Abstract

Procedeul si instalatia pentru maturizarea maielei pentru fabricarea pîanii, conform inventiei, este utilizat la industria de panificatie, în special la fabricarea pîinii de secara. Procedeul pentru maturizarea maielei, într-o prima etapa a procedeului printr-un spatiu gol, cu ajutorul presiunii unei pompe, spatiul gol, se raceste cel putin într-un spatiu gol cu ajutorul presiunii unei pompe, spatiu în care se realizeaza procesul de fermentare si dupa care maiaua desavîrseste fermentatia într-o a doua treapta I a procedeului cu un raport faina-apa de 1:1, iar în treapta a doua raportul faina-apa sa fie de 1:1,5 astfel se usureaza dozarea plamezii la fabricarea pîinii. Prin aceasta, devine posibila pe de o partr, utilizarea optima a spatiului existent cu tuburi în forma de serpentine sau cu tuburi curbate, pe de alta parte se asigura dirijarea corespunzatoare a proceselor biologice. în continuare, procedeul permite ca micile variatii în gradul de maturizare a maielei din treapta I, datorita duratelor diferite de maturizare, sa fie egalizate........
