Abstract

A method for preservation of fruit and vegetable raw material includes preparing fruits and/or vegetables and a solution made by dissolving salt and sugar in water and introducing flavouring by taste, placing raw material into a container, hermetic sealing and sterilization thereof. According to the invention fruit and vegetable raw material is combined in such a manner that one material contains 0.2-3.0 wt. % of natural organic acid, and another one contains organic acid in the amount less than 0.2 wt. %, and organic acid is not added into the solution. The technical result consists in increase of quality of the fruit-and-vegetable preserves because biochemically synthesized organic acid is not introduced into the solution.
