Abstract
procedimiento para producir un producto proteico obtenido de tejido muscular animal para ser aplicado a carne cruda, que comprende: homogeneizar el tejido muscular animal y agua, ajustar el pH del homogeneizado para solubilizar la protelna, elevar la temperatura del homogeneizado hasta una temperatura interna requerida para pasteurización, esterilización a ambas, enfriar el homoqeneizado hasta una temperatura intermedia, y precipitar la proteína del homogeneizado enfriado; y producto proteico.
