Abstract
Изобретение относится к пищевой промышленности, а именно к способу получения вишни и черешни сушеной подслащенной.Способ, согласно изобретению, включает предварительную подготовку фруктов, их заливку раствором ортофосфорной кислоты, взятым в соотношении и концентрации, обеспечивающих достижение во фруктах рН 1,9…2,3, хранение фруктов в указанном растворе в течение 0,5…12 мес., отделение фруктов от раствора, нейтрализацию раствора ортофосфорной кислоты оксидом или карбонатом кальция взятых в стехиометрических количествах, промывку фруктов нейтрализованным раствором до достижения во фруктах рН 2,9…3,5 и остаточного содержания ортофосфорной кислоты не более 275 мг/кг (выраженная в Р2О5), отделение промытых фруктов от раствора и его концентрирование до содержания растворимых сухих веществ 20…75%, заливку фруктов концентрированным раствором с температурой 25…85°С и выдержку их до достижения содержания растворимых сухих веществ в фруктах 27…43%, после чего фрукты отделяют и сушат при температуре 25…65°С до влажности 14…32%.
