La presente invención se refiere a: un mutante de 3-epimerasa de D-psicosa a partir de Agrobacterium tumefaciens con estabilidad térmica mejorada; un vector recombinante que comprende un gen que codifica al mutante; y un microorganismo que comprende el mutante. Además, la presente invención se relaciona a un método para producir D-psicosa mediante el uso del mutante o el microorganismo de epimerasa.
