Abstract
En la presente descripción se describen composiciones de producto alimenticio que comprenden una solución de reducción de azúcar que comprende un azúcar raro, xilooligosacárido, o una combinación de estos como un sustituto parcial o completo para un edulcorante nutritivo. También se describen diversos productos alimenticios que contienen composiciones descritas en la presente descripción y métodos para fabricarlos. Ventajosamente, las composiciones que comprenden la solución de reducción de azúcar descritas en la presente descripción son composiciones más estables que no exhiben sinéresis y/o permiten reducir el contenido de almidón contenido en estas en comparación con los productos con azúcar no reducida que contienen almidón.
