Abstract

Un producto alimenticio para batir o que se puede batir, adecuado para preparar una confitura batida estable, caracterizado porque comprende una emulsion de aceite-en-agua de (1) una grasa triglicérida en donde al menos aproximadamente 50% o más de los ácidos grasos son de longitud de 14 átomos de carbono o menos, (2) agua, (3) componente emulsificante en una cantidad que es suficiente para estabilizar la emulsion del producto y opcionalmente, (4) un componente de proteína que facilita la preparacion de o estabilizacion de producto o la confitura, y opcionalmente, /5) una o más substancias adicionales, siempre que el componente de grasa triglicérida tenga un perfil de índice de grasa solida de aproximadamente 75 a 10 degree C (50 degree F), aproximadamente 40 a 75 a 27 degree C (80 degree F), y menos de aproximadamente 20 a 38 degree C (100 degree F), en donde el producto se caracteriza por proporcionar un esponjado de batido de entre aproximadamente 300 y aproximadamente 500%. que puede lograrse entre aproximadamente 7 y 10 degree c (45 y 50 degree F) en menos de aproximadamente 4 minutos. Adicionalmente, se proporciona un método para suministrar un producto alimenticio para batir que tiene propiedades organolépticas aceptables al consumidor, que contiene un componente de grasa triglicérida y un componente emulsificante, en donde el componente de grasa tiene un punto de fusion relativamente elevado, caracterizado por un perfil de indice de grasa solida de aproximadamente 70 a 10 degree c (50 degree F) aproximadamente 40 a 65 a 27 degree C (80 degree F) menos de aproximadamente 20 a 38 degree C (100 degree F), el método comprende la etapa de elegir para inclusion en el producto un componente emulsificante que aumenta la estabilidad del esponjado de batido del producto, minimizando la cantidad de componente triglicérido presente en un volumen del producto.
