Abstract
La presente invención se refiere a una composición comestible que comprende (a) un éter de celulosa seleccionado de (al) metilcelulosa, (a2) hidroxipropilmetilcelulosa, y mezclas de los mismos; (b) un hidrocoloide de polisacárido seleccionado de (b1) ácido algínico, alginatos y mezclas de los mismos, y mezclas de (b1) con (b2) un hidrocoloide de polisacárido no jónico y no ácido diferente a los éteres de celulosa, en donde la cantidad total de éter de celulosa (a) e hidrocoloide de polisacárido (b) fluctúa de 0.01% a 9% en peso, con base en el peso total de la composición, y la proporción en peso del éter de celulosa (a) al hidrocoloide de polisacárido (b) está dentro del rango de 1:8 a 8:1, y (c) agua. También se describe el uso de la composición comestible para substituir al menos parcialmente la grasa en un producto comestible, tal como un producto lácteo.
