Abstract

본 발명은 식이섬유전분을 이용하여 유화 안정성이 개선된 저칼로리/저지방 드레싱 및 마요네즈 조성물에 관한 것이다. 더욱 상세하게는, 전분의 가교결합 중 고온 열처리와 초음파 처리를 병행함으로써 식이섬유 함량과 유화 안정성이 증가되고 전분입자 크기가 감소된 식이섬유전분을 첨가하여 지방 함량을 낮추고, 유화 안정성이 개선된 저칼로리/저지방 드레싱 및 마요네즈 조성물에 관한 것이다.
