Abstract

Invenţia se referă la industria alimentară, şi anume la un procedeu de obţinere a colorantului roşu de betacianină din fructe de cârmâzPhytolacca americana L., totodată colorantul obţinut poate fi aplicat în agricultură, în industria farmaceutică şi cosmetică .Procedeul, conform invenţiei, include zdrobirea fructelor, adăugarea drojdiilor de coptSaccharomyces cerevisiae, fermentarea, filtrarea sucului, congelarea acestuia, dezgheţarea lentă cu separarea apei şi obţinerea sucului concentrat, precipitarea coloratului în două etape prin amestecare cu alcool etilic, separarea supernatantului, după care precipitatul roşu obţinut se purifică cu alcool etilic, se usucă şi se macină până la pulbere.
