Abstract
Una harina elaborada utilizando una mezcla compuesta de grano que contiene almidón, semilla o fruto de un grano de cereal o leguminosa de grano de bajo contenido de agua extruido en un extrusor de un tornillo en una presión de extrusión ultra-alta que produce una harina funcionalmente mejorada extruida utilizable como una harina instantinizada al agregar solo agua. Cuando se agrega agua, la harina forma una pasta o masa que se forma tridimensionalmente o se conforma en productos alimenticios que se pueden cocer u hornear en un horno en productos alimenticios comestibles humanos o animales. La harina instantinizada funcionalmente mejorada extruida también se puede utilizar como un ingrediente en otros productos alimenticios comestibles. La harina instantánea funcionalmente mejorada extruida preferida se extruye en una presión ultra-alta de una mezcla compuesta de manera sustancial completamente de uno o más granos de cereal y/o leguminosas utilizando solo la humedad presente en los granos de cereal y/o leguminosas.
