Abstract
Se proporciona un proceso para la elaboración de un producto de `bagel´ o rosquilla de pan del congelador-al-horno. El proceso comprende mezclar al menos harina, agua, sal y levadura para formar una pasta de rosquilla de pan, dividir la pasta de rosquilla de pan para formar unidades individuales de rosquilla de pan, dejar reposar las unidades de rosquilla de pan aproximadamente de 2 a 4 horas en una caja de reposo, congelar preliminarmente las unidades de rosquilla de pan durante un tiempo aproximado de 10 a 30 minutos en un congelador, y congelar por aire forzado las unidades de rosquilla de pan durante un tiempo aproximado de 20 a 30 minutos en un congelador por aire forzado. La caja de reposo tiene una temperatura interna aproximadamente de 20 a 23.89º C (68 a 75º F) y una humead relativa aproximadamente del 80 al 100%, el congelador tiene una temperatura interna aproximadamente de -17.78 a -23.33º C (0 a -10º F) y el congelador por aire forzado tiene una temperatura interna aproximadamente de -28.89 a -34.44º C (-20 a -30º F).
