Invenţia se referă la industria laptelui, şi anume la un procedeu de fabricare a brânzei în saramură.Procedeul, conform invenţiei, include amestecarea laptelui de capră şi de oaie, pasteurizarea amestecului, adăugarea maielei ce conţine tulpini de bacterii lactice Lactococcus lactisssp. lactis CNMN-LB-75, Lactococcus lactis ssp. cremoris CNMN-LB-78, Streptococcus thermophilus CNMN-LB-50, Streptococcus thermophilus CNMN-LB-51, Lactobacillus bulgaricus CNMN-LB-42, a soluţiei de clorură de calciu şi a enzimelor coagulante, separarea coagulului, tăierea acestuia, sărarea şi maturarea brânzei.
