Definitions
- the invention relates to a method for producing a natural casing for casing food, in particular meat products.
- Natural casings have been used for centuries to make sausages.
- intestines of cattle, pigs and sheep are used.
- beef intestine as a shell for high quality raw, cooked and cooked sausages of larger diameter, the intestine is usually not eaten.
- the tenderest intestines come from sheep and are used primarily for thin boiled sausages such as wieners and white sausages, which are consumed together with the intestines.
- the so-called fatty end it usually serves as a shell for liver or blood sausage.
- the extraction of natural casings is very labor intensive, with high costs and significant sorting failures.
- the intestines must first be intensively cleaned and freed from adhering mucous membranes etc. Their shape, in particular their diameter is predetermined and their length is limited.
- the quality of the natural casings is also very different and can not be standardized depending on the climate, feed, animal breed and country of origin.
- Partial similar properties as natural intestines have the so-called collagen or protein intestines. But their production is also very expensive and polluting. On this basis, the object of the present invention is to develop a largely natural gut-like material that is inexpensive and environmentally friendly to produce.
- This object is achieved in that is assumed by natural casings waste that crushed this waste and mixed into a mushy pulp and this pulp - optionally after further treatment - is extruded in an extruder by pressure to a film, after which the recovered film - If necessary, after further treatment - dried and finally confectioned.
- the fleece-like outer layer is peeled off and discarded in many intestines.
- This outer layer would be suitable as a sausage casing, but can no longer be used, because it is obtained during peeling only in the form of small pieces.
- Particularly suitable as a starting material is the outer layer of sheep or pig intestine, in particular the serosal or Bändel für. It has been shown that with these special starting materials a fiber mass with optimum consistency and processing properties is produced can be. Said outer layer is removed in a conventional manner from pig or sheep intestine by squeezing rollers or the like, according to the invention but no longer disposed of as before, but fed to a new use.
- the comminution and mixing of the starting materials is expediently carried out in a cutter.
- ice water can be added in a known manner to avoid an undesirable increase in temperature.
- salt, glycerine, flavorings, spices and the like can be added already in the cutter or thereafter to impart the desired consistency, color and taste to the pulp.
- mushy pulp prior to extrusion of a vent. This increases the density and the mass is easier to process. This venting can also be done already in the comminution of the starting materials, such as by a vacuum cutter is used.
- the film After extrusion, the film is subjected to drying.
- the film can be made up and processed.
- the drying can be carried out in a drying chamber known per se. It is also within the scope of the invention to accelerate the escape of moisture from the pulp by pressure rollers.
- the film can be extruded onto a follower carrier layer.
- This carrier layer can be used as a kind of conveyor belt for the film. It can also connect to the film.
- the carrier layer expediently consists of a knitted fabric, woven fabric, mesh, knitted fabric, fleece, paper or a non-woven material with good permeability values for liquids and gases in order to meet the advantageous product properties of the natural gut.
- liquid smoke is useful to give the products the taste of a smoked product, without having to accept the unavoidable in conventional smoking carcinogenic smoke impurities.
- the film of the invention is not only suitable for wrapping
- Meat preparations such as sausages and ham, pies and the like, but also for the wrapping of cheese and fish products and other foods. It is also suitable for raw products, but especially for cooking products, since it is insoluble in water.
- cooked sausage pies and other meat and cheese products Excellent results regarding adhesion of the film to the product, appearance and taste.
- the film intimately bonds with the protein of the coated product and thus represents a unit. This has a positive effect on the further processing of the products encased in the film. Thus, when cutting or Slizen no falling or flaking of the shell to be feared.
- the film in conjunction with a tub, a tunnel mold or the like, that is, that the respective container is first lined with the film and then the product such as meat, ham, pies and the like is inserted, so that the weight of the product is substantially carried by the container.
- the film is to be in tube form before it is filled with the desired product, then it is recommended that the film be used for
- Increased strength is extruded on a connecting carrier with her.
- it can be easily processed to any possible envelope or intestinal form.
- any possible envelope or intestinal form For example, to straight casings in each caliber and each length, but also to specially shaped casings in the form of fat ends, beef butters, veal buttocks, mutton caps and the like bowel forms known in the art.
- the film according to the invention with or without a carrier layer has a very good water vapor and oxygen permeability, while even water insoluble.
- Station 1 stands for the collection of the starting products, ie predominantly short intestinal sections and peeled off pieces of the small intestine outer layer, in particular sheep's or pig's intestines. These starting materials are finely reduced in the next station 2. For this purpose, a cutter is preferably used. The resulting mushy fiber mass can then be homogenized in another station 3. It comes to a fine crushing, so that the pulp no longer contains coarse parts.
- the resulting emulsion-like slurry can then be vented in a station 4, such as through a vacuum chamber, before it is fed to an extruder 5.
- a station 4 such as through a vacuum chamber
- extruder 5 the food expert is familiar with various machines, in particular screw presses or flat rolls.
- the mouthpiece from which the pulp is extruded is formed either as a plane narrow gap or instead as an annular gap, depending on whether a flat film or a tubular film is to be produced.
- the wall thickness of the film is initially in the range of a few millimeters, but still decreases by the subsequent drying.
- the film is extruded directly onto a carrier belt acting as a support, such as a screen plate, and dehydrated in the drying station 6.
- a carrier belt acting as a support such as a screen plate
- the intermediate layer should be permeable to moisture so as not to hinder drying. You can either connect to the pulp, so this gets a higher strength.
- the intermediate layer at the top can have a natural type of adhesive layer, such as egg whites, to promote the connection with the pulp. Instead, however, the intermediate layer can also be removed from the fiber film after the drying process.
- interlayer can consist of natural or artificial raw materials, in particular in the form of a knitted fabric, knitted fabric, woven fabric, fleece, paper or of a non-woven material.
- the film is extruded in the form of a tube
- a tubular carrier which supports the film from the inside.
- the tubular carrier may be a separate support tube, which runs along with the extrusion speed, but it can also be pressed together with the film from the extruder, so be coextruded.
- air is preferably blown into the interior of the forming intestine and dried the intestine in this inflated state.
- the air is expediently blown from the extruder head into the hose. In addition, drying takes place from the outside.
- the extruded mass After the drying station 6, the extruded mass has a relatively hard and dry consistency with a residual moisture of about 10 percent. Their thickness is specified by the later use and is between 0.5 millimeters to 10 millimeters, preferably between about 1 millimeter to about 5 millimeters. When bonded to a substrate, it acts as a corset for the film, and this composite is sufficiently strong and tear-resistant to be sewn, glued, or welded to any sleeve shape.
- drying station 6 it is also within the scope of the invention to combine the drying completely or partially with the extruder so that an at least predried pulp exits the extruder.
- the Intermediate layer or the tubular support to be designed so that its voltage applied to the fiber sheet side no adhesive bond with the fiber sheet received.
- Particularly suitable in this case is baking paper.
- the film is made up in a station 7, that is cut at flat films to the desired length and width, cut in tubular films only to length.
