Abstract

La presente invención se relaciona con la rama alimenticia y la industria azucarera y en particular con un procedimiento para la obtención de licores de glucosa fructosa a escala industrial a partir de azúcar o sus licores, así como con la instalación industrial empleada. El objetivo técnico de la misma consiste en lograr un proceso tecnológicamente sencillo en una instalación diseñada para este objetivo, que permita obtener a partir de sacarosa, siropes de glucosa-fluctosa cuya utilización en la industria alimenticia cada día alcanza mayor demanda. Esta invención se caracteriza por la utilización de reactores los cuales se rellenan con un catalizador de elevada actividad hidrolítica y éstos son instalados dentro de una fábrica de refinación de azúcar o en una industria que la disuelva. de tal forma que la obtención del sirope de glucosa-fructosa se realiza en una sola operación mediante el paso continuo del flujo de licor de azúcar, alcanzándose niveles elevados de hidrólisis mediante modificación del tiempo de residencia. El proceso de hidrólisis del azúcar no altera significativamente el color de la solución. El procedimiento y la instalación propuestos en la presente invención permiten la obtención de un producto a escala industrial el cual puede ser empleado tanto en la industria alimenticia así como en la industria farmacéutica.
