Abstract

본 발명은 사이코스 에퍼머화 효소를 높은 안정성과 발현율로 생산할 수 있는 유전자 발현 시스템, 이를 이용한 형질전환 GRAS(Generally recognized as safe) 미생물, 상기 형질전환 GRAS 미생물 또는 형질전환 미생물로부터 얻어진 효소를 이용한 사이코스 생산방법에 관한 것이다.
