Abstract
Un método para producir cristales de alulosa, que el comprende enfriar y agitar una primera mezcla compuesta de una primera porción de jarabe de alulosa y cristales de cuentas de alulosa e iniciar la cristalización de la alulosa disuelta en el jarabe de alulosa, formando así una primera masa que comprende cristales de alulosa, y un primer licor madre que contiene alulosa disuelta residual, continuando el enfriamiento y la agitación hasta que se alcanza un primer rendimiento objetivo preseleccionado de cristales de alulosa.
