Abstract

Invenţia se referă la industria alimentară, şi anume la procedeele de fabricare a produselor de cofetărie.Procedeul de fabricare a produsului de cofetărie include topirea zahărului până la începutul caramelizării, fierberea mierii de albine naturale până la umiditatea de 6%, fărâmiţarea şi prăjirea nucilor la temperatura de până la 95°C, răcirea zahărului topit până la temperatura de 80°C, care apoi se amestecă cu mierea de albine naturală fiartă şi cu nucile, având temperatura de cel mult 70°C, în proporţie de (10...15):25:(60:65) corespunzător. Masa obţinută se tratează termic la temperatura de 80°C. Apoi se efectuează formarea corpurilor, acoperirea lor cu glazură de ciocolată şi ambalarea într-un ambalaj ermetic.
