Abstract

La presente invención de refiere a un horno para cocinado por vapor o por convección para cocinar materias alimenticias, cuyo horno comprende, una cavidad del horno a presión atmosférica, caracterizada por un calentador dispuesto en dicha cavidad, un ventilador para circular aire o vapor en la cavidad, un elemento de suministro de agua para proporcionarla a la cavidad, un elemento para recibir agua desde el suministro de agua y para lanzarla sobre el calentador, un elemento de control de temperatura para controlar la temperatura en la cavidad, un elemento de selección de modo para causar que la cavidad sea llenada con vapor o con aire de convección, por lo cual se causa un suministro continuo de agua hacia el elemento de recepción y donde el elemento para lanzar comprende una taza lanzadora giratoria asociada operativamente con el elemento de suministro de agua para recibir agua del mismo, incluyendo dicha taza una porción de orilla y una superficie interior, la cual se adelgaza inversamente alejándose de la porción de orilla, por lo que un volumen de agua se colectará en la taza, y por lo que una capa del agua fluirá sobre la orilla y será atomizada por medio de la fuerza centrífuga.
