Abstract

The present utility model relates to a process of producing dried splitted assorted low value fish treated with calamansi (Citrofortunella microcarpa) and ginger and a product produced therefrom that can be promoted and marketed as a healthy food option for individuals with minerals and vitamins deficiencies. The process of producing dried splitted assorted low value fish treated with calamansi and ginger comprises the steps of: a. securing and collecting assorted low value fish in a containing means; b. splitting, washing and cleaning the assorted fish; c. soaking the cleaned fish in brine solution; d. soaking the brine-treated fish in calamansi; e. draining the calamansi-treated fish; f. soaking the drained fish in ginger concentrate; g. drying the ginger-treated fish; and h. frying the dried fish.
