Abstract

Un procedimiento para producir un producto de proteína para ser agregado a la carne cruda, en el que la fuente del producto de proteína es músculo animal o carne deshuesada mecánicamente. El tejido muscular animal se mezcla con agua y se homogeniza. La proteína en el homogenato se solubiliza. El homogenato solubilizado se calienta a una temperatura necesaria para la pasteurización y/o esterilización de acuerdo con estándares conocidos. El homogenato luego se ajusta a un valor en el que se precipita la proteína. El precipitado se encuentra libre de bacterias y toxinas y se puede utilizar como carne o se puede agregar a la carne cruda para la entrega a un consumidor en forma de carne cruda.
