Abstract

La presente invención se refiere a un proceso para preparar una emulsión de agua en aceite con bajo contenido graso cuya emulsión comprende agua, aceite y una grasa dura. El proceso implica combinar una fase acuosa y una fase grasa, donde la fase grasa comprende la grasa dura y cuya fase grasa está a una temperatura de tal manera que la fase grasa sea líquida, seguido de someter la mezcla obtenida a un mezclado de alto cizallamiento efectuado en un dispositivo de mezclado de alto cizallamiento, y donde el producto sale del proceso de mezclado de alto cizallamiento, el producto se envasa sin haberse sometido a ningún proceso adicional de mezclado o preparación.
