Inventia se refera la industria alimentara, in particular la producerea produselor alimentare conservate pe baza fructelor drupacee uscate. Se propune un procedeu de obtinere a produsului alimentar din fructe drupacee uscate, care consta in blansarea fructelor uscate pana la umiditatea de 24...32%, inlaturarea samburilor, mentinerea fructelor insirop de zahar cu concentratia de 75...80% cu adaos de acid acetic si/sau acid lactic in cantitatede 2...3% la temperatura de 65...80°C pana la umiditatea fructelor de 22...29%. De asemenea se propune un procedeu de obtinere a produsului alimentardin fructe drupacee uscate, care consta in blansarea fructelor uscate pana la umiditatea de 24...32%, inlaturarea samburilor, umplerea fructelor cu umplutura, mentinerea fructelor umplute in sirop de zahar cu concentratia de 75...80% cu adaos de acid acetic si/sau acid lactic in cantitate de 2...3% la temperatura de 65...80°C pana la umiditatea fructelor de 22...29%.The invention relates to the food industry, in particular to the production of preserved food products based on dried fruit.
