resumo patente de invenção: "métodos de uso de patatina". trata-se de patatina, uma lipase obtida a partir de batatas, que se constatou possuir seletividade específica para ácidos graxos c4-c8, também quando presentes em triglicerídeos. isso torna a patatina particularmente adequada para a realização de hidrólise em triglicerídeos, como presentes na gordura de leite, para acentuar o sabor de produtos alimentícios. em particular, constatou-se que a patatina é benéfica na acentuação do sabor do queijo. os métodos para a aplicação da atividade hidrolítica da lipase são descritos, assim como o uso da patatina em um método de produção de queijo.
