Abstract
En emballert, lagringsstabil geldannet naturlig fruktmasse hvor de naturlige pektinene i nevnte fruktmasse er blitt i alt vesentlig demetoksylert ved virkningen av et pektinmetylesteraseenzym under betingelser med ultra-høyt trykk (UHP). Det er også tilveiebrakt en fremgangsmåte for fremstilling av et emballert, omgivelsesstabilt, naturlig fruktprodukt som omfatter de etterfølgende trinn: (a) finhakking av frisk frukt for å tilveiebringe en første masse av frisk frukt; (b) tilsetning av pektinmetylesterase (PME) enzym til den første massen av frisk frukt; (c) emballering av den første massen av frisk frukt og PME i en forseglet, i alt vesentlig oksygenimpermeabel beholder; (d) inkubering av massen av frisk frukt og PME ved ultra-høyt trykk (UHP) for å demetoksylere naturlige fruktpektiner i nevnte masse og derved omdanne massen til en dimensjonalt stabil gelstang og gjøre produktet lagringsstabilt.
