Abstract
Description
Claims (18)
- (a) 폴리덱스트로스를 함유한 당과를 제조하는데 사용된 폴리덱스트로스의 수성 용액의 pH를 약 4-7로 조절하고;(b)상기 당과를 제조하는 동안 상기 pH를 유지시켜 쓴맛과 이상한 맛이 감소되고 감각수용상 만족스럽게된 폴리덱스트로스함유 당과를 제조하는 단계로 구성된, 폴리덱스트로스함유 당과로 부터 불쾌한 감각수용성을 제거하는 방법.
- 제1항에 있어서, 상기 pH가 약 4.5-6.5인 방법.
- 제1항에 있어서, 상기 pH가 약 5-6인 방법.
- 제1항에 있어서, 상기 pH를 조절하는 것이 상기 폴리덱스트로스에다 알칼리 물질을 부가하여 행해지는 방법.
- 제4항에 있어서, 상기 알칼리 물질이 수산화나트륨, 수산화칼륨, 탄산칼슘, 수산화칼슘, 탄산나트륨, 중탄산나트륨, 이염기 인산나트륨 및 이들의 혼합물로 구성된 그룹으로 부터 선택되는 방법.
- 제1항에 있어서, 상기 pH를 유지시키기는 것이 완충제에 의해 행해지는 방법.
- 제1항에 있어서, 상기 완충제가 포스페이트, 시트레이트, 아세테이트, 말레이트, 아디페이트, 숙시네이트 및 이들의 혼합물로 구성된 그룹으로 부터 선택되는 방법.
- pH가 약 4-7이며 시판되고 있는 수성 용액 형태인 식품용 폴리덱스트로스 및 완충 물질로 구성된 감각수용상 만족한 폴리덱스트로스 생성물.
- 제8항에 있어서, 상기 pH가 약 4.5-6.5인 생성물.
- 제8항에 있어서, 상기 pH가 약 5-6인 생성물.
- 제8항에 있어서, 산미제를 더 포함하는 생성물.
- 제11항에 있어서, 상기 산미제가 아디핀산, 말산, 시트로산, 젖산, 인산 및 이들의 혼합물로 구성된 그룹으로 부터 선택된 생성물.
- 제11항에 있어서, 상기 산미제가 약 0.1-5중량%양으로 존재하는 생성물.
- 제11항에 있어서, 상기 산미제가 약 0.5-2중량%양으로 존재하는 생성물.
- 제11항에 있어서, 상기 산미제가 약 1-1.5중량%양으로 존재하는 생성물.
- pH가 약 4-7인 폴리덱스트로스의 수성 용액을 공급하는 것으로 구성된, 쓴맛과 이상한 맛이 감소된 폴리덱스트로스를 사용한 당과의 제조방법.
- 제16항에 있어서, 상기 pH가 약 4.5-6.5인 방법.
- 제16항에 있어서, 상기 pH가 약 5-6인 방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
