Abstract

Обнаружено, что пататин, представляющий собой липазу, которую можно получить из картофеля, обладает специфической селективностью к C-Cжирным кислотам, также в случае их присутствия в триглицеридах. Благодаря этому свойству пататин особенно подходит для гидролиза триглицеридов, таких как триглицериды, присутствующие в молочном жире, для улучшения вкусоароматических характеристик пищевых продуктов. В частности, обнаружено, что пататин является подходящим для улучшения вкусоароматических характеристик сыра. Описаны способы применения гидролитической активности липазы, а также применение пататина в способе изготовления сыра.
