Abstract
Fremgangsmåte for produksjon av et symmetrisk triglyserid, kjennetegnet ved å underlegge et middelslangt fettsyretriglyserid og et langkjedet fettsyretriglyserid under tilfeldig transforestring, som en første reaksjon, ved hjelp av et enzym eller en kjemisk katalysator for å tilveiebringe reaksjonsprodukter som omfatter triglyserider med den middelslange fettsyre og den langkjedede fettsyre som de konstituerende fettsyrer, underlegge reaksjonsproduktene og en alkoholmonoester av en middelslang fettsyre under transforestring, som en andre reaksjon, med hjelp av et enzym med en spesifisitet for sn-1,3 posisjoner, deretter fjerne den middelslange fettsyrealkoholmonoester og den langkjedede fettsyrealkoholmonoester fra de reaksjonsprodukter som fremkommer ved den andre reaksjon for å oppnå det tilsiktede symmetriske triglyserid med den middelslange fettsyre i hver av sn-1,3 posisjonene og den langkjedede fettsyre i sn-2 posisjonen. Ved fremgangsmåten kan et i høy grad symmetrisk triglyserid med en middelslang fettsyre i hver av sn-1,3 posisjonene og en langkjedet fettsyre i sn-2 posisjonen produseres industrielt effektivt.
