Abstract

 食物として摂取されているという食経験がある原料を使用した風味改良剤であって、飲食品に特有の臭いを抑制することができる風味改良剤を提供する。バラ科サンザシ属、ドクダミ科ドクダミ属、ブドウ科ブドウ属、キク科アンテミス属およびキク科マトリカリア属からなる群から選択された少なくとも一つの植物の抽出物を含む組成物を、飲食品の風味改良剤として提供する。前記抽出物としては、いずれか一種類でもよいし、二種類以上の併用であってもよい。具体例としては、前記4種類の植物の抽出物の混合物であることが好ましい。
