Claims (1)
- 본문에 상술한 바와같이 생통닭을 세정 박피하고 공지의 크로이드 믹서기로 분쇄하여 고기와 뼈를 같이 분육으로 만든 것을 고추씨 엑기스에 약 2-3시간 동안 침전시켜서 닭 분육의 탄력도를 높힌 통닭 분육 50Kg 전분 10Kg 소맥분 10Kg 마늘 1Kg 소금 1-2Kg을 혼합하고 제일차로 130℃로 가열하여 익힘과 동시에 두께 3mm 폭 120mm의 만두피을 형성시킨 다음 제 2 공정에서 제조된 공지 만두속과 함께 공지 자동 만두기에서 반월형의 만두를 성형시킨 것을 160-180℃로 유탕 성숙처리한후 35℃의 주정온수로 처리함을 특징으로 하는 영양 많은 닭을 주재로 한 만두의 제조방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
