Abstract
PURPOSE: To obtain a foamed chicken meat product rich in soft feeling, by adding specific amounts of salt, foaming agent, starch and seasoning to chopped and ground chicken meat, grounding the mixture, foaming with a foaming machine and subjecting to forming and heat-treatment.
CONSTITUTION: Boned and skinned chicken meat is ground with a chopper. 100pts.wt. of the ground meat is added with 2W5pts.wt. of salt and thoroughly ground with a grinder. The obtained raw material is added with 0.1W1pt.wt. of a foaming agent and proper amounts of starch and seasoning, ground for 10W15min, transferred to a foaming machine and foamed. The foamed chicken meat is formed to a prescribed shape and heat-treated to obtain the objective chicken meat product.
