Abstract

La invención se refiere a un concentrado salado que comprende los siguientes componentes: a) desde 22 hasta 85 % en peso de sal inorgánica; b) desde 2 hasta 60 % en peso de grasa; c) desde 1 hasta 9 % en peso de goma de cáscara de semilla psyllium; d) desde 0 hasta 25 % en peso de componente de glutamato, seleccionado entre ácido glutámico, sales de glutamato comestibles, y combinaciones de los mismos; e) desde 0 hasta 25 % en peso de componente de almidón, seleccionado entre almidón nativo, almidón pregelatinizado, maltodextrina, almidón modificado, y combinaciones de los mismos; f) desde 0 hasta 20 % en peso de azúcar, seleccionado entre monosacáridos, disacáridos, y combinaciones de los mismos; g) desde 0 hasta 45 % en peso de materia vegetal, seleccionada entre vegetales, hierbas, especias, y combinaciones de los mismos h) desde 0 hasta 10 % en peso de agua; en donde los componentes a) a e) constituyen, en forma conjunta, al menos 55 % en peso del concentrado salado, y en donde los componentes a) a h) constituyen, en forma conjunta, al menos 75 % en peso del concentrado salado. Este concentrado salado se puede usar, de manera adecuada, en la preparación de caldos, fondos, sopas, salsas o jugos de carne, y no solamente imparte sabor y refuerza el sabor, sino que, además, mejora la apariencia y la textura del producto final.
