본 발명은 23 내지 54중량%의 유리 히드록시시트르산, 6 내지 20중량%의 히드록시시트르산의 락톤, 0.001 내지 8중량%의 시트르산, 및 32 내지 70중량%의 물로 이루어지며, 상기 유리 히드록시시트르산, 히드록시시트르산의 락톤 및 시트르산은 물레 용해된 총 용질 중량의 94 내지 99%를 구성하는, Garcinia 껍질에서 제조된 하이드록시시트르산 농축물과, Garcinia에서 상기 농축물을 제조하는 방법 및 하이드로시시트르산을 함유하는 식품에 관한 것이다.

Claims (27)

  1. 23 내지 54중량%의 유리 히드록시시트르산, 6 내지 20중량%의 히드록시시트르산의 락톤, 0.001 내지 8중량%의 시트르산, 및 32 내지 70중량%의 물로 이루어지며, 상기 유리 히드록시시트르산, 히드록시시트트산의 락톤 및 시트르산은 물레 용해된 총 용질 중량의 94 내지 99%를 구성하는 ,Garcinia 껍질에서 제조된 하이드록시시트르산 농축물.
  2. 제1항에 있어서, 32 내지 48중량%의 유리히드록시시트르산, 10 내지 18중량%의 히드록시시트르산의 락톤, 0.001 내지 6중량%의 시트르산, 및 35 내지 55중량%의 물로 이루어지며, 상기 유리 히드록시시트르산, 히드록시시트르산의 락톤 및 시트르산은 물은 용해된 총 용질 중량의 96 내지 99%를 구성하는 , 하이드록시시트르산 농축물.
  3. 제2항에 있어서, 36 내지 48중량%의 유리히드록시시트르산, 10 내지 18중량%의 히드록시시트르산의 락톤, 0.001 내지 3중량%의 시트르산, 및 38 내지 50중량%의 물로 이루어지며, 상기 유리 히드록시시트르산, 히드록시시트르산의 락톤 및 시트르산은 물은 용해된 총 용질 중량의 98 내지 99%를 구성하는 , 하이드록시시트르산 농축물.
  4. (1) Garcinia 껍질의 무염의 물 추출물을 얻고, (2) 히드록시시트르산을 음이온 교환컬럼 상에 흡착시키기 위해 음이온 교환 컬럼에 상기 추출물을 로딩하고, (3) 상기 히드록시시트르산을 제1용액 중에 금속염으로서 방출시키기 위하여 상기 음이온 교환 칼럼으로부터 상기 히드록시시트르산을 그룹IA 금속 수산화물로 용출시키고, (4) 상기 제1용액을 양이온 교환 컬럼에 러딩시켜 히드록시시트르산을 제2용액 중에 유리산으로서 수집하는 단계로 이루어지며, 상기 추출물이 상기음이온 교환 칼럼의 100-125% 용량으로 로딩되고, 상기 제1용액이 상기 양이온 교환 칼럼의 50-90%의 용량으로 로딩되는 Garcinia껍질로부터 하이드록시시트르산을 부화(富化)시키는 방법,
  5. 제4항에 있어서, 상기 물 추출물이 상기 음이온 교환 칼럼의 105-115%의 용량으로 로딩되는 방법.
  6. 제4항에 있어서, 상기 제1용액이 상기 양이온 교환 칼럼의 50-75%의 용량으로 로딩되는 방법.
  7. 제5항에 있어서, 상기 제1용액이 상기 양이온 교환 칼럼의 60-75%의 용량으로 로딩되는 방법.
  8. 제4항에 있어서, 상기 그룹 IA 금속 수산화물이 NaOH 또는 KOH인 방법.
  9. 제4항에 있어서, 상기 무염의 물 수용액이 염에 절인 Garcinia 껍질을 제1추출하고, 물과 섞일 수 있는 유기 용매로 염을 제거하는 것에 의해 제조되는 방법.
  10. 제9항에 있어서, 상기 용매가 아세톤 또는 에틸 알코올의 방법.
  11. 제4항에 있어서, 상기 (4) 단계 후에, 제2용액의 부피를 줄여 하이드록시트르산 농축물을 만든 다음이 농축물을 식품에 첨가하는 단계를 포함하는 방법.
  12. 제11항에 있어서, 상기 식품이 음료인 방법.
  13. 제11항에 있어서, 상기 식품이 스낵 바인 방법.
  14. 0.17 내지 23중량%의 유리 히드록시시트르산, 0.08 내지 7중량%의 히드록시시트르산의 락톤 및 0.002중량% 이상의 시트르산을 포함하는 식품.
  15. 제14항에 있어서, 0.35 내지 12중량%의 유리히드록시시트르산, 0.15 내지 중량%의 히드록시시트르산의 락톤 및 0.002중량% 이상의 시트르산을 포함하는 식품.
  16. 제14항에 있어서, 0.04 내지 0.4중량%의 비타민 C를 추가로 함유하는 식품.
  17. 제15항에 있어서, 0.04 내지 0.4중량%의 비타민 C를 추가로 함유하는 식품.
  18. 제16항에 있어서, 0.04 내지 0.08중량%의 비타민 C를 추가로 함유하는 식품.
  19. 제17항에 있어서, 0.04 내지 0.08중량%의 비타민 C를 추가로 함유하는 식품.
  20. 제14항에 있어서, 0.8 내지 22중량%의 섬유를 추가로 함유하는 식품.
  21. 제15항에 있어서, 0.8 내지 22중량%의 섬유를 추가로 함유하는 식품.
