Abstract
Изобретение относится к винодельческой промышленности, а именно к способу стабилизации вина против кристаллических помутнений.Способ, согласно изобретению, предусматривает охлаждение вина, внесение кристаллов винного камня, выдержку охлажденного вина в присутствии кристаллов винного камня и их отделение от стабилизированного вина, при этом в вино вносятся кристаллы винного камня, отделенные из партий ранее стабилизированного вина, которые измельчаются и обрабатываются, не менее двух раз, метабисульфитом калия или метабисульфитом калия и лимонной кислотой, в водной суспензии с концентрацией кристаллов винного камня 350…450 г/дм3, а обработка осуществляется метабисульфитом калия в дозе 1,5…3,5 г/дм3 и лимонной кислотой в дозе 3…5 г/дм3.
