Abstract

Foreliggende oppfinnelse angår en ß-galaktosidase med transgalaktosyleringsaktivitet, isolert fra Bifidobakterium bifidum. ß-galaktosidase er i stand til omdannelse av laktose til en blanding av oligosakkarider som er ß-bundet og uventet gir det a-bundne disakkaridet galaktobiose. Blandingen kan innføres i en rekke matprodukter eller dyrefôr for å forbedre tarmhelsen ved å fremme veksten av bifidobakterier i tarmen, og holde tilbake veksten av patogent mikroflora.
