Abstract

FIELD: alcoholic beverage industry. SUBSTANCE: method involves preparation of solution from ethyl rectified alcohol "Extra" and potable water; it is thoroughly mixed, passed through carbon-cleaning battery, and simultaneously, aromatic alcohol of pine oil and 65.8-% sugar syrup are introduced into finishing tank. Aromatic alcohol is preliminarily mixed with sugar syrup and aged for 10-20 min. After introduction of ingredients, vodka is mixed, its strength is corrected, and then prepared product is filtered and bottled. For preparation of 1000 dal of vodka, the following ingredients are used: aromatic alcohol of pine oil, 2.0-3.0 l; 65.8-% sugar syrup, 16.5-17.5 l; ethyl rectified alcohol "Extra" and potable water, the balance, up to 40% strength. EFFECT: broadened assortment of special vodkas; higher organoleptical properties due to preservation of aromatic substances adsorbed on sugar. 3 exps

Этот результат достигается тем, что в способе производства водки особой, предусматривающем приготовление сортировки из спирта этилового ректификованного "Экстра" и воды питьевой, перемешивание ее, пропускание через угольно-очистительную батарею, введение в доводной чан 65,8%-ного сахарного сиропа и ароматного спирта, перемешивание водки, корректирование крепости, фильтрацию и розлив, предусмотрено в качестве ароматного спирта использовать ароматный спирт пихтового масла, а введение в доводной чан 65,8%-ного сахарного сиропа и ароматного спирта пихтового масла осуществлять одновременно, причем перед введением ароматный спирт пихтового масла смешивают с 65,8%-ным сахарным сиропом и выдерживать в течение 10 - 20 минут, при этом ингредиенты, входящие в водку, использовать при следующем соотношении, л на 1000 дал готового продукта:
Ароматный спирт пихтового масла - 2,0-3,0
65,8%-ный Сахарный сироп - 16,5 - 17,5
Спирт этиловый ректификованный "Экстра" и вода питьевая - Остальное до крепости 40%
Предлагаемый способ осуществляют следующим образом:
Из спирта этилового ректификованного "Экстра" и воды питьевой приготавливают сортировку с таким расчетом, чтобы получить водку крепостью 40%, полученную сортировку тщательно перемешивают, пропускают через угольно-очистительную батарею со скоростью фильтрования до 40 дал/час для свежего угля и до 30 дал/час для регенерированного угля. Ароматный спирт пихтового масла смешивают с 65,8%-ным сахарным сиропом, выдерживают в течение 10 - 20 минут и в виде смеси этих ингредиентов вводят в доводной чан. Водку тщательно перемешивают, корректируют крепость, разливают с обязательной контрольной фильтрацией. Для получения 1000 дал водки особой используют следующие ингредиенты в л:
Ароматный спирт пихтового масла - 2,0-3,0
65,8%-ный Сахарный сироп - 16,5 - 17,5
Спирт этиловый ректификованный "Экстра" и вода питьевая - Остальное до крепости 40%
