Invenţia se referă la industria alimentară, şi anume la un procedeu de obţinere a colorantului roşu de betacianină din fructe de cârmâzPhytolacca americana L., totodată colorantul obţinut poate fi aplicat în agricultură, în industria farmaceutică şi cosmetică .Procedeul, conform invenţiei, include zdrobirea fructelor, adăugarea drojdiilor de coptSaccharomyces cerevisiae, fermentarea, filtrarea sucului, congelarea acestuia, dezgheţarea lentă cu separarea apei şi obţinerea sucului concentrat, precipitarea coloratului în două etape prin amestecare cu alcool etilic, separarea supernatantului, după care precipitatul roşu obţinut se purifică cu alcool etilic, se usucă şi se macină până la pulbere.The invention relates to the food industry, namely to a process for obtaining the red betacyanin dye from the fruits of the Phytolacca americana L., at the same time the dye obtained can be applied in agriculture, in the pharmaceutical and cosmetic industries. The process, according to the invention, includes crushing the fruits, adding the yeast Saccharomyces cerevisiae, fermentation, filtering the juice, freezing it, slow thawing with water separation and obtaining the concentrated juice, precipitating the dye in two stages by mixing with ethyl alcohol, separating the supernatant, after which the red precipitate obtained is purified with ethyl alcohol, dried and ground to powder.
