Abstract
Inventia se refera la industria alimentara, in special la un procedeu de fabricare a produselor de panificatie dietetice. Procedeul propus include pregatirea maielei, fermentarea ei, framantarea aluatului din faina de grau, sare de bucatarie, o substanta cu continut de calciu, maiaua pregatita si ulei, fermentarea aluatului, divizarea lui, formarea prefabricatelor, dospirea si coacerea lor. Noutatea inventiei consta in aceea ca in maia se incorporeaza tarate de grau inmuiate in apa la temperatura de 38…40°Ń, luate in raport de 1:8…1:4 fata de cantitatea totala de faina de grau, iar fermentarea ei se efectueaza timp de 30 min. In calitate de substanta cu continut de calciu se utilizeaza clorura de calciu in cantitate de 100…200 mg de calciula 100 g de produs finit.
