヨウ素価35以上の油脂がパーム油及び/又はパーム分別油を60重量%以上含む油脂であることを特徴とする請求項1又は2に記載のトリ飽和脂肪酸グリセリド含有油脂組成物の製造方法。
- 工程(4)で分別された固体部を、SSSを35重量%以上含む油脂として用いることを特徴とする請求項1~3のいずれか1項に記載のトリ飽和脂肪酸グリセリド含有油脂組成物の製造方法。
